DINER'S SWISS STEAK

This is one of those true comfort foods for me, as I had it often while growing up and now continue to make my Mom's recipe. The only thing I have changed from my Mom's is to use sirloin steak(more tender) instead of round steak. It is easy to make and great served with mashed potatoes and corn.

1 1/2 lbs sirloin steaks, cut into serving pieces
1/4 cup flour, seasoned with
salt & pepper
3 tablespoons oil
2 stalks celery, sliced
1 onion, sliced and separated into rings
1 (14 1/2 ounce) can diced tomatoes, undrained
salt and pepper
1 cup water

Steps:

  • Put flour and seasoning in a plastic bag, add meat and shake to completely cover meat.
  • In a large skillet(with lid)heat oil over medium heat. Add meat and brown on both sides. Remove meat to a plate and then add the celery and onion to the pan. Cook for about 4-5 minutes, until tender. Return meat to skillet, add the water and can of tomatoes and its juice to the pan. Mix the ingredients together and season with salt and pepper to taste, bring to low boil.
  • Decrease heat to low and cover and cook for 45 minutes, stirring several times and adding additional water if needed.
  • Remove meat to a serving platter and keep warm. Use leftover flour mixture and mix with water in a jar, shake until completely mixed. Add flour mixture to skillet with tomatoes and vegetables, a little at a time until desired thickness.

2 tablespoons all-purpose flour
1 teaspoon chili powder
1/4 teaspoon salt
1 pound boneless beef top round steak, boneless, about 3/4 inch thick
1 tablespoon vegetable oil
1 cup salsa
1/2 cup water
1/2 teaspoon sugar
1 large sweet potato, peeled and cut into 1-inch cubes (2 cups)
1 (10-ounce) can frozen whole-kernel corn, thawed
Hot cooked noodles, if desired

Steps:

  • Heat oven to 350°. Mix flour, chili powder and salt. Sprinkle half of the flour mixture over 1 side of beef pound in. Turn beef and pound in remaining flour mixture. Cut beef into 4 serving pieces. Heat oil in Dutch oven over medium heat. Cook beef in oil about 10 minutes, turning once, until brown on both sides drain. Stir in remaining ingredients except noodles. Heat to boiling remove from heat. Cover and bake 1 hour or until beef is tender. 3 1/2-4 lbs beef blade roast, boneless top blade
2 tablespoons vegetable oil
1 onion, sliced thinly in to half moons
3 garlic cloves, minced
1/2 teaspoon dried thyme
2 tablespoons tomato paste
1 tablespoon all-purpose flour
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups chicken broth (low sodium)
1 tablespoon sun-dried tomato, minced
1 tablespoon fresh parsley, finely chopped

Steps:

  • Preheat oven to 300 degrees F.
  • Cut roast, crosswise, into 4 even pieces; turn each piece on it's side and carefully cut out the gristle so that you have created 2 new steaks.
  • Pat each steak dry with paper towels and season generously with salt and pepper.
  • Heat 1 tablespoon of the oil in a Dutch oven over medium high heat; brown half the steaks for about 3 minutes per side, remove, and brown the remainder.
  • Add onions to now empty pot and cook until softened, 5 minutes.
  • Add garlic, thyme, tomato paste, flour and cook until fragrant, about 1 minute.
  • Stir in diced tomatoes and chicken broth; bring to a boil.
  • Return steak and any accumulated juices; transfer to oven, cover, and cook until fork tender, about 2 hours.
  • Transfer steaks to a platter and tent with foil to keep warm; skim fat from sauce.
  • Stir in sun dried tomatoes and parsley; season with additional salt and pepper, if needed.
  • Pour sauce over steaks and serve.

I got this recipe from my very old Betty Crocker recipe file box. It was in the 'Outdoor Entertaining' section. I'm posting it exactly as written,per a request, but I don't know exactly what they mean by '1 envelope of meat marinade' which is critical to this recipe. There are numerous marinade recipes on this site,so if it were me, I'd look for one that would compliment / enhance the Mexican flavor, unless you can easily find the meat marinade envelope called for. Cook time does not include marinating time for the steak.

2 lbs beef round steak, 1/2 inch thick
1 (4 1/2 ounce) envelope instant meat marinade
1/4 cup catsup
1 tablespoon Worcestershire sauce
1/8 teaspoon red pepper sauce
1 (15 ounce) can refried beans
1/4 cup cheddar cheese, shredded
chili pepper (optional)
potato chips (optional)

Steps:

  • Score each side of meat 1/8 inch deep in diamond shaped pattern.
  • Prepare marinade as directed on envelope, and stir in catsup, Worcestershire sauce and red pepper sauce.
  • Marinate meat as directed on envelope, remove meat and reserve marinade.
  • Heat beans in foilware pan 15-20 minutes on side of grill. About 5 minutes before serving, sprinkle with cheese.
  • Place meat on grill, about 2 inches from hot coals. Cook about 5 minutes on each side, or to desired doneness, brushing with reserved marinade.
  • Cut beef into serving sizes, and serve with spoonfuls of beans, chili peppers and potato chips.
  • Note: You can use your choice of steak.

2 pounds beef top round steak
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper, divided
2 tablespoons canola oil
1 cup chopped onion
1/2 cup chopped green pepper
1/4 cup soy sauce
1/2 teaspoon garlic salt
Hot cooked noodles, optional

Steps:

  • Cut steak into serving-size pieces. Combine flour, salt and 1/4 teaspoon pepper; sprinkle over steak and pound into both sides. In a skillet over medium heat, brown steak on both sides in oil. , Transfer to a greased 13-in. x 9-in. baking dish; top with onion and green pepper. Drizzle with soy sauce; sprinkle with garlic salt and remaining pepper. , Cover and bake at 325° for 1-1/2 hours or until meat is tender. Serve with noodles if desired.

1 pound beef top round steak, cut into serving-size pieces
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons all-purpose flour
1 tablespoon vegetable oil
10 onion slices
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/4 cup mild, medium or hot picante sauce
1/4 cup beef broth

Steps:

  • Sprinkle meat with salt and pepper. Using a mallet, pound all of the flour into the meat. , In a skillet, heat oil over medium-high. Brown the meat on both sides. Arrange onion slices over the meat. Combine remaining ingredients and pour over onions. Cover and simmer until the meat is tender, about 45 minutes. Remove meat and keep warm. , Cook the sauce until it is reduced and thickened, about 5 minutes. Season to taste with additional salt and pepper if desired. Pour sauce over meat and serve immediately.

1 (2 lb) flank steaks, trimmed of fat and cut into 4 to 6 equal portions (cut number depends on the size of your steak)
3 tablespoons butter or 3 tablespoons olive oil
1 garlic clove, minced
1 large onion, chopped
1 chili pepper, of your choice, diced and seeded (see Note)
1 green pepper, chopped
1/2 lb freshly sliced mushrooms
1 can sliced black olives, drained
8 ounces cream cheese, diced into cubes
2 cups shredded Mexican blend cheese or 2 cups monterey jack cheese, divided
1 (28 ounce) can tomato sauce
1 tablespoon chili powder
1 teaspoon cumin
1/4 teaspoon cinnamon
1 tablespoon unsweetened cocoa powder
1 lb linguine

Steps:

  • Take the cuts of steak you have made and place between two sheets of plastic wrap and pound with a meat mallet to thin them out.
  • Don't pound too thin, or meat will tear.
  • In a large skillet, in the butter or olive oil, sauté the garlic, onion, chili pepper, green pepper, mushrooms and black olives over medium- heat until vegetables soften and onions become translucent.
  • Add the cubed cream cheese, and stir constantly until cheese melts and mixture comes together.
  • Take off the heat and cool slightly.
  • Add 1 1/2 cups of the shredded cheese.
  • Spoon vegetable cheese mixture down the center of each cut of steak.
  • Roll up jellyroll style and secure with toothpicks.
  • In a skillet, sauté steak rolls in a little oil or butter on all sides till brown over medium heat, about 5 minutes.
  • In a medium bowl combine the tomato sauce, cinnamon, cumin, and cocoa powder. Pour over steak rolls in skillet.
  • Cover and simmer on medium-low for 15-20 minutes until sauce thickens somewhat and meat is cooked through and tender.
  • Meanwhile, cook linguini according to package directions.
  • Drain, and place onto a large serving platter.
  • Place steak rolls over pasta, pour sauce over rolls and pasta.
  • Sprinkle with the reserved shredded cheese.
  • NOTE: It's best to wear plastic gloves when cutting chili peppers; avoid contact with face or eyes.

1 tablespoon olive oil
2 celery ribs, diced
14 1/2 ounces diced tomatoes with basil and oregano

Steps:

  • Saute steaks on medium high with the olive oil in an oven proof skillet until browned on both sides, remove from heat.
  • Add diced celery and diced tomatoes.
  • Cover and bake at 350 degrees F for 30-45 minutes. (Depending on the size of your meat.) Check after 20 minutes, you might want to leave the lid off at this point if you like a thicker sauce.
  • If you're on phase two of the south beach diet serve with whole wheat egg noodles.
