4 very ripe beefsteak tomatoes, cored and diced
1 cup diced carrots
1 cup diced celery, plus stalks for garnish
1/2 cup diced beets
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1/4 teaspoon cracked black pepper
8 leaves flat-leaf spinach
3 leaves kale
1 small bunch watercress
2 tablespoons chopped flat-leaf parsley
Pinch chile de arbol powder
1 to 1 1/2 cups vodka, cold
1 teaspoon celery salt, plus for garnish
2 to 3 tablespoons prepared horseradish
Hot sauce

Steps:

  • Combine the tomatoes, carrots, celery, beets, 1 tablespoon of the Worcestershire, and the salt and pepper in a medium saucepan. Add 1 cup water and bring to a boil over high heat. Reduce the heat to low and simmer, covered, for 15 minutes. Add the spinach, kale, watercress, parsley and chile de arbol; cover and simmer for another 5 minutes.
  • Remove the pan from the heat and let cool for 10 minutes. Transfer mixture to a blender, add another 1 cup water, and puree until very, very smooth, about 3 minutes. Strain through a fine-mesh sieve into a small pitcher. Cover and refrigerate until cold, at least 2 hours.
  • Stir 1 cup vodka into the pitcher; taste, and add more vodka as desired. Stir in the celery salt and the remaining 1 tablespoon Worcestershire. Add horseradish and hot sauce to taste.
  • To serve, put ice cubes in 4 glasses. Divide the bloody mary mixture among the glasses, and garnish each with a celery stick and a sprinkle of celery salt.

PICKLE JUICE BLOODY MARY

3 tablespoons dill pickle juice
1 1/2 ounces vodka
2 teaspoons Worcestershire sauce
1 teaspoon prepared horseradish
6 dashes hot sauce
Freshly ground black pepper
1 celery heart stalk
1 lemon wedge
1 cornichon
1 pitted olive

Steps:

  • Combine tomato juice, pickle juice, vodka, Worcestershire, horseradish, hot sauce and some black pepper in a small pitcher and stir. Fill an 8-ounce glass with ice, pour the Bloody Mary over the ice and garnish the glass with the celery and lemon wedge.
  • Stack the cornichon and olive on a 3-inch skewer. Place atop the Bloody Mary and enjoy!

1 cup ice cubes
1 (1.5 fluid ounce) jigger vodka
¾ cup spicy tomato-vegetable juice cocktail (e.g., V-8)
2 dashes Worcestershire sauce
1 dash hot pepper sauce (e.g. Tabasco™)
salt and pepper to taste
1 stalk celery
2 stuffed green olives

Steps:

  • Salt the rim of a tall glass. To do so, pour salt onto a small plate, moisten the rim of the glass on a damp towel and press into the salt. Fill the glass with ice cubes.
  • In a cocktail mixer full of ice, combine the vodka, vegetable juice, Worcestershire sauce, hot pepper sauce, salt and pepper. Shake vigorously and strain into the glass. Garnish with a stalk of celery and olives stuck onto a toothpick.

3 cups tomato juice
3 tablespoons lemon juice
3 tablespoons lime juice
1 tablespoon prepared horseradish
1 1/2 tablespoons Worcestershire sauce
1/4 teaspoon garlic powder
3/4 teaspoon Tabasco sauce
3/4 teaspoon celery salt
1/2 teaspoon coarse black pepper
1/3 cup pickle juice
1 ounce vodka, per drink

Steps:

  • In a blender combine the tomato juice, lemon juice, lime juice, horseradish, Worcestershire sauce, garlic powder, pickle juice, and hot sauce and process until smooth. Transfer to a nonreactive container and add celery salt and black pepper, to taste. Refrigerate until thoroughly chilled, at least 2 hours and up to overnight.
  • When ready to serve, fill each glass with ice.
  • Add 1 ounce of vodka to each glass, then fill the glass with the bloody mary mix. Stir well, and garnish each glass with your favorite veggie, pickle, celery, pickled green bean, or a pickled okra.

2 (8-ounce) bottles clam juice, such Bumble Bee
1/2 teaspoon grated lime zest
1/2 cup freshly squeezed lime juice (3 to 4 limes)
2 teaspoons wasabi powder
2 teaspoons Tabasco Chipotle Pepper Sauce (see Cook's Note)
1 tablespoon Worcestershire sauce
1 cup good vodka, such as Grey Goose
Kosher salt and freshly ground black pepper
2 tablespoons Old Bay Seasoning
1 lime wedge, plus 6 lime slices, for garnish
18 large pimento-stuffed olives, such as Sable and Rosenfeld
6 cooked and peeled jumbo shrimp, with tails on

Steps:

  • In a large pitcher, stir together the tomato juice, clam juice, and lime zest. In a small glass measuring cup, whisk together the lime juice and wasabi powder and add to the pitcher. Stir in the Tabasco, Worcestershire, vodka, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Spread the Old Bay Seasoning on a small plate. Moisten the rims of six highball glasses by running a lime wedge around the edge of each glass and dip the rims in the Old Bay Seasoning. Set aside to dry.
  • Fill the glasses half full with ice and pour in the Bloody Mary mixture. For each drink, add 2 or 3 olives threaded on a 6-inch skewer, then place one shrimp and one slice of lime on the rim of each glass. Serve cold.

1 1/2 ounces vodka
1 teaspoon prepared horseradish, any color
1 teaspoon or 2 splashes Worcestershire sauce
2 dashes Garden Hot Sauce, recipe follows, or hot sauce of your choice
1/2 cup vegetable or tomato juice
Creole Seafood Seasoning, recipe follows, or store-bought, to taste
1 medium-sized pickled pepper, skewered with sugar cane or toothpick
1 medium-sized piece pickled okra, skewed with a sugarcane or toothpick
1 1/2 pounds ripe hot peppers (cayenne, jalapeno, or habanero, etc. or a combination)
1 cup kosher salt
3 cups white vinegar

Steps:

  • Place ice cubes in an Old Fashioned glass until it's 2/3 full. Add the vodka, horseradish, Worcestershire, hot sauce, and vegetable juice. Cover the glass with a shaker, shake well, then let rest in the shaker. Wet the rim of the glass and coat the entire rim with Creole seasoning. Pour the drink back into the glass and garnish with the pepper and the okra.
  • Although at Commander's we use sugarcane for our skewers, out-side of our region you may not be able to buy it very readily, so skewer with toothpicks instead.
  • Rinse the peppers with cold water and dry them with a paper towel. Remove the stems and chop them coarsely. Place the chopped peppers in a stainless bowl, sprinkle the salt on top, stir, cover with plastic wrap, and place in a cool, dry area for 2 days, stirring every 12 hours. All that salt is there mostly to promote ripening of the peppers.
  • Add the vinegar, and puree with a hand blender or in a food processor. Place in a sterilized glass jar with a fresh, sterilized lid, and refrigerate.
  • As time goes by, whenever you have an excess of ripe peppers, remove stems, chop and add to the jar. (The salting step isn't necessary for these additions.) When the jar is filled, remove the sauce, puree if you wish, place it in a clean jar, and age it until it reaches the desired flavor -- at least 2 months, or longer.
  • Use as the hot sauce in many recipes.

With a range in the amounts of horseradish, Tabasco, and lemon juice, you can customize the drinks to your liking. The final flourish, rimming the glasses with sea salt and black pepper, adds a slight tingle to each sip.

6 pounds ripe tomatoes, coarsely chopped
6 celery ribs, coarsely chopped
2 cups very coarsely chopped flat-leaf parsley sprigs (from 1 large bunch)
2 tablespoons fine sea salt, divided
2 1/2 to 3 tablespoons bottled horseradish
2 1/2 to 3 teaspoons Tabasco
2 1/2 to 3 teaspoons fresh lemon juice
Lemon wedges for rims of glasses
16 ounces (2 cups) ice-cold vodka
Garnish: large caper berries or green olives

Steps:

  • Purée tomatoes, celery, parsley, and 1 tablespoon sea salt in several batches in a food processor until smooth. Transfer to a bowl and chill at least 1 hour. Force through a food mill or medium-mesh sieve into a bowl, discarding solids (you'll have about 10 cups juice). Add horseradish, Tabasco, and lemon juice.
  • Mix remaining tablespoon sea salt and 1 teaspoon finely ground fresh pepper on a small plate. Moisten outside of rim of each glass with lemon wedge, then dip rim in salt and pepper. Fill each glass with ice and 1 ounce (2 tablespoons) vodka, then top with about 2/3 cup juice.

Steps:

  • Place the ice in a large jug. Measure the vodka, tomato juice and lemon juice and pour it straight onto the ice.
  • Add 3 shakes of Worcestershire sauce and Tabasco (or more if you like it very spicy) and a pinch of celery salt and pepper. Stir until the outside of the jug feels cold, then strain the cocktail into 2 tall glasses.
  • Top up with fresh ice, add a celery stick and lemon slice to both glasses and enjoy.
