1 1/2 pounds zucchini
1 1/2 pounds tomatoes
1 pound mozzarella
Olive oil
Balsamic vinegar
Salt and pepper
Basil, for garnish

Steps:

  • Heat a charcoal or gas grill; the fire should be medium-low and the rack about 4 inches from the heat.
  • Cut 1 1/2 pounds zucchini into 1/2-inch-thick slices.
  • Rub zucchini with olive oil, salt and pepper; grill, turning once, until nicely browned and tender, 6 to 8 minutes.
  • As zucchini cooks, slice 1 1/2 pounds tomatoes and 1 pound mozzarella into 1/4 inch rounds.
  • Toss (or layer) with the zucchini, and drizzle with balsamic vinegar and olive oil; season with salt and pepper.
  • Garnish with basil.

2 medium zucchini
Coarse salt and ground pepper
2 plum tomatoes, halved, seeded, and diced small
1/4 teaspoon chopped fresh oregano leaves
1/4 teaspoon white vinegar
5 ounces fresh mozzarella, torn into 1-inch pieces

Steps:

  • Preheat oven to 400 degrees. Brush a rimmed baking sheet with olive oil. Halve zucchini lengthwise and scrape out seeds. Place, cut side up, on sheet and season with salt and pepper. In a small bowl, combine tomatoes, oregano, and vinegar; season with salt and pepper. Top zucchini with tomato mixture. Bake until zucchini is tender, about 20 minutes.
  • Heat broiler, with rack in top position. Top zucchini with mozzarella. Broil until cheese is brown and bubbling, 1 to 2 minutes; serve immediately.

3 tbsp tomato sauce
4 cloves garlic (thinly sliced)
2 tbsp olive oil
1 tsp Italian herbs
1 tsp salt
1/2 tsp pepper

Steps:

  • Preheat the oven to 450 F.
  • In a medium bowl mixed together sliced zucchini, Italian herbs, salt, pepper and 1 tbsp of olive oil. Set aside for 5 minutes.
  • Spray a medium size casserole dish with a baking spray and arrange zucchini followed by garlic, tomatoes and basil.
  • Spoon the tomato sauce on top followed by sliced Mozzarella and a final drizzle of 1 tbsp of olive oil.

2 medium sized (or about 5 small) zucchini
Garlic spread and seasoning
2 C shredded mozzarella cheese I used a bled of Monterrey and cheddar and I didn't measure the cheese, just put on what looked good)

Steps:

  • . Slice your zucchini up into 1/2 inch rings. 2. Lay them out flat on a large cookie sheet. Sprinkle with Garlic Seasoning and a bit of salt. 3. Bake in the oven at 350 for about 10-15 minutes or until crisp tender. 4. Take the hot pan out of the oven and sprinkle the zucchini with cheese. Turn the oven to broil, throw that cookie sheet back into the oven and let the cheese get all bubbly and a bit browned. This should only take about 3-5 minutes. Be careful here. Broiling things in the oven can get out of control in a fast hurry. (my trick for broiling is to not move the rack up, I just keep it in the middle of the oven and things are less likely to burn. It may take a minute longer, but no burnt food)

  • Using a spiralizer, spiralize zucchini into noodles or ribbons.

7 oz fresh zucchini ((200 g))
7 oz mozzarella ( di bufala (200 g))
6 cherry tomatoes
1 tbsp pine nuts
2 tbsp herbed croutons (for salads)
3 tbsp balsamic vinegar
good quality olive oil
a handful fresh basil
pepper

Steps:

  • Rinse the zucchini and shave or slice it very thinly. This goes best with a mandolin slicer. Otherwise a sharp knife with a long blade will do. You can also use a vegetable peeler. Once you have sliced the zucchini, place the slivers on a microwave-resistant plate or tray.
  • Place the zucchini in the microwave and cook them for 2 minutes until soft. You can also grill them instead of using a microwave. Make sure it doesn't burn. Do this in batches if necessary.
  • Combine the balsamic vinegar and 3 tablespoons of the olive oil. Lightly brush a medium baking dish with this mixture and place some slices of zucchini on top of it. The zucchini is fragile, try not the tear it.
  • Brush again lightly and top with some more zucchini. Sprinkle with a little pepper now and then. Keep brushing the zucchini slices until all have been used.
  • Brush one last time with the balsamic vinegar mixture to keep the top layer moist. Cover it with some cling film and let the zucchini marinate in the fridge for at least an hour. Slice the cherry tomatoes in half. Divide the marinated zucchini ribbons over plates. Top with some shredded fresh mozzarella di bufala and garnish your plates with sliced cherry tomatoes, the pine nuts, the croutons and the fresh basil. Sprinkle with some freshly ground black pepper and extra olive oil. Serve.

Spaghetti with Zucchini and Fresh Cherry Tomato Sauce image

1 large (8- to 10-inch long zucchini)
¾ pound spaghetti (about ¾ of a standard box)
2 teaspoons extra virgin olive oil
Kosher salt
Freshly ground black pepper
8 ounces fresh mozzarella pearls
3 cups cherry tomatoes
3 large cloves garlic (peeled, smashed and roughly chopped)
12 fresh basil leaves (torn)
1 tablespoon extra virgin olive oil
2 teaspoons balsamic vinegar
¼ teaspoon crushed red pepper
¼ teaspoon sugar (optional)
Kosher salt
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Spiralize the zucchini using the blade on your spiralizer that makes spaghetti-like noodles. (If you don't have a spiralizer, don't panic. You can julienne your zucchini using a julienne peeler or your chef's knife. The latter will take you a while, but it's doable.) Pat the zucchini noodles dry with paper towels, and briefly set them aside.
  • Next, whip up the tomato sauce. Add all the ingredients for the sauce to the bowl of a food processor (or blender). Pulse a few times until the ingredients are incorporated and you have a chunky, rustic sauce. (Don't over-process, people, you want texture!) Taste and season with salt and pepper. Transfer the sauce to a large mixing bowl.
  • Cook the pasta al dente according to the package directions. Drain.
  • Immediately add the spaghetti to the bowl with the tomato sauce and toss to coat. Let the pasta rest for 2 minutes to absorb some of the sauce.
  • During the last few minutes of the pasta's cooking time, heat 2 teaspoons of olive oil in a large skillet until shimmering. Add the zucchini noodles. Season with salt and pepper and cook for 2 minutes until just tender. (Be careful not to overcook them!!) Add the zucchini noodles to the bowl with the pasta and toss to combine. Add the mozzarella pearls and toss again. Serve immediately.

1 medium onion, chopped fine
1 clove garlic, minced
low-fat parmesan cheese

1 or 2 red, ripe tomatoes, about 3/4 pound
6 ounces mozzarella cheese
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons red-wine vinegar
3 tablespoons olive oil
Fresh basil sprigs or leaves for garnish

Steps:

  • Trim off ends of zucchini. Cut it on bias into 12 slices of about the same size.
  • Bring enough water to boil to cover zucchini slices when added. Add slices and cook 1 1/2 minutes; do not overcook. Drain.
  • Cut away and discard core of tomato. Cut tomato into 1/4-inch slices.
  • Cut mozzarella into 12 slices.
  • Arrange zucchini, tomato and mozzarella slices, slightly overlapping, in a circle on a serving dish. Sprinkle with salt and pepper.
  • Combine vinegar and oil in a bowl and stir. Sprinkle the sauce evenly over the salad. Garnish with basil sprigs or leaves and serve.

1.5 lbs boneless & skinless chicken breasts (cut into 1" cubes)
2 lbs zucchini (cut in to 1" cubes)
9 oz fresh mozzarella cheese (thinly sliced)
7 garlic cloves (minced)
1.5 lb tomatoes (sliced)
6 oz can tomato paste (low sodium)
2 tbsp oil (divided)
1 tbsp balsamic vinegar
1 tsp dried oregano
1/2 tsp salt (divided)
Ground black pepper (to taste)
Handful fresh basil (thinly sliced)

Steps:

  • Preheat large deep skillet on medium heat and swirl 1 tbsp oil to coat. Add chicken, 1/4 tsp salt and pepper. Cook for 5 minutes, stirring once.
  • Move chicken to the side of the skillet and keep empty part over the burner. Add 1 tbsp oil, garlic and saute for 30 seconds, stirring frequently.
  • Add tomatoes, tomato paste, balsamic vinegar, oregano, 1/4 tsp salt and a handful of basil. Cook this "tomato pile" for about 5 minutes, stirring occasionally.
  • Add zucchini, stir everything together, cover and cook on low-medium for 12 minutes.
  • Lay mozzarella slices on top, reduce heat to low, cover and simmer for 5 minutes.
  • Sprinkle more basil and ground black pepper on top. Serve hot, on its own or with spaghetti, Instant Pot brown rice or Instant Pot quinoa.

1/4 c. shredded mozzarella or 5 oz. fresh mozzarella (torn into 1-inch pieces)

Steps:

  • Preheat oven to 400 F. Brush a rimmed baking sheet with olive oil, or use a non-stick baking sheet like a Silpat (no oil required).
  • Halve zucchini lengthwise and scrape out seeds. Place, cut side up, on sheet and season with salt and pepper.
  • In a small bowl combine tomatoes, oregano, and vinegar; season with salt and pepper. Top zucchini with tomato mixture.
  • Bake until zucchini is tender, about 20 minutes. Heat broiler, with rack in top position. Top zucchini with mozzarella. Broil until cheese is brown and bubbling, 1 to 2 minutes; serve immediately!

1 (10 ounce) can refrigerated pizza dough
1 cup diagonally sliced zucchini
4 plum tomatoes, seeded and cut into 1/4-inch-thick slices (about 1/2 pound)
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
4 ounces fresh mozzarella cheese, sliced
1 teaspoon extra virgin olive oil
1/2 cup torn fresh basil leaf

Steps:

  • Line a baking sheet with parchment paper; secure with masking tape. Sprinkle the paper with cornmeal. Unroll dough onto paper; let stand 5 minutes. Pat dough into a 12-inch square. Arrange zucchini and tomato over the dough, leaving a 1-inch border. Sprinkle evenly with salt and pepper. Fold edges of dough over zucchini and tomato (dough won't completely cover the zucchini and tomato).
