Three delicious fillings for tea sandwiches, cut into various shapes for a tea party. Make them ahead for easy entertaining.

4 ounces cream cheese, at room temperature
2 tablespoons apricot preserves
sliced ham
4 ounces cream cheese, at room temperature
3/4 cup crushed pineapple, drained
1/3 cup chopped pecans, toasted
1 1/2 cups shredded or chopped chicken
3/4 cup mayonnaise (or more if needed)
1/2 teaspoon curry powder
1/4 cup dried cranberries
1/3 cup celery, diced
1/3 cup slivered almonds, lightly toasted

Steps:

  • For the chicken sandwiches, Chop chicken very finely (I put it in a food processor and pulsed 3-4 times until minced). In a bowl, combine chicken and mayonnaise, and mix well. Add curry and continue to mix. Fold in remaining ingredients. Spread on bread, top with another slice, remove crusts, and cut into shapes.
  • For the pineapple sandwiches, Combine cream cheese and crushed pineapple until well blended. Add pecans and fold into mixture. Spread on one slice of bread and top with other. Remove crusts and cut into shapes as desired.
  • For ham sandwiches, Combine cream cheese and preserves until well blended. Spread a layer on both slices of bread, place a slice of ham on one side, and top with the other side. Cut off crusts and cut in to shapes as desired.

Almond-Crusted Curry Chicken Salad Tea Sandwiches image

Blanched almonds add a delicious crunch to elegant tea sandwiches filled with flavorful curried chicken.

Number Of Ingredients 13

1 cup toasted sliced blanched almonds
1 whole skinless and boneless chicken breast (about 10 ounces)
1 teaspoon coarse salt
1 small onion, unpeeled and quartered
4 whole black peppercorns
5 cups water
1 1/2 cups mayonnaise
2 teaspoons curry powder
2 tablespoons mango chutney
3/4 teaspoon white-wine vinegar
3 tablespoons unsweetened shredded coconut, toasted
1/2 cup (1 stick) unsalted butter, room temperature
24 thin slices white bread

Steps:

  • Preheat oven to 350 degrees. Spread almonds on a baking sheet, and toast until fragrant and golden, 5 to 7 minutes. Transfer to a bowl to cool, and gently crush. Set aside.
  • In a medium saucepan, combine chicken, salt, onion, peppercorns, and the water. Bring to a boil over medium-high heat; reduce heat, and simmer until chicken is cooked through, about 20 minutes. Transfer chicken to a plate to cool; reserve stock for another use.
  • When chicken is cool enough to handle, shred the meat and chop into small pieces. Return to plate; cover, and place in refrigerator until ready to use.
  • In a small bowl, combine mayonnaise, curry powder, chutney, vinegar, and toasted coconut; stir to combine. Reserve 1/2 cup curry mayonnaise, and stir remaining mayonnaise into chicken. Thinly spread butter on two slices of bread; cover one slice with a thin layer of chicken salad, and top with other bread slice. Set aside. Repeat with remaining ingredients.
  • Stack several sandwiches; use a serrated knife to trim crusts and cut into two rectangles. Arrange sandwiches in a single row on the serving tray; they should rest on one long edge with the short ends standing upright. Spread a dab of reserved curry mayonnaise on short ends, and gently pat on almonds. Serve immediately. (Do not cover with damp paper towels or the almonds will become soft.)

2 whole boneless chicken breasts with skin (about 1 1/2 pounds), halved
1 cup mayonnaise
1/3 cup minced shallot
1 teaspoon minced fresh tarragon leaves
24 very thin slices homemade-type white bread
1/2 cup finely chopped smoked almonds (about 2 ounces)

Steps:

  • In a deep 12-inch skillet bring broth or water to a boil and add chicken breasts in one layer. Reduce heat and poach chicken at a bare simmer, turning once, 7 minutes. Remove skillet from heat and cool chicken in cooking liquid 20 minutes. Discard skin and shred chicken fine.
  • In a bowl stir together chicken, 1/2 cup of mayonnaise, shallot, tarragon, and salt and pepper to taste.
  • Make 12 sandwiches with chicken salad and bread, pressing together gently. With a 2-inch round cutter cut 2 rounds from each sandwich.
  • Put almonds on a small plate and spread edges of rounds with remaining 1/2 cup mayonnaise to coat well. Roll edges in almonds. Sandwiches may be made 2 hours ahead, wrapped in plastic wrap, and chilled.

½ cup sour cream
½ cup mayonnaise
½ teaspoon lemon juice
¼ teaspoon lemon zest
salt and ground black pepper to taste
½ cucumber, cut into matchsticks
½ bunch fresh dill, finely chopped
½ small bunch fresh cilantro, chopped
¼ cup finely chopped fresh chives
1 tablespoon slivered toasted almonds
1 whole roasted chicken, bones and skin removed, meat cut into cubes
12 slices white bread, crusts removed, or as needed

Steps:

  • Mix sour cream, mayonnaise, lemon juice, lemon zest, salt, and pepper together in a bowl until thoroughly combined. Add cucumber, dill, cilantro, chives, and almonds and combine. Add chicken and combine thoroughly with dressing.
  • Create sandwiches with your bread; cut sandwiches into fourths.

Number Of Ingredients 7

3 cups chicken broth
2 whole boneless chicken breasts, cut in half, skin on
1 cup mayonnaise
1/3 cup minced shallot
1 teaspoon minced fresh tarragon leaves
24 slices of crustless white bread, thin slices or 12 halved croissants
1/2 cup finely chopped smoked almonds

Steps:

  • Bring broth or water to a boil in a large skillet and add chicken breasts.
  • Reduce heat to a simmer and poach chicken, turning once, for about 7 minutes. Remove skillet from heat and leave chicken in broth as it cools for about 20 minutes.
  • Discard the skin and finely shred the chicken into a bowl.
  • Stir together chicken, 1/2 cup of mayonnaise, shallot, tarragon, and seasoning to taste.
  • Make 12 sandwiches with chicken salad and bread, pressing together gently. With a 2-inch round cutter, cut 2 rounds from each sandwich.
  • Spread edges of rounds with remaining 1/2 cup mayonnaise to coat well and then roll the edges in the chopped almonds.
  • If you decide to use croissants you may prefer to add the chopped almonds directly to the chicken mixture.
  • These sandwiches may be made 2 hours ahead, wrapped, and chilled.

1 c chopped cooked chicken
1 green onion, chopped fine
3-4 Tbsp mayonnaise
1/4 c sliced almonds

Steps:

  • 1. Mix all ingredients together. Spread on bread.
  • 2. Cut the crust off and cut into quarters. Cut each quarter into triangles. Plan on enough for 1 sandwich per guest
  • 3. NOTE: If making ahead, add the sliced almonds just before serving or they will lose their crunch.
  • 4. The bread I use is from my local safeway store. their Poppy Seed bread. Compliments the chicken so great.. enjoy.
