- Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In a shallow bowl, place 1/2 cup sugar; set aside.
- With an electric mixer, beat butter and remaining cup of sugar until combined. Beat in egg and then molasses until combined. Reduce speed to low; gradually mix in dry ingredients, just until a dough forms.
- Pinch off and roll dough into balls, each equal to 1 tablespoon. Roll balls in reserved sugar to coat.
- Arrange balls on baking sheets, about 3 inches apart. Bake, one sheet at a time, until edges of cookies are just firm, 10 to 15 minutes (cookies can be baked two sheets at a time, but they will not crackle uniformly). Cool 1 minute on baking sheets; transfer to racks to cool completely.

- In a large bowl, cream together the butter, brown sugar and egg until well blended. Stir in the molasses. Combine the flour, baking soda, cinnamon and ginger; stir into the molasses mixture. Cover the dough and chill for at least 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the prepared cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- Cream together shortening and brown sugar.
- Stir in egg and molasses and mix well.
- Fold in dry ingredients and stir.
- Cover and chill till firm (1-2 hours).
- Preheat oven to 350°.
- Roll dough into small balls and roll in white sugar.
- Place on lightly greased cookie sheet.
- Bake at 350° for 9-10 minutes.
- Leave on sheet one minute until set.
- I changed the amount of salt in here. My original recipe calls for 1 tsp of salt but that may be too much for some. A few people have made it as is (the majority) with no complaints on salt, however a few commented it was too much. I think 1/2 tsp can be used with no alterations to the recipe. I will leave it up to you either way you still WIN !

Steps:
- Whisk together flour, baking soda, spices: Preheat oven to 375°F. Vigorously whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, allspice in a bowl and set aside.
- Prepare butter, sugar, and wet ingredients: Use an electric mixer and beat the butter for 2 minutes. Add the brown sugar, and 1/2 cup granulated sugar and beat until light and fluffy, about 3 minutes with mixer set at medium speed. Add egg, vanilla extract, and molasses. - Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
- Whisk the flour, ginger, cinnamon, baking soda, cloves and salt together in a medium bowl. Set aside.

- 1. Heat oven to 375° Mix on low shortening and butter together. Add in brown sugar and blend well. Add in the egg. Beat on low until blended.
- 2. Add mollasses, orange zest snd vinegar. Mix together until incorporated. Sift flour, spices, baking soda,baking powder, and salt in to batter. Mix on low until it holds together well. Mix in the raisins.
- 3. Chill dough at least 30 minutes. Roll dough in to 1 1/2 inch balls. Place on parchment lined cookie sheet about 2 inches apart. Press down on each ball with the palm of your hand flattening the ball. Bake ar 375 on center rack of oven about 6-8 minutes. They will be soft and springy. Cool on rack. Do Not overbake. If you overbake they will be dry.
- 4. Make white chocolate icing: Place white chocolate chips into a Non stick sauce pan. Mix in the shortening. Melt over low heat stirring constantly. until melted. Mix in orange zest. Alternate icing: mix all ingredients together until smooth. Ice cookies. Let frosting dry.
- 5. Place a dollop of icing on center of each cookie. Spread over each cookie. You may also put icing into a Ziploc bag. Push in to the tip of bag corner. Snip off corner and drizzle icing over the cookie if preferred. Refrigerate until frosting sets. Remove from fridge. Serve!

- Preheat the oven to 375°F and line 2 baking sheets with parchment paper.
- Add the butter, brown and white sugars to a large mixing bowl. Use either a handheld mixer or a stand mixer. If you have a standing mixer then use the paddle attachment.
- Beat the butter and the sugars at medium-high speed until light and fluffy-about 3-minutes. Reduce the speed to medium-low and add the egg yolk and vanilla. Increase the speed to medium and beat until blended-about 20-30 seconds.
- Reduce speed to medium-low and add molasses. Beat until incorporated, about 20 seconds.
- Set a large mesh strainer over the mixing bowl and add the flour, baking soda, spices and salt. Sift the mixture down into the batter and give it a stir with your spatula (stirring the flour in a bit will prevent it from flying out of the bowl when you start the mixer.)
- Place the mixer on the lowest setting and beat just until the flour is completely blended.
- Use a cookie scoop or a tablespoon and shape the dough in your hands forming 1-1/2 inch balls.
- Add the course sugar to a shallow dish. Roll the balls in the sugar and place them on the parchment-lined baking sheet. Leave space between each cookie.
- Bake the cookies in the preheated oven until they are browned, puffed up and the edges have begun to set while the centers are soft-about 11 minutes.
- The cookies will have those beautiful cracks and appear to be undercooked. Do not over bake, they will continue baking from residual heat once removed from the oven.
- Remove the baking sheet from the oven and leave the cookies on the baking sheet for 5 minutes, then transfer the cookies to a wire rack to finish cooling.

I've tried a lot of molasses cookies since I was a girl on the farm, and as far as I'm concerned, these are simply the best. To keep them soft and chewy, store in a tightly covered container along with a slice of raw apple. The biggest and softest molasses cookies I have ever had. I have tried many recipies and these are the best. The secret is the 1/4 cup of Black Strap molasses, added to the regular molasses. Once I found these, about 20 years ago, I don't make any other kind. My family and friends love them. If you love soft molasses cookies, you'll love these. And yes, the recipe is correct--no eggs, yet they are still the softest.

- Mix the milk and vinegar and set aside for a minute.
- In a large bowl mix well the sugar, both molasses and shortening (if you don't have the Black Strap you can use the regular but the taste is much better with the black strap).
- Add the milk and vinegar mixture.

Another great Cook's Illustrated cookie that is truly soft and chewy. Measure the molasses in a liquid measuring cup. If you find that the dough sticks to your palms as you shape the balls, moisten your hands occasionally in a bowl filled with cold water and shake off the excess. Bake the cookies one sheet at a time. If baked two sheets at a time, the cookies started on the bottom rack won't develop the attractive cracks. The cookies should look slightly raw and under baked when removed from the oven. If you plan to glaze the cookies save the parchment paper used to bake them.

- Stir in egg and salt.
- Add molasses and buttermilk, stir.
- Sift together flours, baking soda, and spices. I strongly recommend sifting because chestnut flour can be a little lumpy. Note: the ratios of the four flours I used can be adjusted to your taste. Brown rice and sorghum flours are whole-grainy and do make the cookies a little less soft, while chestnut flour has a strong taste of its own. Play with the ratios to change the texture.
- Add about 3 cups of the flour mixture to the wet ingredients and mix in (you can use an electric mixer) until smooth.
- Add the remaining flour, the dough should be stiff enough that you'll probably have to stir this in by hand.

- Preheat the oven to 375°. Line 7 large baking sheets with parchment paper. In a large bowl, whisk the flour with the baking soda, ginger, cinnamon and salt and pepper.
- In a large bowl, using a handheld electric mixer, beat the butter until creamy. Add the molasses and granulated sugar and beat until pale, about 3 minutes. Add the egg. At low speed, beat in the flour mixture. Chill the dough in the freezer just until firm.
- Scoop the dough into 2-tablespoon-size mounds and roll into balls, then roll in the turbinado sugar. Set the molasses cookies 2 inches apart on the prepared baking sheets. Bake 1 sheet in the upper third of the oven and 1 sheet in the lower third for 15 minutes, or until the tops of the cookies are cracked and the centers are just set; shift the pans from top to bottom and front to back halfway through. Transfer the cookies to wire racks to cool. Repeat with the remaining cookies.

- Slowly add the dry ingredients to the wet on low speed. Do not overmix. Cover mixed dough with foil and chill for 2 hours or up to 3-4 days. I chilled mine overnight.
- Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper or a silicone mat. Shape dough into 1-inch balls and roll in granulated sugar. Place balls 2 inches apart. Bake for about 10-12 minutes or until the edges are just turning brown – cookies will be puffy and still appear soft in the middle. Remove from the oven and, if using any variety of flavor chip, immediately press 5-7 chips into the center of each cookie.
- Allow to cool on the baking sheet for two minutes and transfer to a wire rack to cool completely. Store in an airtight container at room temperature for up to 1 week.
