The kind that can be whipped up in thirty minutes or less from start to finish and only mess up one dish. And of course, they need to knock-my-socks-off with flavor as well! I am so in love with this spicy, creamy, cheesy pasta for all of those reasons. It is just packed with so many incredible flavors. This came from Kevin & Amanda. When I made this recipe I made minor changes to the recipe. I used vegetable oil, mozzarella flavored sausages, half & half, and cheddar cheese. Next time I plan to not use Rotel as this was a bit to spicy for my families taste.

1 tablespoon olive oil
1 lb smoked sausage
1 1/2 cups diced onions
2 garlic cloves, minced
2 cups low sodium chicken broth
1 (10 ounce) can ro-tel tomatoes and green chilies, Mild
1/2 cup heavy cream
8 ounces penne pasta
1/2 teaspoon salt and pepper, each
1 cup monterey jack cheese, shredded
1/3 cup thinly sliced scallion

Steps:

  • Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
  • Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

2 teaspoons canola oil
8 hot Italian sausage links
1/2 pound sliced fresh mushrooms
1 small sweet onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1/2 cup beef stock
1/2 cup dry white wine or additional stock
1 package (12 ounces) fettuccine or tagliatelle
Grated Parmesan cheese, optional

Steps:

  • In a large skillet, heat oil over medium heat; brown sausages on all sides. Transfer to a 3-qt. slow cooker, reserving drippings in pan., In same skillet, saute mushrooms and onion in drippings over medium heat until tender, 4-5 minutes. Stir in garlic; cook and stir 1 minute. Stir in tomatoes, stock and wine; pour over sausages. Cook, covered, on low 6-8 hours (a thermometer inserted in sausages should read at least 160°)., To serve, cook fettuccine according to package directions; drain. Remove sausages from slow cooker; cut into thick slices., Skim fat from mushroom mixture. Add fettuccine and sausage; toss to combine. Serve in bowls. If desired, top with cheese.

2 low-fat spicy chicken sausage
4 ounces whole wheat pasta, penne rigoti
1 red pepper
1 lb asparagus
1/2 red onion
1 teaspoon olive oil
2 tablespoons light cream cheese
2 tablespoons light sour cream
2 tablespoons nonfat milk
2 tablespoons fresh grated parmesan cheese
1 teaspoon chili-garlic sauce (or to taste)
1 teaspoon ground chipotle chili seasoning mix (or to taste)

Steps:

  • Start water boiling with some salt.
  • When boiling add pasta and boil for 7 minutes.
  • Begin heating sausage in frying pan on medium high heat(oil not needed) turning occasionally.
  • Cut red pepper into strips.
  • Cut red onion into bite size pieces.
  • Break off woody end of asparagus and discard.
  • Put red pepper, red onion, and asparagus in a bowl.
  • Add 1 tsp oil, salt, and pepper to taste.
  • Toss to coat vegetables.
  • Grill or broil in the oven until soft and edges beginning to blacken.
  • Cut up sausage and any large piece vegetable to desired bite size bits.
  • Add cream cheese, sour cream milk, and parmesan, chili garlic sauce, and chipotle seasoning to frying pan.
  • Mix sauce well while heating.
  • Add vegetables and sausage back into pan.
  • Add drained pasta.
  • Mix well until all coated and sauce is at desired consistency.
  • Serve.

As Jamie says, "Remember to buy the best sausages you can afford, if you get cheap, dodgy sausages, it just won't work." Note: Don't use precooked sausage for this recipe, it must be raw.

2 teaspoons fennel seeds
2 dried red chilies, crumbled
1 1/2 lbs raw cumberland sausages, skins removed
1 teaspoon dried oregano
1 glass white wine
1 lemon, juice and zest of, organic
1 lb good quality fusilli
salt and pepper
2 tablespoons butter
4 tablespoons fresh grated parmesan cheese
3 tablespoons fresh thyme, leaves picked, and chopped

Steps:

  • Bash the fennel seeds and chiles in a flavor shaker, pestle and mortar, or a spice grinder until coarsely crushed. Set aside.
  • Heat 2 TB good olive oil in a pan over medium high heat.
  • Put the sausage filling in the pan, breaking it up. Fry for a few minutes until the meat starts to color and the fat starts to render out of it, then break it up again until it resembles coarse ground beef.
  • Add the bashed up fennel and chiles, and cook over medium high heat for about ten minutes, until the meat becomes crisp, golden brown, and slightly caramelized.
  • Stir in the oregano, then add the white wine and stir until it is reduced by half.
  • Add the lemon zest and juice.
  • Turn down to low while you cook your noodles al dente (follow the package instructions precisely for perfect al dente every time).
  • When pasta is al dente, drain it in a colander, keeping 1/2 cup of the pasta water aside.
  • Toss the pasta with the meat in the pan until coated, add the butter, parmesan, fresh thyme and spoonfuls of the reserved pasta water until you have a lovely, shiny, loose sauce. Check for seasoning (more salt? pepper? chile powder?) and top with parmesan, server immediately.
