LIME COCONUT ZUCCHINI BREAD RECIPE

This homemade Lime Coconut Zucchini Bread recipe is based off of my mom's zucchini bread recipe. It's given a tropical twist with the flavors of toasted coconut and fresh lime, making it one of our favorite zucchini quick bread of spring and summer!

3/4 cup vegetable oil
1 cup plain greek yogurt (or vanilla)
1 Tbsp lime juice
3 eggs
1 1/2 cups granulated sugar
3 cups all purpose flour
1 tsp baking soda
1/4 tsp baking powder
2 tsp lime zest
1 tsp salt
2 cups shredded zucchini
1 cup coconut, shredded and sweetened
1 tsp vanilla extract
1 cup powdered sugar
1-2 Tbsp lime juice
1/2 cup toasted coconut
lime zest (optional)

Steps:

  • Preheat oven to 350 degrees. Grease two 8 1/2" x 4 1/2" bread pans (loaf pans) with baking spray. Set aside.
  • Mix oil, Greek yogurt, lime juice, and granulated sugar together (with a rubber spatula, with a standing mixer, or with a hand mixer). Add in eggs, one at a time, mixing after each addition.
  • In a separate bowl, whisk all purpose flour, baking soda, baking powder, salt, and lime zest together.
  • Add dry ingredients into the wet ingredients and mix until just combined.
  • Stir in shredded zucchini, coconut, and vanilla extract.
  • Divide the batter evenly between the two bread pans.
  • Bake for 50-55 minutes, or until a cake tester comes out clean.
  • Allow to cool about 10-15 minutes before removing from the pan and placing on a wire cooling rack.
  • Spread 1/2 cup coconut on a foil-lined baking sheet and toast in a 300 degree oven for 7-8 minutes, stirring the coconut once or twice. Once golden brown, remove from the oven and allow to cool.
  • For the glaze, whisk powdered sugar and lime juice until combined. If the glaze is too thick, stir in the remaining lime juice.
  • Drizzle glaze over the breads. Sprinkle toasted coconut and extra lime zest, if desired, over the bread before the glaze sets.
  • Enjoy!
  • Leftovers can be stored at room temperature for a couple of days, or in the fridge for up to a week.

One 8-ounce zucchini (about 1 large), shredded (about 1 1/2 cups)

1/2 cup packed light brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt

Steps:

  • Adjust rack to the middle position and preheat the oven to 325 degrees F. Coat an 8 1/2-by-4 1/2-inch loaf pan with cooking spray.
  • Whisk together the butter, oil, vanilla and eggs in a medium bowl. Fold in the zucchini.
  • Whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda and salt in a large bowl. Gently stir the zucchini mixture into the flour mixture until just combined. Spoon the batter into the prepared pan, smoothing out the top with the back of a spoon.
  • Bake, rotating the pan about halfway through, until puffed and golden brown on top and a toothpick inserted into the center comes out clean, 1 hour to 1 hour 20 minutes.
  • Let cool completely in the pan on a wire rack.

1 ½ cups shredded zucchini
¾ cup white sugar
1 egg
½ cup vegetable oil
1 ½ cups all-purpose flour
½ teaspoon salt

2 teaspoons lemon zest

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4 inch loaf pan.
  • In a bowl, beat together the zucchini, sugar, egg, and oil. In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest. Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan.

We receive several, sometimes many zucchini every week during the summer, and this is one of the more delicious uses. My little ones love this -- I call it Lime Bread to disguise the main ingredient. You can make a glaze from lime juice and confectioners' sugar, but the bread is so moist it doesn't need it.

3/4 cup vegetable oil
1 1/2 cups sugar
3 eggs
1 teaspoon vanilla extract
3 cups shredded raw zucchini or 3 cups yellow squash
1 lime, juice and zest of
2 cups unbleached flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt

Steps:

  • Beat the oil and sugar until creamy. Add eggs and vanilla and beat vigorously. Stir in zucchini and lime.
  • Combine flour, baking soda, baking powder, cinnamon, cloves and salt in a bowl and mix well. Add to zucchini mixture and mix well.
  • Spoon the batter into a well-greased 9x5-inch loaf pan or three greased mini loaf pans. Bake at 350 degrees for 40 minutes (small loaves) to 1 hour 15 minutes (large loaves). Cool in pan 20 minutes, then remove and cool completely.
  • Note: For a glaze, whisk the juice and a little zest of a lime with 1 cup confectioners' sugar. Poke holes in hot loaf and pour the glaze over it. Let cool 30 minutes before removing from pan.
  • Loaves, glazed or not, freeze well.

zest and juice of 2-3 lime
1 teaspoon cardamom
1/4 cup sweetened flaked coconut (optional)
1 teaspoon ginger (fresh or powdered)
4 cups coarsely shredded zucchini
3 cups flour
2 cups sugar
1 1/4 cups oil
4 eggs
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 325. Spray or grease 2 loaf pans very well.
  • Place nuts, lime zest, cardamom, coconut, ginger and mace in food processor. Pulse until mixture resembles very coarse meal. Set aside.
  • Place remaining ingredients in large mixing bowl/stand mixer in order listed. Add nut/lime/coconut mixture.
  • Beat on low 1 minute.
  • Beat on medium 1 minute.
  • Pour into 2 loaf pans and bake at 325 for 1 hour; check for doneness. Generally done by 1 hour 15 minutes, depending on oven.
  • Remove and let cool in pans 5 minutes; then turn out onto cooling rack.
  • Mix a glaze: juice of 1 lime with enough confectioner's sugar to make it drizzly. Drizzle over cooled loaves.

1/2 teaspoon freshly grated nutmeg
1 cup dried cherries
3/4 cup chopped toasted almonds

1 cup shredded zucchini, excess moisture squeezed out

Steps:

  • For the quick bread: Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.
  • Combine the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a medium bowl. Add the dried cherries and almonds and toss together. Set aside.
  • Whisk together the melted butter, yogurt, vanilla extract, eggs and grated zest if using in a small bowl. Stir in the shredded zucchini. Fold this mixture into the flour mixture until just incorporated.

A quintessential quick bread, zucchini bread blurs the line between breakfast and cake, making it acceptable for both. This version is on the sweeter side, the vegetal flavors mellowed by brown sugar, cinnamon and a bit of browned butter. While not always necessary, squeezing excess water from the zucchini will prevent the batter from being too wet while keeping the end result moist. Since this recipe makes two loaves (if you're going to grate all that zucchini, might as well make it count), know that one will freeze excellently for at least a month. The recipe can also be halved with great success.

Steps:

  • Divide batter among prepared pans, smoothing the top. Sprinkle both with demerara sugar, if using, and place in oven. Bake, rotating once, until bread is golden brown on top, pulls away from the sides and springs back lightly when pressed at the top, 50 to 60 minutes.
  • Let cool completely on a wire rack before removing from the loaf pan.
