All the delicious flavors of fajitas in a pasta dish! Steak is cooked with fajita seasonings, pasta and tender, but not overcooked, bell peppers. Sour cream is stirred in to add a creamy element to the pasta dish and ties everything together. Make this recipe is just minutes with your electric pressure cooker.

2 tsp chili powder
2 tsp paprika
2 tsp garlic powder
2 tsp cumin
1 1/2 tsp dried oregano
2 tsp sea salt
1 tsp black pepper
1 large onion
1 1/2 pounds chuck steak
2 Tbsp olive oil
3 and 3/4 cups beef broth
1 pound (16 oz) bowtie pasta (or other pasta of your choice)
1 (14.5 oz) can crushed tomatoes
1 green bell pepper
1 red bell pepper
1 cup sour cream
1/2 cup grated cheddar cheese

Steps:

  • In a small bowl combine the chili powder, paprika, garlic powder, cumin, oregano, sea salt and pepper. Set aside.
  • Slice your onion into thin, half moon slices.
  • Turn your Instant Pot to the saute setting and let it heat up. While it is heating up, cut your steak into thin quarter-inch strips. This way the steak will be distributed evenly throughout the pasta and will cook more tenderly.
  • Add in the beef broth. Add in the pasta. Stir a bit.
  • Add the crushed tomatoes on top, do not stir.
  • Core your peppers and cut them into long slices and then cut the slices in half. This way they will be more evenly distributed throughout the pasta. Pull out a long piece of foil, about 20 inches long. Place the peppers in the middle of the foil. Then fold up the edges of the foil and crimp together to create a foil packet. Place the foil packet on top of the tomatoes. This will cook the peppers to perfect doneness and prevent them from getting mushy.
  • Cover the Instant Pot and secure the lid. Set the valve to sealing. Set the manual/pressure cook button to 4 minutes on high pressure. When the time is up let the pot sit there for about 5 minutes and then move the valve to venting. Remove the lid when you can.
  • Use tongs to remove the foil packet. Carefully open it with hot pads. Stir the peppers into the pot. Stir sour cream into the pot. Stir the other half of the seasonings into the pot.
  • Scoop pasta onto serving plates and sprinkle each serving with 1 Tbsp of grated cheddar cheese.

1 pound (450 grams) steak (rump, top round or flank sliced into long strips)
1 onion (peeled and sliced)
2 tablespoons fajita seasoning
½ cup (125 ml) beef or vegetable stock or water
salt (to taste)
3 bell peppers (red, green and yellow - thickly sliced)
4 tortilla bread

Steps:

  • Add the meat to the pot, followed by the onion and bell peppers (add the bell peppers if you don't mind soft veggies, otherwise add them after pressure cooking), the spices, and ½ cup of liquid (beef or vegetable stock or water, whatever is available).
  • Give everything a quick mix, secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 10 minutes at high pressure. The Instant Pot will take around 6-7 minutes to come to pressure and start cooking. When the cooking program ends, quickly release the steam.
  • Remove the lid, and add the bell peppers if you didn't add them before pressing cooking then cover with the lid again, and let the peppers "steam" for a few minutes. If you already cooked the bell peppers, then skip this step.
  • Then either drain the extra liquid (and retain some) or use a slotted spoon to take out the fajitas.
  • To serve, stuff warmed tortillas with the fajitas and garnish with chopped cilantro leaves and drizzle over with a little bit of the reserved sauce.

8 small corn or flour tortillas

Steps:

  • Add the chicken breasts and 1 cup of chicken broth to the Instant Pot and sprinkle with fajita seasoning and garlic.
  • Add the sliced bell peppers and onions on top of the Chicken, try to distribute them in an even layer.
  • Place the lid on, lock and turn the valve to sealed position.
  • Set to Manual / High Pressure for 7 mins.
  • When cook time is complete, allow for 5 mins natural pressure release. Then perform a quick pressure release to allow any remaining steam to escape.

Steps:

  • Saute for about 2 minutes or until steak slices are slightly brown and no longer pink and raw on the outside. It won't be fully cooked through!
  • Add red pepper, green pepper, onion and saute everything until steak is cooked through and vegetables are tender.
  • Turn off heat. Pour lemon juice and toss everything together.

1-1/2 teaspoons ground cumin
1/2 teaspoon seasoned salt

1 pound sirloin steak roast or flank steak
1 tablespoon fajita seasoning (divided)
2 teaspoons oil (divided)
1/2-3/4 cup low-sodium beef broth
1 large yellow or white onion (thinly sliced)
3 large bell peppers (any color) (thinly sliced)
2 limes (zested and juiced)

Steps:

  • Place the full cut of meat into the freezer for 10 to 15 minutes, as it will be easier to slice. After freezing, slice the steak into ½-inch strips against the grain. Season the meat with 1/2 tablespoon of the fajita seasoning.
  • Turn the Instant Pot to Saute and add in 1 teaspoon of oil and let heat.
  • Once the oil is heated, add half the seasoned meat to the Instant Pot in a single layer. Saute for about 1-2 minutes per side, to JUST brown the steak. Remove the seared meat from the inner pot and place it on a plate. Repeat the process with the remaining meat, adding in an additional teaspoon of oil if needed. Once browned, remove the steak to the plate with the first batch, and drain off any grease if needed.
  • Turn the Instant Pot off by hitting cancel, Add in 1/2 cup beef broth for a 3 or 6-quart Instant Pot or 3/4 cup for an 8-quart model. Use a wooden or metal spatula to scrape up any browned bits off the bottom of the inner pot.
  • Add the seared beef back to the inner pot. Top the meat with the sliced onion and sliced peppers. Sprinkle the additional 1/2 tablespoon of fajita seasoning over the pepper and onions.
  • Seal instant pot, being sure vent knob is pointed to sealed. Set to cook on High Pressure for 2 minutes. Once cooking time is finished let pressure release naturally for 10 minutes, to keep the meat tender.
  • Remove the meat, onions, and peppers to a serving platter using a slotted spoon. Add the zest and juice of the limes and toss to coat.
  • Serve the fajita mixture as desired on tortillas or over rice with your favorite toppings.

Steps:

  • Add the water and au jus seasoning mix to the liner of the Instant Pot. Stir to combine.
  • Add the bell peppers and onion to the Instant Pot followed by the thinly sliced beef.
  • Lock the lid, set the knob to sealing. Cook on Manual HIGH for 3 minutes. Allow for a 5 minute NPR then quick release the remaining pressure.

2 lbs beef (cut into strips, typically flank steak is used but can use other cuts)
2 bell peppers (I use 1/2 of 4 different colors, sliced)
1 onion (sliced)
3 limes
1 pkg fajita seasoning (or marinade beef in homemade fajita marinade, link above recipe card)

Steps:

  • Marinade your thinly sliced beef overnight (link to the best beef marinade is above recipe card)
  • Slice onion and add into pressure cooker with beef.
  • Squeeze 3 fresh limes into the pot ensuring no seeds land inside. Sprinkle packet of fajita seasoning over everything if you are adding that rather than previously marinading your beef.
  • Mix all ingredients so everything is mixed and/or coated well.
  • Close lid and steam valve and set to high pressure for 18 minutes. (time will vary depending on thickness of meat pieces and how much meat you are using, this worked well for 2 lbs. cut into med. size strips)
  • Do a quick release. Add bell peppers, stir together. Put lid on and let that sit for 5-10 minutes to allow those to soften.
  • Serve inside small tortillas topped with fresh cilantro, salsa, sour cream, avocado, or any other fajita toppings.

1 large onion, julienned
1 large sweet red pepper, julienned

Taco Tuesday just got a whole lot more interesting (and simple!) with these Instant Pot Steak Fajitas. Simple to make and perfectly tender, these steak fajita strips are sure to be your newest weekday dinner favorite.

2 to 3 pounds flank steak or London Broil sliced into strips
1 tablespoon olive oil
1 onion, sliced
3 bell peppers in various colors, seeded and sliced
1 ½ cups beef broth
¼ teaspoon dried oregano
½ teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon chopped chipotle peppers in adobo sauce, optional

Steps:

  • Start by setting your Instant Pot to saute and heat that until it's "hot". Next, add in olive oil and your sliced meat. Do so in small batches and make certain to brown it on both sides. Set aside but keep it warm. Pour the beef broth into the Instant Pot and use this liquid to help scrape the bottom of the pot with a flat-edged spoon or spatula. Next, add in the steak and all the seasonings and sliced veggies, too. Grab the top of the lid and close while setting the valve to sealing. Set the Instant Pot to manual or pressure cook for 8 minutes of time. Make certain that you naturally release for 5 minutes before you do a quick release. Serve in a bowl or over rice or with a tortilla.

Steps:

  • *Note the internal temp of your large family Beef Fajitas. If the internal temp is not reached place back in IP for 10 minutes and check again. Because of the variables with pressure cooking, it's not always a perfect science and sometimes needs additional adjustments. The USDA recommendations a minimum internal temperature of 16o degrees for beef.
  • For the slow cooker just set out your large family Beef Fajitas the night before to defrost in the refrigerator.
  • The next day pull your large family Beef Fajitas out of the freezer bag. Place it in your slow cooker and cook for up to 4 hours on high and 7-8 hours on low (slow cooker times may vary so always check the internal temperature to complete doneness).

1 flank steak

1 red pepper

1 green pepper

1 Tbsp taco seasoning
1/2 cup beef broth
1 Tbsp tomato paste
Tortillas and lime wedges
for serving

Steps:

  • Turn on the Saute feature on the Instant Pot. Once warmed, add the olive oil. Saute the steak in the Instant Pot for 2 minutes, no more. The steak won't be cooked all the way-that's okay! Pour in the beef broth and add the tomato paste. Mix until the tomato paste has fully been worked into the broth. Add in the sliced red pepper, green pepper, onion, and taco seasoning. Place the lid on the Instant Pot and set it to be sealed. Cook the steak at high pressure on manual (Pressure Cook) for 10 minutes. Wait for the Instant Pot to come to pressure, then it will cook the amount of time you set. When the timer goes off, release the pressure right away. Serve with tortillas or, to keep it low-carb, in a bowl with a bed of greens and guacamole.
