This homemade Strawberry Champagne Vinaigrette will brighten up any salad! Inspired by the Zupas strawberry harvest salad!

Ingredients

16 oz frozen strawberries (thawed)
1/4 cup plus 2 tablespoons lemon juice
1/4 cup sugar
2 tablespoons champagne vinegar
2 tablespoons olive oil

Steps:

Combine the strawberries, lemon juice, sugar, and vinegar in a blender and puree until smooth.
Add the olive oil and pulse until combined.
Serve over your favorite salad.

In a medium sized container mix the strawberries, salt, sugar, and vinegar. Blend well in a blender.
While blending slowly add in all of the oil, blending until smooth.
