Steps:
- Cut eggs in half lengthwise. Remove yolks; set whites aside. In a small bowl, mash yolks. Add the mayonnaise, vinegar, butter, sugar, pepper and salt; mix well. Stir in bacon and spinach. Stuff or pipe into egg whites. Refrigerate until serving.

DEVILED EGG & SPINACH CASSEROLE
I prefer to rinse and use the frozen spinach, solely because when using fresh spinach you need to be sure to THOROUGHLY wash all the spinach of dirt. I've tried using fresh, and didn't clean it as well as I thought I did... needless to say it ruined the entire dish! Sad day in my amateur cooking career, but it gives me a good...

- 1. Cut eggs in half lengthwise and remove yolks.
- 2. Mash yolks with mayonnaise, mustard, and pepper. Once desired texture is reached fill egg whites with mixture. Set aside.
- 3. Cook spinach, drain, and squeeze out excess water.
- 4. Melt butter in saucepan and blend in flour. Gradually add milk, stirring constantly while cooking over medium heat until sauce thickens.
- 5. Reserving about 1/4 cup grated cheese, stir remaining cheese into sauce until melted. Then add Worcestershire sauce, salt, and Tabasco sauce.
- 6. Place spinach in a lightly greased 3 quart baking dish with half of the cheese sauce. Mix together.
- 7. Place deviled egg halves on top of spinach and cover with remaining sauce.
- 8. Sprinkle the remaining cheese over all. And bake at 375°F for about 25 minutes, or until bubbly and lightly browned.
- 9. Eat & Enjoy!
SPINACH DEVILED EGGS

- Heat 1 tablespoon oil in a large saute pan over medium heat. Add spinach and cook, tossing occasionally, until wilted and starting to look dry, about 5 minutes. Transfer spinach to paper towels, and squeeze out excess liquid.
- Place spinach and mayonnaise in a food processor, and blend until very smooth. Pass through a fine sieve, and discard solids. In a clean food processor bowl, pulse spinach mixture, mustard, yolks, and remaining 1 tablespoon oil. Add salt and pepper, and pulse to combine.
- Transfer mixture to a large piping bag fitted with a 1/2-inch star tip, and pipe filling into each egg-white half. Alternatively, spoon filling into whites. Garnish each with a small sprig of chervil or thyme, and serve immediately.
SPINACH-BACON DEVILED EGGS
Another twist on deviled eggs with spinach and bacon. Original recipe calls for cider vinegar AND sugar, but I think it's fine if you want to omit the sugar. I topped it off with a little cayenne pepper and paprika and everyone enjoyed it. - fold all the ingredients with the mashed yolk and mix well.
- place filling in a strong zip lock bag or piping bag and fill the eggs with mixture.
- sprinkle cayenne pepper and paprika and serve.
- *to boil eggs, fill pot with eggs and cold water (enough to cover eggs). Place on stove under high heat until it boils. Turn heat down to low and cover and let simmer for 8 minutes. Thoroughly rinse in cold water. Egg shells should peel off easily.

- Place a small stockpot filled half-way with water, set the water over high-heat when the water begins to simmer place eight eggs into the water.
- Allow the eggs to boil for 12-minutes. Next, transfer the hard-boiled eggs into a bowl of cold water. You can add ice cubes to the water to get the eggs cool.
- After the eggs are cool enough to handle safely, peel them under a stream of warm water. Once peeled, dry the eggs off with a paper towel, then use a sharp chef's knife and cut each egg in half. Scoop out the yolks one at a time into a medium-size bowl.
