  • preheat oven to 350 degrees.
  • Line a baking sheet with foil; mist lightly with cooking spray.

  • Preheat the oven broiler. Grease a baking dish.

1 1/4 pounds halibut steaks ( or thick fillets, fresh or frozen)
2 teaspoons vegetable oil
3/4 cup bread crumbs (soft)
2 tablespoons parmesan cheese (grated)
1 tablespoon fresh tarragon (snipped or 1/2 teaspoon dried tarragon, crushed)
1/2 teaspoon paprika
1 dash pepper
fresh lemon wedges (for serving - optional)

Steps:

  • Preheat oven to 450ºF.
  • Cut thawed fish into four portions. Pat dry and brush each portion with cooking oil.
  • In a shallow dish, stir together bread crumbs, parmesan cheese, tarragon, paprika and pepper. Dip fish into crumb mixture to coat both sides. Arrange pieces in a 12"x7 1/2" baking dish. Sprinkle any leftover crumb mixture on top.
  • Bake fish at 450ºF, uncovered for 8 to 12 minutes in a hot oven, until fish flakes easily with a fork. Do not turn during baking. Serve with fresh lemon wedges for drizzling.

Fish can be intimidating for those who didn't grow up cooking or eating it. One of the best ways to ease people into eating anything unfamiliar is by smothering it in roasted garlic and cheese. Forget the old Italian maxim of not mixing seafood and cheese: they pair magically and make first forays into cooking and eating halibut easy to execute and even easier to eat.

1 garlic head
1/2 tablespoon olive oil
1 tablespoon unsalted butter
1 pound halibut, skin removed, in 4 even fillets
Kosher salt, as needed
Freshly ground black pepper, as needed
1/2 cup mayonnaise
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375˚F.
  • Cut off the top of the head of garlic and brush off some of the outer paper skin, leaving just the individually wrapped cloves. On a piece of foil, pour the olive oil over the garlic, then wrap the foil around it and place it in the oven for 45 minutes, until it's completely soft. For the recipe, you'll only need six cloves from the head, but it's worth making a whole head to keep the rest for spreading on crusty bread or adding to salads.
  • Raise the oven temperature to 425˚F.
  • Heat the butter in an oven-proof pan over low heat. Sprinkle both sides of the fish with salt and pepper. When the butter is melted, add the halibut and put it into the oven for 10 minutes. The fish should be just cooked and opaque throughout.
  • While the halibut cooks, blend or food process together six cloves of garlic, the mayonnaise, and parmesan. When the halibut is done, pull it out and generously smear the mayonnaise mixture on the top. Switch the oven to a high broil and return the pan to the still-hot oven for 4 minutes under the broiler, until the top is almost entirely golden brown.
  • Remove and serve immediately.

16 young asparagus

3/4 cup grated Parmesan

Steps:

  • For halibut: Preheat a 12-inch saute pan over medium-high heat. Add extra-virgin olive oil and butter. Season halibut with salt and pepper and dust with the flour, shaking off the excess. As your butter starts to brown, gently lay each steak in your pan. Allow to cook until golden brown on both sides and cooked through, approximately 3 to 4 minutes on each side.
  • For asparagus: Preheat the oven to 350 degrees F.
  • Trim and clean your asparagus. In a large bowl add cleaned asparagus, minced garlic, minced shallots, and extra-virgin olive oil. Season, to taste. Lay prepared asparagus on a half sheet pan and roast until tender, about 10 to 15 minutes. Right before taking your roasted asparagus out of the oven liberally top with freshly grated parmesan cheese. The heat of your pan should melt your cheese.
  • To serve, place 4 pieces of asparagus on a plate, top with golden brown halibut steak. Drizzle with extra-virgin olive oil. Garnish with a sprig of chervil or chives

1 sleeve ritz crackers, crushed

Steps:

  • Dry the halibut well with paper towels.
  • Combine the mayo, parmesan, minced garlic, salt, pepper, and hot sauce in a small bowl.
  • Crush the crackers and place them into another bowl.
  • Coat the fish in the mayo mixture and then roll in the crackers to cover all sides. Carefully place into the air fryer in a single layer, not touching the sides or each other, in your air fryer. (Spray the rack with cooking spray if it is not well-seasoned and if things tend to stick.) Repeat with the other filet(s).

1 large egg

  • Coat baking dish with oil.

2 tablespoons Parmesan cheese, grated
1 tablespoon fresh parsley, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Dash freshly ground black pepper
2 tablespoons butter, melted
Garnish: lemon wedges or slices

Steps:

  • Gather ingredients.
  • Heat the oven to 450 F. Spray a rimmed baking sheet with nonstick cooking spray or line the pan with nonstick foil.
  • Cut the halibut into four (6-ounce) servings. Arrange the fillets on the prepared baking sheet, skin-side down.
  • Tear the bread into pieces and put in the food processor.
  • Pulse until the breadcrumbs are fine.

salt & pepper, to taste after the fish is cooked

Steps:

  • Preheat the oven to 400ºF. Line a baking sheet with parchment paper or foil. In a shallow bowl, mix together the panko bread crumbs, parmesan, parsley, dill, chives and lemon zest.
  • Rinse halibut fillets and pat dry with a paper towel. Place fillets onto the prepared baking sheet and drizzle with olive oil (rubbing it into the front and back of the fillet), then dredge the fish into the bread crumb/parmesan cheese mixture, pressing it in lightly with your fingers.
