ANGEL HAIR PASTA WITH SUN-DRIED TOMATOES & GOAT CHEESE
Absolutely delicious... and addictive. I've been known to eat all of mine, plus the portions set aside as leftovers. Thank God for gyms! **NOTE** Sun-dried tomato oil is the oil that comes in the jar of sun-dried tomatoes. Chicken broth can be substituted for the white wine, but in my opinion the wine works better with the other ingredients.

Steps:
- Bring lightly salted water to a boil. Add in pasta, cooking 5-6 minutes (until done). Reserve 1 cup of pasta water. Drain pasta.
- In saucepan, saute onion in sun-dried tomato oil until fragrant.
- Add in garlic, salt (a pinch), and tomato paste. Cook over medium-high heat. When onions are tender, add wine to cover.
- Simmer until wine has mostly cooked away.
- Add in tomatoes, and cook until warmed through.
- Toss pasta with sauce, adding in reserved pasta water as needed.
- Top with goat cheese and parsley (as desired).

PASTA WITH SUN-DRIED TOMATOES, OLIVE, AND GOAT CHEESE

- In a small skillet cook the garlic, the onion, and salt and pepper to taste in the oil over moderately low heat, stirring, until the onion is soft, add the tomatoes and the broth, and simmer the mixture until the liquid is reduced by about one third. Stir in the olives, the parsley, and salt and pepper to taste and keep the mixture warm. In a kettle of boiling salted water cook the pasta until it is al dente and drain it well, reserving 1/3 cup of the cooking water. In a serving bowl whisk 3 ounces of the goat cheese with the reserved cooking water until the cheese is melted and the mixture the smooth, add the pasta and the tomato mixture, and toss the mixture well. Sprinkle the pasta with the additional goat cheese.

- Heat a small skillet over medium heat and scatter the pumpkin seeds in a single layer. Toast, stirring from time to time. They should be ready in about 3 minutes, but this will depend on your stove so keep an eye on them to make sure they don't burn. Set aside to cool.
- Top with sun-dried tomatoes, goat cheese, basil and roasted pumpkin seeds. Drizzle with olive oil and lemon juice. Season with pepper (I didn't add salt but try and taste to see if it's salted enough for you) and serve.
