- For the beef: Heat the olive oil in a cast-iron skillet over medium-high heat. Sprinkle the sirloin cubes with 1 teaspoon salt and 1/2 teaspoon pepper. In batches if necessary, sear the meat on all sides and cook until medium rare, 2 to 3 minutes. Drain on paper towels and set aside to cool.
- Meanwhile, make the dipping sauce: In a bowl, whisk together the mayonnaise, lime zest and juice, vinegar, sesame oil, sugar, red pepper flakes and some salt and pepper.
- Thread the beef onto toothpicks (2 pieces per). Garnish with cilantro and serve with the dipping sauce.

- Whisk brown sugar, soy sauce, pineapple juice, water, vegetable oil, and garlic together in a large bowl; drop beef slices into the mixture and stir to coat. Cover bowl with plastic wrap.
- Marinate beef in refrigerator for 24 hours.
- Remove beef from the marinade, shaking to remove any excess liquid. Discard marinade.
- Thread beef slices in a zig-zag onto the skewers.
- Preheat grill for medium heat and lightly oil the grate.

- Whisk soy sauce, brown sugar, sesame oil, green onions, lemon juice, sesame seeds, ginger, and garlic together in a bowl until marinade is smooth.
- Thinly slice steak with the grain into 1/4-inch thick pieces. Thread steak slices onto skewers and place in a flat plastic or glass container. Pour marinade over skewers. Cover container with plastic wrap, and refrigerate, 1 1/2 to 2 hours. Flip skewers and continue marinating in the refrigerator, 1 1/2 to 2 hours more.
- Preheat an outdoor grill for high heat, and lightly oil the grate. Remove skewers from marinade, discarding marinade.
- Cook steak skewers on the preheated grill until cooked through, 2 to 3 minutes per side.

- In a small bowl combine all of the marinade ingredients.
- Put the steak in a plasic bag.
- Pour in the marinade.
- Close the bag and place in a shallow baking pan.
- Marinate in the refrigerator for at least 4 hours or overnight.
- Preheat the broiler.
- Remove steak from bag and discard marinade.
- Place on broiling pan.
- Broil for 5-7 minutes on each side.

Just plain yummy. These are fit for company. Served with a creamy mustard sauce. Adapted from TOH. The instructions are based on my cut of meat and may vary depending on how many slices of meat you get. The recipe said 16 slices but I only got 8. I doubled the marinade when I made it but not in the recipe.

- Cut beef widthwise into 8 slices, 1/4 inches thick. Then cut in half, longwise (You should have long strips about 2 inches wide.).
- In a medium bowl, combine the soy sauce, sugar and ginger.
- Add the beef making sure the meat is covered.
- Refrigerate overnight or at least 4 hours.
- In a saucepan, bring water and carrots to a boil. Reduce heat, cover and simmer for 3 minutes.
- Add onion and peppers, return water to boil then reduce heat and simmer for 3-5 minutes or until vegetables are crisp-tender.
- Drain and immediately place vegetables in ice water.
- Drain and pat dry.
- Drain and discard marinade from beef.
- Arrange 2 onion strips, one carrot strip and one pepper strip down the center of each beef slice.
- Roll up.
- For each kabob, use metal or soaked wooden skewers and thread two bundles on two parallel skewers.
- Coat grill rack with nonstick cooking spray before starting the grill.
- Grill kabobs, covered, over medium heat for 2-3 minutes on each side or until beef reaches desired doneness, turning once.
- In a bowl, combine the sour cream, mustard and horseradish.
- Serve with kabobs.

- In a small bowl, mix together hoisin sauce, sherry, soy sauce, barbeque sauce, green onions, garlic, and ginger.
- Cut flank steak across grain on a diagonal into 1/4 inch slices. Place slices in a 1 gallon resealable plastic bag. Pour hoisin sauce mixture over slices, and mix well. Refrigerate 2 hours, or overnight.
- Preheat an outdoor grill for high heat. Discard marinade, and thread steak on skewers.
- Oil the grill grate. Grill skewers 3 minutes per side, or to desired doneness.

KASBAH BITES
If you wish make these larger for your main dinner meat dish or make them even smaller as a one bite appetizer - lovely spicy flavor. Be sure that you cook your brown rice long enough - probably 30 minutes. If folding the strips of phyllo is confusing to you look in any Greek cook book for "Tiropetes" Cheese Triangles and follow the folding instructions.

- Brown the ground chicken/turkey on a lightly oiled skillet, remove when browned.
- Brown the onions, turn heat down to medium.
- Add cooked rice, mix.
- Return the chicken to the pan& add the peas, then the almonds.
- Mix the honey& balsamic vinegar, stir well, add spices, stir again.
- Pour this over the chicken mixture, stir well cook 3 minutes longer and remove from heat.
- Melt butter in a small saucepan.
- Remove 3 sheets of phyllo pastry and lay them flat with the narrow end toward you (cover the remaining Phyllo with a damp towel).
- Flip up 2 sheets of Phyllo and lightly paint the bottom layer with butter, flip the next sheet down and paint it with butter, then the remaining sheet and again paine it with butter.
- Cut the 3 layer sheet into 6 long strips (I use a cleaned edge of the phyllo box to keep the cuts straight).
- Put a generous tbsp of the chicken mixture on a corner of a strip nearest to you.
- Fold the corner with the filling on it up and to the right to form a small triangle, now continue to work your way up the strip by flipping and folding until you reach the top.
- Paint the outside lightly with butter and place on a cookie sheet.
- Continue until all the mixture and Phyllo are used.
- Bake at 350F for apprx 15-20 minutes turning them once during the baking.
- Serve Hot.
- Your other option is to freeze them unbaked.
- Place a single layer of"Bites" on a cookie sheet and freeze them, remove from cookie sheet and place them in single layers with plastic wrap between layers.
- Bake from frozen state 350F oven for 20 minutes, turning them once or until they are golden on both sides.

Cubes of sirloin steak are marinated in a flavorful oriental sauce and broiled or grilled until done. You can skewer the meat for a meal, or cook seperately and serve with toothpicks for an appetizer. Prep time includes 2 hours of marinade time, you may want to do longer. - In a large resealable plastic bag, combine all ingredients (EXCEPT steak and green onions) until mixed well.
- Add beef and green onions, toss to coat.
- Seal and refrigerate at least 2 hours, but overnight is better.
- Drain beef, reserving marinade. Boil reserved marinade in a small pan for 5 minutes.
- If serving as a meal, skewer beef onto kebob skewers leaing about 1 inch between each piece (if using bamboo skewers, remember to soak in water for 20 minutes before grilling).
- TO BROIL: Broil beef cubes in a broiler pan, turning occasionally and brushing with reserved marinade, for 6-8 minutes ot until meat is browned on all sides.
- TO GRILL: Grill over medium high heat for about 6-8 minutes total, turning occasionally and brushing with reserved marinade.
- Serve with cocktail picks, if using as an appetizer.

- Slice the steak across the grain into strips 1/2" wide. Cut each strip into bite-size pieces, approximately 1/2" - 3/4" in size. Place the chunks of beef into a medium size bowl. Stir together the soy sauce, honey, and chili paste. Pour over the beef and stir to coat well. Let the meat marinate for 20-30 minutes.
- Heat a heavy bottom stainless steel pan or wok over medium high heat. When the pan is hot, add 1 tablespoon of oil and swirl to coat. Add 1/3 of the meat to the pan and spread out in a single layer. Let it cook for about a minute, until the meat has browned. Flip the meat or toss with a spatula for an additional minute or two as it finishes cooking. Remove the meat from the pan to a plate.
- Add half of the remaining meat to the hot pan and repeat the above steps. Add the cooked meat to the waiting plate. If necessary, add the remaining tablespoon of oil to the pan before adding the remaining meat. Repeat the steps. Enjoy!
