Steps:
- Preheat oven to 375°F.
- Cut 4 slices of bacon in half.
- Cut remaining bacon into 2" pieces.
- Place all bacon in a 10" oven-proof skillet and cook until crisp.
- Drain on paper towels, shaping the 8 large pieces into curls.
- Tilt frying pan to coat with fat.
- Drain excess fat.
- Line pan with small pieces of bacon.
- Beat eggs with flour, 3 teaspoons chives, salt and pepper.
- Beat in milk.
- Pour over bacon in pan.
- Place in oven and bake 35-40 minutes, or until golden and set.
- Top with bacon curls and remaining chives.
- Serve in wedges, garnished with tomato wedges.

- Lightly grease a large bake pan and pre-heat in oven at 350 . In a lightly oiled frying pan add ham , onions and potatoes for 5 min at med/high .
- In a bowl , combine remaining ingredients and mix.
- Remove pre-heated pan from oven and add the pan fried potatoes and ham mix . Then pour the egg mix over top and bake at 350 for 20-25 min or until light brown on top .

- In a large, heavy skillet on medium heat, fry the bacon in batches until almost crisp. Set each batch on a plate covered in paper towels to drain off the excess fat. Place on a plate in the oven to stay warm.
- Pour off all but 1 Tbsp of the bacon fat from the skillet.
- In a large mixing bowl whisk together the eggs, flour, salt and pepper until just blended. Slowly add the half-and-half until ingredients are well blended and frothy.
- Add the egg mixture, along with any optional ingredients, to the skillet. Reduce the heat to very low and slowly cook until the egg mixture has set to a firm custard consistency. (check the bottom often to make sure it is not burning, but don't stir the mixture) It should take about 20 mins to set.
- Top with the bacon slices and chives or green onions. Slice into wedges and serve.

- Preheat the oven to 350 degrees F.
- In a large ovenproof skillet, cook the bacon until crisp. Remove the bacon to paper towels to drain. Pour off all but 1 tablespoon of the bacon grease. Add the onion, potato, and tomato to the remaining grease and saute until the potato is tender. Combine the eggs with the milk. Loosen the vegetables from the bottom of the frying pan with a spatula. Then pour the egg mixture over the vegetables. Add the bacon, salt (if desired) and pepper to taste, and chives. Place the pan in the oven and bake for 20 to 30 minutes or until set. It will take longer if there are additional vegetables or if you use skim milk. Slice into wedges and serve hot.

FLUFFY BAKED OMELET

- Preheat the oven to 350 degrees.
- Lightly grease a well seasoned iron skillet, and place it in the oven while the oven is preheating, and you are preparing the omelet.
- Separate the egg whites from the yolks.
- Beat the egg whites until stiff but not dry.
- Beat the egg yolks well, slowly add the flour and stir until smoothly blended.
- Add the milk and mix well.
- Lightly fold in the stiffly beaten egg whites.
- Remove the skillet from the oven and pour the omelet into it.
- Bake for 10 minutes or until the omelet is set in the center and lightly browned.
- When the omelet is done, remove from the oven and loosen the sides with a spatula.
- Place a platter close to the skillet, and with a spatula loosen the bottom of the omelet and slide it out onto the platter.
- Pour the melted butter over the omelet, and sprinkle with salt and pepper.
- **Note:If desired, you can place the asparagus spears in a wheel pattern on top of the omelet before placing it in the oven and/or sprinkle the grated cheese over the top.

- In a greased 13-in. x 9-in. x 2-in. baking dish, layer half of the cheese, green peppers, chilies, mushrooms, onion and ham. Repeat layers.
- In a bowl, beat the eggs, milk, hot pepper sauce, salt and pepper. Pour over vegetable mixture.

- Fry the Pork (bacon) until golden brown (crisp).
- Remove from fry pan.
- Pour off half the drippings.
- Mix flour with the milk until smooth.
- Add eggs, Salt& Pepper, Beat well.
- Pour egg mixture into the fry pan.
- Arrange the pork (bacon) and tomatoes on top of the egg mixture.
- Cook for about 10 min, lifting the edges to allow egg mixture to run underneath.
- Cook until the omelette is set but still moist on top.
- Sprinkle with chives& serve.
FLAESKEAEGGEKAGE (DANISH BACON & EGG PANCAKE/OMELET)
In Scandanavia, the word pancake is an almost generic term used for crepes, omelets & true pancakes, but mostly for crepes & omelets. The origin of this recipe is my "Classic Scandanavian Cooking" by Nika Hazelton cookbook & the intro suggests using a very tasty & full-flavored bacon for the best result. If I were in the US & making this dish, I'd be using a thick-sliced peppered bacon or good maple-flavored bacon.

- Fry bacon in a med-sized non-stick skillet till crisp. Remove bacon to drain on paper towel. Remove any rendered bacon fat in excess of 3 tablespoons When bacon has cooled, crumble into sml pieces & set aside. (NOTE: I've not had Danish bacon, but it is sold canned, is lean & well-flavored. The recipe says to reserve all bacon fat in the skillet if using Danish bacon, but I amended that to allow for using most US types of bacon.).
- Beat eggs w/milk, flour, salt & chives. Reheat bacon fat & pour egg mixture into it.
- When the omelet begins to set, sprinkle the crumbled bacon on the top & lift cooked omelet edges w/a fork so the uncooked portion runs underneath. Cont cooking till the eggs are set & the edges golden brown. Fold the omelet & serve hot, cutting the omelet in half to serve 2 hearty appetites or 3 wedges for less hearty appetites.
- For a firmer omelet, turn out onto a plate& return the omelet to the skillet, uncooked side down. Brown lightly & serve.
- NOTE: Not a part of the recipe, but I like cream cheese w/this & add a smear of it to half the omelet b4 I fold it over.
