BASIC MASHED POTATOES

4 large russet potatoes
2 tablespoons unsalted butter
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Prick the potatoes all over with a fork and roast them in the oven until tender, about 1 hour.
  • Being careful of the hot potatoes, split them and scoop out the flesh into a bowl. Add the butter and season with salt and a few twists of black pepper. Mash until the butter is melted and the potatoes are smooth. Keep warm until ready to serve.

ROASTED NEW POTATOES WITH GARLIC



Roasted New Potatoes with Garlic image

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

HERBED NEW POTATOES



Herbed New Potatoes image

4 tablespoons (1/2 stick) unsalted butter
2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

12-16 small-medium new potatoes , unpeeled
2 tbsp olive oil
1 tsp paprika

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Boil the potatoes for 10 mins, then drain well. Arrange on a baking sheet, then crush each one lightly with a potato masher. Drizzle with olive oil and sprinkle with paprika, sea salt and freshly ground black pepper. Bake for 20 mins until crispy.

50g unsalted butter
4 tbsp olive oil
3 large Spanish onions , sliced
2 garlic cloves , sliced
1 tbsp thyme leaves
1kg large new potato , halved

Steps:

  • Heat the butter in a large pan. When foaming, add 2 tbsp olive oil and the onions. Cook over a medium-low heat until softened and golden, about 30 mins. When the onions have softened, stir in the garlic and thyme. Season and set aside.
  • Heat oven to 200C/180C fan/gas 6. Bring a large pan of salted water to the boil, add the potatoes and boil for 5 mins before draining well.
  • Mix the drained potatoes with the remaining oil and some seasoning in a large roasting tin. Roast for 30 mins, turning halfway, until golden. Stir in the onion mixture and roast for 10 mins more until hot.

8 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
2 green onions, chopped
1 pkg. (30 oz.) ORE-IDA Shredded Hash Brown Potatoes
1 pkg. (8 oz.) KRAFT Shredded Swiss Cheese, divided
4 eggs
1 cup half-and-half
1/4 tsp. ground red pepper (cayenne)
1/8 tsp. ground nutmeg

Steps:

  • Heat oven to 350°F.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add onions to reserved drippings in skillet. Cook and stir 1 min. Remove from heat. Add potatoes and bacon; mix well. Spoon half the potato mixture into 13x9-inch baking dish sprayed with cooking spray; sprinkle with half the cheese. Cover with remaining potato mixture.
  • Whisk eggs, half-and-half and seasonings until blended; pour over ingredients in baking dish.
  • Bake 30 min. Sprinkle with remaining cheese; bake 5 min. or until melted.
