1 medium head cauliflower, trimmed and broken into florets
1 cup vegetable or chicken broth
1 tablespoon olive oil
1 clove garlic, smashed and peeled
⅓ cup sour cream, at room temperature
¼ cup grated Parmesan cheese, at room temperature
1 tablespoon chopped fresh chives
Salt and pepper, to taste

Steps:

  • Place cauliflower florets and broth in a large pot. Cover and bring to a boil over medium-high heat. Once the broth boils, reduce the heat to medium and cook until the cauliflower is very tender (about 10-15 minutes). Reserve ¼ cup of the broth from the pot; drain the cauliflower.
  • Transfer the cauliflower to a food processor.
  • Meanwhile, heat olive oil in a small skillet over medium heat. Add the garlic; cook and stir until garlic is softened, about 2 minutes. Remove from heat and discard garlic.
  • Process the cauliflower, adding the reserved broth, the sour cream, and the garlic-infused olive oil a little bit at a time until the mixture is smooth. Fold in the Parmesan cheese and chives; season with salt and pepper to taste.

1/4 cup 2% milk
1/4 cup sour cream
1/4 cup grated Parmesan cheese
1/4 teaspoon salt

Steps:

  • Place 1 in. of water in a large saucepan; add cauliflower and garlic. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until crisp-tender. Drain and cool slightly. Transfer to a blender; add the remaining ingredients. Cover and process until smooth., Spoon into a 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25-30 minutes or until heated through and top is lightly browned.

1 Tablespoon thyme, chopped
2 teaspoons kosher salt
2 Tablespoons Parmesan cheese, grated
¾ cup Asiago cheese, grated
3 Tablespoons butter, unsalted, softened
Black pepper, ground, to taste
1 pound red skinned potatoes, peeled, halved
1 pound cauliflower florets
2 Tablespoons roasted garlic, puree
½ cup Holland House White Cooking Wine
½ cup chicken stock or vegetable stock
¼ cup heavy cream

Steps:

  • In a 6-quart pot, combine potatoes, cauliflower, roasted garlic, Holland House White Cooking Wine, stock, heavy cream, thyme, and salt and simmer for 15 to 20 minutes or until potatoes are just cooked through. Remove from heat. With a potato ricer or food mill, mash potato and cauliflower mixture until smooth. While still hot, mix in Parmesan cheese, Asiago cheese, and butter. Season to taste with black pepper.

When I first made this recipe, I couldn't wait to have my friends who aren't on a low carb diet try it - because you literally can't taste that it's not potatoes! And I was right! They didn't believe me that it was cauliflower and kept on trying to steal more bites of it at lunch. It's SO rich and creamy, and with a bite from the garlic and fresh basil, I guarantee you're going to be making this every night (I do!) You don't even need salt or pepper.

1 small cauliflower
5 -8 basil leaves (fresh)
1 -2 garlic clove
1/4 cup parmesan cheese (shredded)
2 tablespoons neufchatel cheese
1 -2 sun-dried tomato

Steps:

  • Clean and cut up cauliflower and add into a pot of boiling, salted water.
  • Boil for about 15 minutes but don't let the cauliflower get too soggy. It should still be firm when you take it out.
  • Drain very well.
  • In a food processor add in the basil, garlic cloves (2 if you like a nice bite!), parmesan and course until well blended.
  • Then add in the neufchatel cheese and the cooked cauliflower.
  • Pulse until smooth and serve!
  • (Optional: I like to run a knife through a few sundried tomatoes and add for taste and color - makes a very Italian low carb meal!).

3 cloves garlic
1/3 cup low-fat milk
3 tablespoons light butter
5 tablespoons grated Parmesan cheese
1 teaspoon salt
1/4 teaspoon pepper
1 to 2 teaspoons chopped fresh chives

Steps:

  • In large saucepan or skillet, place steamer basket in 1/2 inch water (water should not touch bottom of basket). Place cauliflower and garlic in basket. Cover tightly; heat to boiling. Reduce heat to low; steam 8 to 12 minutes or until tender.
  • Transfer cauliflower and garlic to large bowl; add milk, 2 tablespoons of the butter, 3 tablespoons of the cheese, the salt and pepper. Blend with potato masher or electric mixer until creamy, adding more milk if necessary. Sprinkle with chives.
  • Melt remaining 1 tablespoon butter; drizzle over cauliflower mixture. Sprinkle with remaining 2 tablespoons cheese. Serve immediately.

Steps:

  • Place 1 in. of water and cauliflower in a large saucepan; bring to a boil over high heat. Cook, covered, until cauliflower is soft, 10-12 minutes. Drain., Mash cauliflower to desired consistency. 1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
¼ cup grated Parmesan cheese

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  • Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
