7 HOUR SLOW-ROAST BEEF RIB WITH CREAMED HORSERADISH, SHALLOT GRAVY AND MAPLE POTATOES
This recipe requires a little bit of planning to get the timings right - the meat takes between 5-8 hours to cook and needs an hour to rest - but it's otherwise incredibly simple and straightforward. The gravy can even be prepped ahead and re-heated when needed.

- Start by drying out the beef. 48 hours before you plan to cook it unwrap it and replace in the fridge. The night before you plan on eating, remove the joint from the fridge and leave out to come to room temperature.
- Make sure you plan your timings in advance: to eat a medium-rare joint at 3pm you'll need to get the meat in the oven between 7-8am. Start by coating the beef in a light layer of olive oil and salt and pepper, and fry off on a high heat until browned all over.
- Put the meat in a large baking tray and place in the oven at 60 degrees centigrade. Use a meat thermometer to monitor the internal temperature: for a medium-rare joint you'll want to heat it to 55 degrees, for rare it's 50 degrees, for medium 60 and well-done 70. Rare will take around 6 hours to cook and well-done up to 8.5.
- Monitor the temperature of the beef regularly. As soon as it's up to temperature remove from the oven and cover with foil to rest for an hour.
- As the beef is resting peel and chop the potatoes. Turn the oven up to 200 degrees. Par-boil the potatoes until they're starting to go soft - watch them closely so they don't overcook, 10 minutes should do it.
- Heat the beef dripping in the oven until it's shimmering. Add the par-boiled potatoes to the beef fat, mix well, drizzle over the maple syrup and mix again. Season with salt and pepper and return to the oven, cooking for around 30 minutes until golden brown and crunchy.
- Meanwhile, make the gravy. Roughly chop the shallots and melt the butter in a medium-sized saucepan. Cook the shallots on a medium heat until starting to brown. Pour the stock in another saucepan and simmer until reduced by half. This should take about 20 minutes.
- Add the white wine to the shallot saucepan and cook down until it's almost completely reduced. Add the balsamic vinegar and continue to cook for another three minutes. Remove from the heat and stir in the mustard.
- Add the reduced beef stock to the shallots and stir well. Liquidise together, preferably using a hand-held stick blender.
- When it's serving time, re-heat the gravy to a slow simmer and taste. If it's looking a little thin add a couple of teaspoons of Bisto and stir well to thicken.
- In a bowl combine the horseradish sauce and crème fraiche. Mix well. Serve the beef sliced thinly against the grain with the gravy, potatoes, horseradish crème fraiche, Yorkshire puddings and your favourite winter vegetables.

- Preheat oven to 325 degrees. Heat oil in a large roasting pan over medium-high heat. Season the beef ribs generously with salt and pepper.
- Sear ribs in roasting pan until well browned on all sides, about 15 minutes. Remove ribs and set aside. Wipe out roasting pan, return the ribs, and cover with parchment-lined foil. Transfer ribs to oven and roast until meat is tender and falling off the bone, about 4 hours.
- When meat is cool enough to handle, cut off the bone, remove cartilage, turn the meat over, and cut into 1 1/2-inch slices. Place slices on the bone and garnish with horseradish and olives. Serve immediately with lemon wedges.

- Let the beef roast stand at room temperature for about 1 hour.
- In a nonreactive bowl, combine the heavy cream and sour cream and whisk until smooth.
- Add the lemon juice, salt, pepper and horseradish and whisk until blended.
- Cover and refrigerate until ready to serve.
- Position a rack in the bottom of an oven and preheat to 350°F.
- In a small sauté pan over medium heat, warm 2 Tbs of the olive oil.
- Add the garlic and fry, stirring constantly, until golden, 1 to 2 minutes.
- Remove the pan from the heat and immediately skim the garlic from the oil, reserving the garlic.
- Season the beef generously with salt and pepper and rub the fried garlic over the roast.
- Set the beef on a rack in a roasting pan and roast until an instant-read thermometer inserted into the center of the meat registers 125°F for very rare to rare, 1 3/4 to 2 hours; or 130°F to 135°F for medium-rare to medium, 2 1/4 to 2 3/4 hours.
- Transfer the roast to a carving board, tent loosely with aluminum foil and let rest for 20 minutes before carving.
- (The roast will continue to cook as it rests, so you can remove it from the oven 3 to 4 degrees below the desired temperature). Meanwhile, in a medium saucepan over medium-high heat, warm the remaining 2 Tbs oil.
- Add the carrots, celery and leek, and sauté until tender and golden, 6 to 8 minutes.
- Add 4 cups of the stock and the thyme sprigs, bring to a simmer and reduce the heat to low.
- Simmer until the liquid is reduced by half, about 1 hour.
- After removing the roast from the pan, set the pan over medium heat, pour in the remaining 1 cup stock and whisk to scrape up any browned bits.
- Pour the pan juices into the simmering broth, add the chopped thyme and simmer for 10 minutes.
- Strain the sauce through a fine-mesh sieve set over a bowl.
- Skim the fat, adjust the seasonings with salt and pepper, and transfer to a sauceboat or pitcher.
- Carve the beef into 1/2-inch-thick slices and pass the sauce and the horseradish cream alongside.

- Season beef with 2 tablespoons salt and 1 teaspoon pepper. Wrap with plastic and refrigerate at least 8 hours and up to 1 day. Unwrap and let stand at room temperature 1 hour.
- Preheat oven to 350 degrees. Heat a large skillet (preferably cast iron) over medium-high. Add 2 tablespoons oil and brown beef all over, 12 to 14 minutes. Transfer to a plate; carefully pour oil from skillet and discard.
- Place shallots in a single layer in bottom of skillet; drizzle with 1 tablespoon oil. Stir together garlic, mustard, and 2 tablespoons oil; rub mixture all over beef. Lay 1 handful of herbs down center of skillet. Place beef on top, fat-side up. Transfer to oven and roast 45 minutes.
- Place remaining handful of herbs on top of beef; drizzle herbs with remaining 1 tablespoon oil. Return to oven and roast until a thermometer inserted in thickest part of roast reaches 105 degrees for rare, 10 to 20 minutes. Transfer roast to a cutting board and shallots to a serving platter, loosely tent both with foil, and let stand at least 30 minutes.
- Return skillet to medium-high heat. Stir in vermouth; bring to a boil and cook, stirring occasionally, until just a few tablespoons remain, 5 to 7 minutes. Strain through a fine-mesh sieve and let cool 10 minutes.
- Whip heavy cream to stiff peaks. Fold in sour cream, cayenne pepper, horseradish, and vermouth mixture. Season with salt. Store horseradish cream in refrigerator until ready to serve, or up to 3 days.
- Remove twine from roast; thinly slice across the grain and serve, with horseradish cream, shallots, and mostarda.

- To select your roast:.
- Selecting the proper grade is essential; Look for a USDA choice grade rib roast or a brand name rib roast (such as "Certified Angus") in the supermarket meat case; or ask your butcher to specify the "small end" of the rib roast - the most tender part.
- Preparation of Rib Roast:.
- Arrange oven rack in lower third of oven; Heat oven to 325 degrees F.
- Trim beef rib roast of excess fat, leaving a thin layer.
- Rub the roast with salt, pepper, and thyme.
- Arrange roast, rib bones down, in a shallow roasting pan; (Do not add water or cover pan); insert an oven-safe meat thermometer in thickest part of the roast, not resting in fat or touching the bone (this will stay in the entire roasting time).
- Roast 2 hours 15 minutes, or until the meat thermometer's temperature reaches 130 degress F.
- Transfer roast to a carving board, and tent loosely with foil; let stand 15 minutes (temperature will continue to rise to reach 135 degrees F).
- Zesty Horseradish Cream:.
- While roast is resting combine all ingredients in a small bowl and refrigerate until serving time.
- To Carve Your Roast:.
- To begin, place the roast on it's larger side on a cutting board, the bones will be towards your stomach; You may need to trim the bottom side (the one that is now resting on the cutting board) to ensure that it lies flat on the cutting board.
- To carve the first slice, insert a meat fork, tines facing downwards, below the top rib bone, in front of your stomach; make a horizontal cut from the opposite side towards your stomach/fork/bone (across the top).
- Now cut along the rib bone, from the top (not the rib bone side), to release the meat from the bone.
- Slide the knife back under the slice, steady it with the fork, and lift it onto your serving platter.
- Repeat for each slice, and serve with a dollop of horseradish cream.

- Take the beef out of the fridge and leave it to come up to temperature overnight or for at least three hours. Tip the garlic and all the herbs and spices into a large roasting tin and, using a blow torch or under a hot grill, singe the herbs until they start to smoulder (if using a grill to do this, do not leave it unattended), then leave to cool slightly.
- Heat oven to 100C/80C fan/gas ¼. Rub a tbsp of salt over the meat, then sit the joint on top of the herbs. Pour over the wine, then tightly tent the tin in a couple of sheets of extra-wide foil. Roast in the oven for 1 hr, then reduce the temperature to 70C/50C fan (if you have a gas oven, don't adjust the temperature), and slow roast for 3 hrs more.
- Remove the foil, then insert a digital probe into the middle of the joint - when the temperature reaches around 60C, it's ready. If the meat is not up to temperature, increase oven to 150C/130C fan/gas 2, and roast with the foil off, checking the temperature every 15 mins. While the beef is cooking, make the glaze by whisking all the ingredients together.
- When the beef is cooked, remove from the oven and increase the temperature to 230C/210C fan/gas 8. Return the beef to the oven for 5 mins to crisp and blister the fat, then generously brush the glaze all over the joint and return to the oven for 5 mins until sticky and slighty charred - keep an eye on it, as it will burn very easily at this stage. Lift the beef onto a chopping board and leave to rest for 20 mins.
- To make a herby gravy, put the roasting tin over a low heat and stir in the flour to make a gloopy paste. Add in any remaining glaze, then carefully pour in 500ml boiling water. Boil for a few minutes, then strain into a small pan and keep warm. Serve the beef in thick slices, with gravy on the side.
