- Rinse 5 clean plastic containers and lids with boiling water. Dry thoroughly.
- Stem and pit cherries. Finely chop or grind fruit. Measure exactly 2 cups prepared fruit into large bowl. Add lemon juice; mix well. Stir in sugar. Let stand 10 min., stirring occasionally.
- Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Cook and stir 1 min. Add to fruit mixture; stir 3 min. (A few sugar crystals may remain.)
- Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Refrigerate up to 3 weeks or freeze up to 1 year. (If frozen, thaw in refrigerator before using.)

- Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
- Stem and pit cherries. Finely chop or grind fruit. Measure exactly 4 cups of the prepared cherries into 6- or 8-qt. saucepot. Stir in lemon juice.
- Stir pectin into fruit mixture in saucepot. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar and extract. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat; skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

SOUR CHERRY JAM

- Pit fresh 3 lbs sour cherries. If working with pitted fruit, the total weight should be about 2 1/2 lbs pitted, or roughly 5 cups pitted fruit.
- Place the fruit in a heavy-bottomed jam pot along with lemon juice. Bring to a boil over medium-high heat.
- Cook the cherry mixture, stirring continuously to avoid boil-overs, for about 20 minutes until the fruit has completely fallen apart.
- Add sugar. (If adding pectin, now is the time, see notes).
- Continue cooking the jam until it reaches gel stage, about 25 to 30 more minutes.
- Test for gel stage on a plate that's been placed in the freezer, or with an instant-read thermometer (220 degrees F at sea level).
- Turn off heat and ladle jam into prepared jars. De-bubble, wipe rims and adjust headspace to 1/4 inch. Store in the refrigerator for immediate use (within 1 month), or process in a water bath canner for 10 minutes for a shelf-stable jam.
NANKING CHERRY JAM/JELLY
I came up with this recipe after making Nanking Cherry Jelly from a different recipe. This one is a little bit more tart and not as stiff as the other recipe. I used a whole apple (core and peel included) for a little extra pectin. First you have to make the juice from the cherries, then you can make jelly by straining through a cheesecloth or make jam by squeezing the pulp through a colander to get rid of the seeds.

- To make Juice.
- Combine cherries, apple and water in a Dutch oven. Bring to a boil; reduce heat and simmer, covered, for 35 minutes. Mash mixture occasionally while cooking.
- Strain through a cheesecloth for 8 hours for jelly, or squeeze through a colander to remove the seeds for jam.
- Bring 4 cups of juice/pulp to full rolling boil and boil for 2 minutes.
- Add 3 1/2 - 4 cups of sugar, mix well.
- Bring back to a full rolling boil and boil for 4 minutes.
- Add 1 pouch of liquid pectin and lemon juice.
- Stir for 5 minutes.
- Pour into hot sterile jars, process for 5 minutes or put into freezer when cool. This may take up to 24 hours to set.

CHERRY FREEZER JAM RECIPE

- Place six (250 mL) freezer-safe mason jars in the dishwasher and run through the wash cycle to sanitize. Leave the jars in the dishwasher until you're ready to fill them.
- Place the cherries and raspberries in a large bowl; mash with a potato masher or a large fork. Add the lime juice and water and stir.
- In a medium bowl, combine the sugar and pectin; stir well with a wire whisk to make sure the pectin is evenly distributed. Stir the sugar mixture into the fruit mixture; stir constantly for 3 minutes.
- Ladle the jam into each jar leaving about 1/2" of headspace. Wipe the tops of the jars with a damp cloth and place the lids on the jars; fasten securely. Let the filled jars stand at room temperature for one hour.
- Label the jars and refrigerate for 3 to 5 days until the jam sets. Then you can freeze them up to one year.
- When opened, each jar will last, refrigerated, for about three weeks. You can also refrigerate the jars for up to three weeks; We do that with the first one and freeze the rest, taking them out of the freezer and putting them in the fridge the night before we want to use the jam.

BLUEBERRY-CHERRY JAM
I got this recipe from an internet search. It said it was exported from MasterCook from Kraft General Foods. It is very easy to make and is excellent jam. The recipe called for sour cherries, but I used sweet ones and it turned out wonderfully. Very nice blend of flavors.The cherry measurement is approx 3 cups pitted. You will need to chop the cherries and measure out the 1 & 1/2 cups after they have been chopped. It takes about 3 cups to get 1 & 1/2 cups chopped.

- Sort cherries and remove all stems and pits. Using a food processor, pulse to chop the cherries or use a chopping bowl cut the cherries into 1/4-inch pieces. Place cherries and all of their juices in a Dutch oven.
- Mix pectin/sugar mixture into cherries. Stir over high heat until the mixture comes to a full rolling boil. If desired, add butter to reduce the amount of foam that forms on the surface of the jam.
- Stir in remaining 2 3/4 up sugar into the hot mixture and once again bring the cherry mixture to a rolling boil. Stir constantly to prevent scorching and boil for exactly one minute.
