2 teaspoons cornstarch
2 teaspoons water
2 Tablespoons of sugar splenda blend
2 Tablespoons of brown sugar splenda blend
1⁄4 cup low sodium soy sauce
1⁄4 cup cider vinegar
1⁄4 cup pineapple juice
1 teaspoon minced garlic
1⁄2 teaspoon ground ginger
10 chicken tenders or chicken of choice
green onion diced-optional for garnish
sesame seeds-optional for garnish

Steps:

  • Preheat oven to 425 degrees F.Bring the first 10 ingredients to a boil in a saucepan on the stove and let simmer until thick.Place chicken pieces in a lightly greased 9x13 inch baking dish.Brush the chicken with the resulting glaze.Bake for 10 minutes, then turn chicken, glaze again and bake 10 more minutes or until no longer pink.Let cool for a minute or two, brush with remaining glaze and top with green onions and sesame seeds. Serve over quinoa, rice or stir fry, enjoy!

Steps:

  • Heat oven to 375°F.
  • Bring first 6 ingredients just to boil in small saucepan; simmer on medium-low heat 2 min. or until slightly thickened, stirring frequently. Remove from heat.

1/2 cup soy sauce
1/4 cup canola oil
3 tablespoons sugar
2 teaspoons grated fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons sesame seeds
2 cloves garlic, grated

Steps:

  • For the marinade: Combine the soy sauce, oil, sugar, ginger, sesame oil, sesame seeds, garlic and 1/2 teaspoon salt in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.

2 tbsp toasted sesame oil
6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame seeds , to serve
4 spring onions, shredded, to serve
sticky rice, to serve
steamed bok choi or spring greens, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
  • Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

1/2 cup teriyaki sauce
1/4 cup frozen orange juice concentrate, thawed and undiluted
3 tablespoons dark sesame oil
1 tablespoon minced fresh garlic or 1 teaspoon garlic powder
1/2 teaspoon black pepper
1 whole chicken (cut into pieces)

Steps:

  • In a bowl stir together the teriyaki sauce, orange juice concentrate, sesame oil, garlic and black pepper until well combined.
  • Place the chicken pieces in a large bowl, then pour HALF the marinade over the chicken; toss with clean hands to coat, reserve the other half marinade for basting the chicken.
  • Cover and refrigerate the chicken for 8 hours.
  • Remove the chicken from the marinade and discrd marinade.
  • Set oven to 400 degrees.
  • Place the chicken pieces on a large foil-lined baking sheet that has been sprayed with cooking spray, skin-side up.
  • Sprinkle lightly with salt.
  • Bake for about 40-45 minutes or until the chicken is done.
  • Brush with the reserved marinade 5 minutes before end of cooking.
