- Place all the ingredients in a medium saucepan and stir together. Bring to a boil, then reduce the heat to a simmer and cook for 15 minutes. If you prefer the sauce thinner, stir in a little water. If you prefer it thicker, let it simmer a little longer. Let the sauce cool completely before storing in the fridge.This BBQ sauce can be eaten right away but for best results let it chill overnight to allow time for the flavors to meld.Store it in the fridge in sealed non-reactive container where it will keep for 2-3 weeks.Makes about 2 1/2 cups.

BARBECUE SAUCE
This is a great BBQ sauce that I saw get made on FoodTV, I think an Ina Garten show. I made it the same day and did a few changes, based on our preferences. This sauce is thick and rich, a little bit sweet and a little spicy. This makes a lot, make half the first time you make it, then double it the next time so that you can freeze it in batches, which is what I've done.

Here's a great all-purpose sauce that's loaded with flavor but not too sweet. It goes well with all manner of poultry, pork, or beef. The minced vegetables give you a coarse-textured sauce, which I happen to like. If you prefer a smooth sauce, puree it in a blender.

- 1. Heat the oil in a large nonreactive saucepan over medium heat. Add the onion, garlic, and bell pepper and cook until softened but not brown, about 4 minutes.
- 2. Stir in the ketchup, tomato sauce, cider vinegar, Worcestershire sauce, lemon juice, pineapple juice (if using), hot sauce, liquid smoke, molasses, brown sugar, prepared and dry mustards, black pepper, and 1 cup of water and bring to a boil. Reduce the heat to low and let the sauce simmer, uncovered, until thickened, about 15 minutes, stirring often to prevent scorching. If the sauce becomes too thick, add a little more water.
- 3. Remove the barbecue sauce from the heat and taste for seasoning, adding salt to taste and more cider vinegar, hot sauce, and/or brown sugar as necessary; the sauce should be highly seasoned.
- 4. Transfer the barbecue sauce to a serving bowl and serve warm or at room temperature. The sauce will keep, tightly covered in the refrigerator, for several weeks.

- Brown meat of choice till caramellized areas appear.
- Remove meat from pan and deglaze with beer, scraping up browned bits.
- Stir in hot sauce and thick soy sauce (which looks like molasses and tastes like heaven). Water may be added if sauce appears too thick. A small taste will tell you whether the hot/sweet balance is right for you. Once this cooks down it will be thicker and hotter.
- Pour over meat. Place roasting pan in 350 degree oven till meat is done and sauce is thick and luscious.
- CAUTION! This sauce could be too extreme for children!
- Variations:.
- Add fresh ginger and 5 Spice powder for an Asian kick, especially good on spare ribs and chicken wings.
- Add honey and lemon juice for a sweeter, brighter taste. Great on pork loin or pork chops.
- Add ketchup, mustard, worchesterchire for a more traditional tomato based barbecue sauce. Good on anything.
- Add caramellized onions and/or roasted garlic for a textural and flavor boost. Really nice for boneless chicken breasts.
