CANDIED PECANS

Steps:
- Line a baking sheet with parchment paper. In a small saucepan, bring the sugar and 3/4 cup water to a boil. Reduce to a simmer, then add the pecans and cook until glossy, about 5 minutes. Remove with a slotted spoon to the prepared baking sheet and let cool.
CANDIED PECAN MAPLE
Steps:
- In saucepan heat half of the syrup over medium temperature. Add butter, salt, pepper, and cayenne. Add nuts and cook 3 minutes, nuts will begin to stick together. Add remaining 1/2 of the maple syrup and cook until it begins to caramelize. Add the rosemary leaves and toss. Immediately remove from the heat. Cool on a silpat sheet.
PERFECTLY CANDIED PECANS
This is EXACTLY what I had been looking for. I have made a ton of candied nut recipes and nothing quite works for me. . .this one makes the cut! Feel free to use walnuts instead of pecans. They are heavenly as a snack, ask a housewarming gift or simply on top of a salad. This is a twist on a couple different recipes already here on Zaar.

Steps:
- Preheat oven to 375 degrees.
- Mix sugar, salt, cinnamon and nutmeg in a small bowl and set aside.
- Saute butter and maple syrup in a large pan, and bring to a boil.
- Remove from heat. Add nuts and toss to coat.
- Transfer nuts to a rimmed baking sheet lined with aluminum foil.
- Sprinkle with sugar mixture over top of the nuts and toss gently to coat; DO NOT MIX too much because the sugar will dissolve and won't stick to the top of your nuts.
- Spread out the nuts so that they are not touching one another.
- Toast in oven for 5 minutes.
- Let nuts cool completely on sheet.

- Place pecans on a parchment-lined baking sheet in a single layer. Place on the middle rack for 14 minutes. Toss at 10 minutes, and check at 12 minutes, as all ovens are different. You want the nuts to toast a bit, so I try to go to the full 14 mintues.
- Remove from oven. Let cool completely. Break apart. Store in jar, or bowl on the counter for easy snacking.

- In a heavy bottomed skillet or pan, heat the pecans and maple syrup over low to medium-low heat, stirring continuously. The maple syrup will start to bubble and you’ll see the extra moisture evaporating. Keep cooking and stirring until all of the extra moisture has evaporated and the maple sure starts to crystallize and stick to the nuts. This should take 5-8 minutes. Make sure you stir the whole time so that you don’t burn the nuts.
- When the moisture is all gone turn the nuts out onto a baking mat or a piece of parchment (or waxed) paper and let the nuts cool. Enjoy just as they are or add to your favorite salads, trail mix, granola, popcorn, or dessert.

- In a large saucepan, over medium-low heat, combine all ingredients except pecans. Stir until all sugar and spices have dissolved completely.
- Once coated, stir constantly (on med-low heat) for about 7-8 minutes, or until there is no more liquid in the pot. Remove from heat immediately (otherwise the sugars might burn).
- As soon as the nuts are done, pour nuts onto a sheet of parchment paper to cool (make sure they are flat and in a single layer, otherwise the nuts will stick to each other). If you want to sprinkle with cinnamon sugar to give them a 'sugared' look (as pictured), do it while the nuts are cooling so the cinnamon sugar will stick.
