COLESLAW WITH ITALIAN DRESSING
Steps:
- In a saucepan, bring olive oil, cider vinegar, sugar, garlic, basil, salt and pepper to a boil. Boil for 30 seconds and remove from heat. Allow to cool slightly.
- Pour warm dressing over cabbage, and toss to coat. Allow to stand until salad is cool. When cooled, cover and place in refrigerator to chill. When ready to serve, stir to mix cabbage.

- Combine the red cabbage, fennel, Italian parsley and capers in a large salad bowl and toss to blend.
- Mix in lemon juice, oil, and garlic. Season to taste with salt and pepper.
- Best prepared several hours in advance to allow ingredients to marinate.
- Just before serving, garnish the top of salad with the reserved fennel fronds, if desired.

PORK CHOPS WITH FENNEL AND CAPER SAUCE

- In a large, heavy skillet heat the olive oil over high heat. Season the pork chops with salt and pepper. Add the pork to the pan and brown on both sides, about 4 minutes each side. Remove the pork from the pan, cover loosely with foil, and set aside.
- Add the fennel, shallots, and 1/3 cup parsley to the pan and cook over medium heat until beginning to brown, about 5 minutes. Add the wine. Using a wooden spoon, scrape the brown bits off the bottom of the pan. Add the tomatoes and stir. Add the pork back into the pan, nestling the chops between the fennel and tomatoes so they are mostly submerged in the pan juices. Cook until the fennel is tender and the pork is done, about 12 to 15 minutes.
- Place the pork on a serving dish. To finish the sauce, add the lemon zest, remaining 1/3 cup parsley, capers, and 3/4 teaspoon each salt and pepper. Stir to combine. Spoon over the pork chops and serve immediately.
ITALIAN FENNEL COLESLAW

- In a large bowl, whisk together the mayonnaise, vinegar, olive oil, horseradish, red pepper flakes, Italian seasoning, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cabbage, scallions, carrots, fennel and parsley; toss to coat. Season to taste with salt and pepper. Let stand in the refrigerator for 15 minutes before serving.
- In a small bowl, mix together the basil, marjoram, oregano, parsley, granulated garlic, rosemary, thyme and red pepper flakes. Store in a jar with a tight-fitting lid.
CREAMY COLESLAW WITH FENNEL
This is a nice alternative cole slaw recipe. If you don't have raspberry chardonnay vinegar, cider vinegar, white balsamic, or champagne vinegar will work, as well.
