15-MINUTE MEDITERRANEAN PASTA

15-Minute Mediterranean Pasta image

It doesn't get any easier than this Mediterranean-inspired pasta. With just a few simple pantry ingredients, a couple of fresh ingredients, and 15 minutes this easy dinner is ready to serve.

Provided by April Anderson

Categories     Dinner

Time 15m

Number Of Ingredients 10

8 ounces spaghetti
1 garlic clove, smashed
1/4 cup olive oil
Juice from 1/2 a lemon
1/3 cup halved Kalamata olives
1/2 cup roughly chopped sun-dried tomatoes (packed in oil)
1 (10-ounce) jar artichoke hearts, drained and quartered (use the kind marinated in herbs)
2 tablespoons chopped fresh parsley
1/2 teaspoon kosher salt
1 cup crumbled feta cheese

Steps:

  • Bring a large pot of water to a boil. Add the spaghetti and cook it according to package directions.
  • While the spaghetti is boiling, add the garlic and olive oil to a small pan. Heat the oil over medium-low heat and let the garlic gently cook in the oil, for about ten minutes. Adjust the heat, if needed, so the garlic doesn't brown too quickly. After ten minutes discard the garlic and turn off the heat.
  • Once the spaghetti is cooked, drain it and return it to the pot. Add everything, except the feta cheese, to the pot with the spaghetti and toss it all to combine. Add 3/4 of the feta, reserve some for serving, and give it one more gentle toss. Serve right away with the extra feta on the side.

ITALIAN PLUM TOMATO SAUCE

Italian Plum Tomato Sauce image

This is a delicious Italian Plum Tomato Sauce. Serve it over your favorite pasta, or like my husband, he eats it just by itself.

Provided by Gia Peterkin Trower

Categories     Other Sauces

Time 2h

Number Of Ingredients 9

10-15 ripe plum tomatos
4 clove garlic, chopped
1 bunch fresh basil leaves
2-4 Tbsp olive oil, extra virgin
1 pinch red pepper flakes
1 small onion, chopped
salt and pepper, to taste
1 tsp oregano
1 pinch sugar

Steps:

  • 1. Wash and score your tomatoes by making a slit across the bottom like an x.
  • 2. Bring a large pot of salted water to boiling. Add the tomatoes to the boiling water for about 1-1/2 minutes.
  • 3. Using a ladle, remove the tomatoes and place them in a strainer. Let cool.
  • 4. The tomatoes will peel very easily.
  • 5. Using a cutting board, dice all the tomatoes, keeping the juices.
  • 6. In a large skillet, add olive oil and brown the garlic. Add your chopped onion and cook until tender.
  • 7. Add your diced tomatoes along with the juice.
  • 8. Add salt, pepper, pinch of sugar, crushed red pepper and oregano. Add the bunch of basil leaves. This gives the sauce a nice flavor and color.
  • 9. Cook down tomatoes on medium heat, breaking some down. Continue cooking down until sauce thickens, about 45 minutes.
  • 10. Add a drizzle of olive oil to the tomatoes.

FRESH PLUM TOMATO SAUCE

Fresh Plum Tomato Sauce image

This is the closest recipe I've found to the deliciously simple tomato sauces I've tried in Italy. Since in the States our tomatoes aren't sweetened by rich, volcanic soil, a little bit of sugar helps make the sauce more vibrant.

Provided by rachas6

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes     Pasta Sauce Recipes     Tomato

Time 1h

Yield 3

Number Of Ingredients 6

1 tablespoon olive oil
3 cloves garlic, peeled and halved
18 plum tomatoes, or more to taste - cored, seeded, and chopped
2 teaspoons salt
1 teaspoon white sugar
⅛ cup chopped fresh basil

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic and brown for 3 to 4 minutes. Add tomatoes, salt, and sugar; cook for 15 minutes.
  • Place a large bowl on a work surface. Insert a colander inside the bowl. Place cooked tomatoes in the colander to drain, saving excess liquid. Transfer tomatoes to the bowl of a food processor and pulse until blended to the desired consistency. Return tomatoes to the saucepan. Add basil and cook for 20 to 30 minutes more, adding some of the reserved tomato liquid if the sauce is too thick.

FRESH-TASTING TOMATO SAUCE AND SPAGHETTI

Fresh-Tasting Tomato Sauce and Spaghetti image

Almost all tomato-sauce recipes call for at least 30 minutes of cooking, but you can make this tomato sauce in less than 10 minutes by using a large skillet instead of the conventional saucepan. The tomatoes cook faster on the larger surface of the skillet and taste fresher than sauces subjected to 45 minutes of heat. Pasta is added to the sauce in the skillet to finish cooking both pasta and sauce together. This basic tomato sauce can easily be prepared while waiting for the pasta water to come to a boil. Ripe seasonal tomatoes, preferably plum or sauce tomatoes, which have a lower water content, should be used when available, but first-rate canned tomato pulp is a fine choice for the rest of the year. Those who wish to peel fresh tomatoes should, though it's not necessary.

Provided by Faith Willinger

Yield Serves 4 to 6 as a first course

Number Of Ingredients 9

1 1/2 pounds tomatoes or 2 cups tomato pulp
1 to 2 garlic cloves, minced
3 to 4 tablespoons extra-virgin olive oil
Fine sea salt plus 2 to 3 tablespoons salt
Freshly ground black pepper
5 to 6 quarts water
14 to 16 ounces spaghetti
3 tablespoons chopped fresh basil or any combination of fresh herbs, chopped
1/2 cup grated Parmigiano-Reggiano for topping pasta (optional)

Steps:

  • Peel the tomatoes, if desired, with a vegetable peeler or by blanching the tomatoes in boiling water. Cut the tomatoes in half and squeeze the juice and seeds into a strainer over a bowl. Chop or process the tomatoes and add to the reserved juice. Or measure 2 cups of canned tomato pulp or drained plum tomatoes.
  • Put the garlic in a large nonstick skillet and drizzle with 1 tablespoon extra-virgin olive oil. Place over moderate heat and cook until the garlic barely begins to color.
  • Add the tomatoes to the skillet and cook over moderately high heat for 5 minutes or until the tomatoes look cooked and most but not all the liquid has evaporated. Add fine sea salt and pepper to taste.
  • For a smooth sauce, blend the cooked tomatoes in a food processor with the remaining extra-virgin olive oil and return the sauce to the skillet. For a chunky sauce, add the remaining oil before serving.
  • Bring 5 to 6 quarts of water to a rolling boil. Add 2 to 3 tablespoons salt and the spaghetti; cook until it still offers considerable resistance to the tooth, around three quarters of the cooking time.
  • Drain the pasta, reserving 2 cups of the cooking water. Add the drained al dente pasta, 1/2 cup pasta-cooking water, and the basil to the skillet with the tomato sauce. Cook over high heat, stirring to mix sauce and pasta, until the pasta is cooked. Add more pasta water if the sauce becomes too dry. Serve immediately, topped with Parmigiano if desired.
