Baked Broccoli Bites, a deliciously healthy meal that is perfect for toddlers and older kids alike. Whether you make them for a picnic, kids' school lunch box, or simply a healthy snack in between meals, my fantastic cheesy broccoli bites are sure to please the whole family.

1 large broccoli head
1/2 cup breadcrumbs
1/2 cup grated cheddar cheese
1 egg
1 spring onion
black pepper to taste
oil to grease the baking tray

Steps:

  • Break the broccoli head into florets, add them to a pan of boiling water, cover with a lid and leave to cook for 5-7 minutes until tender.
  • Chop the broccoli finely, you should get about 2 cups of chopped broccoli. Leave to cool.
  • Add the broccoli to a bowl, add the cheese, chopped spring onion, breadcrumbs, egg and black pepper, and mix everything well.
  • Pre-heat the oven to 180 degrees Celsius (350 Fahrenheit).
  • Grease a baking tray with vegetable oil, then shape small balls out of the broccoli mixture, I ended up with 13 balls, but depending on the size, you might get more or less.
  • Bake for 30 minutes or until lightly golden brown, turning them on the other side half the way through baking.
  • Serve warm or cold.

Delicious bits of broccoli are drenched in a cheese mixture and fried. When our local restaurant stopped serving their Broccoli Bites, we were devastated. So I tried to duplicate them at home one night. It was funny to note that soon after, they started carrying them again here.

3 tablespoons prepared Dijon-style mustard
4 tablespoons honey
2 cups broccoli florets
1 cup shredded Cheddar cheese
1 egg
1 cup milk
½ cup sifted all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon vegetable oil
½ cup vegetable oil for frying

Steps:

  • To make the sauce: In a small bowl, stir together the mustard and honey. Set aside.
  • Chop florets into small pieces or pulse lightly in food processor. Toss in a mixing bowl with shredded cheese. Set aside.
  • Beat egg and stir in the milk. Sift flour, baking powder, and salt together and combine them with the egg and milk mixture, beating well. Beat in 1/2 teaspoon oil as well. Pour mixture over broccoli and cheese and toss to coat well.
  • In a large skillet or saucepan heat oil to 375 degrees F (190 degrees C).
  • Drop broccoli mixture by spoonfuls into 375 degrees F (190 degrees C) oil and fry until golden brown. Serve with honey mustard sauce.

These keto-friendly bites are filled with vegetables and protein thanks to an abundance of broccoli and almond flour, but they are straight-up indulgent when served with ranch dipping sauce that is also keto-friendly. We keep the cayenne optional here but be sure to include it if you want the bites to have a little kick.

Number Of Ingredients 19

2 medium broccoli crowns (about 12 ounces), cut into medium florets and any excess stalks sliced 1/4-inch thick (about 4 heaping cups)
2 cloves garlic, lightly smashed
1 small scallion, thinly sliced (about 2 tablespoons)
1/4 cup fresh flat-leaf parsley leaves
1 large egg plus 1 large egg yolk
1/4 teaspoon cayenne pepper, optional
1 teaspoon paprika
Kosher salt and freshly ground black pepper
3/4 cup almond flour (about 3 ounces)
1 cup finely shredded sharp Cheddar (about 3 1/2 ounces)
Nonstick extra-virgin olive oil cooking spray
1/2 cup sour cream
1/3 cup keto-friendly mayonnaise
2 tablespoons distilled white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Kosher salt and freshly ground black pepper
1 tablespoon fresh dill, finely chopped
1/4 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • Put the broccoli, garlic and 1/4 cup water into a medium heat-safe glass bowl. Wet a paper towel and lay over the broccoli. Microwave until bright green and crisp-tender, about 3 minutes, depending on your microwave. Carefully remove the paper towel, transfer the mixture to a food processor (leaving any water behind in the bowl) and allow to cool for 5 minutes. Clean out the glass bowl and set aside.
  • Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment and set aside.
  • Add the scallion and parsley to the food processor. Pulse until the broccoli mixture is finely chopped and similar to the texture of rice. Transfer to the reserved bowl along with the whole egg, egg yolk, cayenne (if using), paprika, 1 1/2 teaspoons salt, a couple grinds of black pepper, almond flour and 3/4 cup of the Cheddar. Use your hands to mix everything together until well combined.
  • Scoop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them evenly apart, for about 28 total. Lightly wet your hands, then roll each mound into a round ball, re-wetting your hands as needed. This helps keep your hands from becoming sticky and makes rolling the mix much easier to do. Spray the balls with the cooking spray and sprinkle the tops with the remaining 1 cup Cheddar, pressing it gently onto the tops to help it adhere.
  • Bake in the oven until the bites are light golden brown and cooked through, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
  • Meanwhile, combine the sour cream, mayonnaise, vinegar, garlic powder, onion powder, a large pinch salt, several grinds of black pepper, dill and parsley in a small bowl. Whisk to combine and season with more salt and pepper as desired.
  • Transfer the broccoli cheese bites to a platter and serve the ranch dipping sauce alongside.

2 (10 ounce) packages frozen chopped broccoli
6 eggs
2 tablespoons dried minced onion
1 teaspoon dried parsley
½ teaspoon poultry seasoning
½ teaspoon salt
½ teaspoon ground black pepper
1 cup grated Parmesan cheese
2 cups dry bread crumbs
½ cup margarine, softened
¼ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook broccoli according to package directions. Drain, and cool.
  • In a large bowl, whisk together the eggs, onion, parsley, poultry seasoning, salt and pepper. Stir in the bread crumbs, Parmesan cheese, margarine and milk. Mix in the broccoli last. Let the mixture stand for about 10 minutes. It should thicken, but if not, add a little more bread crumbs. Roll the mixture into small balls, and arrange on a greased baking sheet.
  • Bake for 15 to 20 minutes in the preheated oven, until firm and lightly toasted.

2 ½ cups broccoli floret
2 cups quinoa, cooked
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon pepper
⅓ cup nutritional yeast
½ teaspoon baking powder
½ cup all-purpose flour
ketchup, for serving

Steps:

  • Preheat the oven to 375°F (190°C).
  • To make the flax egg, combine the flax meal and water in a small bowl and set aside.
  • Over high heat, bring a small pot of water to a boil. Add the broccoli florets and cook for 4-5 minutes, or until tender. Remove with a slotted spoon and transfer to a cutting board.
  • Finely chop florets to the consistency of rice.
  • Transfer the broccoli to a medium bowl and add the quinoa, garlic powder, onion powder, salt, pepper, nutritional yeast, baking powder, flax egg, and flour. Stir well until the ingredients are evenly distributed.
