1 cup sour cream
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil. Add zucchini and cook until tender but still firm, about 15 minutes. Drain, cool and scoop out seeds.
  • In a medium bowl combine cream cheese, sour cream, Parmesan cheese and garlic. Spoon mixture into zucchini halves and sprinkle with paprika.
  • Bake in preheated oven for 10 to 15 minutes, or until heated through.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  • Beat together eggs, sugar, and oil. Blend in the grated zucchini, and then the sour cream. Mix in the flour, baking powder, soda, and cinnamon. Stir in chocolate chips or raisins (see Cook's Note). Pour batter into prepared pans.
  • Bake in preheated oven until a tester inserted in the center of each loaf comes out clean, about 80 minutes. Cool on wire rack.

1 teaspoon olive oil
1 pound zucchini, sliced 1/4-inch thick, at an angle
Kosher salt and freshly ground black pepper
Pinch of Hungarian paprika
1/2 cup panko breadcrumbs (Japanese)
1/4 cup grated Parmesan cheese
8 sprigs fresh thyme, leaves stripped from the stem, lightly chopped
1 tablespoon olive oil

Steps:

  • Heat the oven to 350 degrees F.
  • Brush 1 teaspoon olive oil on the bottom of an 8 by 8-inch baking dish. Arrange the slices of zucchini in the dish with an overlapping pattern in rows or a spiral in a pie dish. Sprinkle with salt, pepper and paprika.
  • To make the topping: In a bowl, stir together the panko breadcrumbs, thyme, Parmesan cheese and season with a sprinkle of salt and a few grinds of pepper. Add 1 tablespoon olive oil and stir until all the breadcrumbs are soaked with the yellow tint of the oil. Sprinkle the topping evenly over the dish and bake until the top is golden brown, 30 to 35 minutes.

3 cups grated zucchini (about 2 smallish ones)
3/4 teaspoon salt, plus more for salting the zucchini
2 1/2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1 2/3 cups sugar
1/2 cup (1 stick) unsalted butter, softened
1/2 cup vegetable oil or light olive oil
2 large eggs, at room temperature
1 1/4 teaspoons vanilla extract
1/2 cup sour cream, at room temperature
Chocolate Glaze

Steps:

  • Put the grated zucchini in a colander placed over a large bowl. Salt it lightly, tossing gently to mix. Set aside for 30 minutes to drain.
  • Preheat the oven to 325°F (170°C). Butter a 9x9-inch cake pan.
  • Sift the flour, cocoa powder, baking soda, baking powder, and 3/4 teaspoon salt into a bowl.
  • Combine the sugar, butter, oil, eggs, and vanilla in another large bowl. Using an electric mixer (handheld is fine), beat the ingredients on medium-high speed for 2 minutes, until well blended. Add one-third of the dry mixture to the liquid and blend it in on low speed. Beat in half of the sour cream, followed by another third of the dry mixture, the rest of the sour cream, and the remaining dry mixture. The batter will start to get heavier late in the mixing, and you may want to do the last bit of mixing with a wooden spoon or rubber spatula.
  • Lift the zucchini out of the colander and give it a gentle squeeze, but don't squeeze out all the moisture. Add the zucchini to the batter and fold it in with a rubber spatula until evenly mixed. Scrape the batter into the pan and smooth with a spoon.
  • Bake the cake on the middle oven rack for 60 to 70 minutes, until a tester inserted into the center of the cake comes out clean. Transfer the cake to a cooling rack and cool thoroughly.
  • When the cake has cooled, prepare the glaze, rewarming it if it has firmed up. When it has thickened slightly but is still thin enough to pour easily, slowly pour it over the cake, tilting the cake to spread it around. Cool for at least 10 minutes before slicing and serving.

This is an extremely good and rich bread, absoutely yummy fresh from the oven but it is great chilled from the refrigerator or heated with melted butter. It can be frozen too. I make mini loaves to give as great gifts! Adapted from Mike Dolan who posted it on recipelinks and I changed it to make it my own. It would even be good with chocolate chips added! :) Makes 2 regular loaves or 4 mini loaves. Enjoy! To make the bread even healthier, try substituting 1/2 of the oil with applesauce.

3 cups flour, sifted (try 2 cups white flour, 1 cup whole wheat)
1 tablespoon toasted wheat germ (optional)
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
3 eggs
1 cup brown sugar
1 cup white sugar
1 cup oil (a neutral oil, I use corn or soy oil-or use 1/2 oil, 1/2 applesauce)
1 teaspoon pure vanilla extract
2 cups zucchini, shredded, squeezed to remove excess liquid
1 cup nuts (or raisins-good with both!)
1/2 cup light sour cream (or plain yogurt)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease and flour well 2 bread loaf pans. I like to use 4 mini loaf pans for gifts.
  • Sift together the flour(s), wheat germ if using, cinnamon, salt, baking soda and baking powder.
  • In a separate bowl combine the eggs, brown sugar, white sugar, and oil.
  • Add the dry ingredients slowly to the egg mixture.
  • When thoroughly mixed, add the sour cream and vanilla.
  • Finally, mix in the shredded zucchini, nuts and/or raisins.
  • Pour the mixture into the two loaf pans (or mini pans).
  • Bake at 350 degrees Fahrenheit for about 1 hour and 20 minutes.
  • If baking mini loaves, adjust time to about 50 to 60 minutes.
  • Use a toothpick placed in the center of the loaf to see if the loaves are done. The toothpick should be clean or just have a few crumbs on it.
  • Enjoy!

2 teaspoons finely chopped fresh oregano

Steps:

  • For the herb sour cream: In a medium bowl, whisk together the sour cream, chives and dill. Set aside.
  • For the zucchini cakes: Mix the zucchini, breadcrumbs, Parmesan, basil, garlic, oregano, 1 teaspoon salt and the pepper in a large bowl. In a separate medium bowl, whisk the eggs with the buttermilk, and then stir the egg mixture into the zucchini mixture.

1 cup cheddar cheese, shredded (4 oz)
2/3 cup sour cream
1 tablespoon butter, melted

3 tablespoons fine dry breadcrumbs
2 tablespoons parmesan cheese, grated

Steps:

  • Cook the zucchini in a small amount of boiling water in a large saucepan for 6 minutes or until tender; drain well. Place the zucchini in a 1 1/2 quart greased casserole; set aside.
  • Combine the cheddar cheese, sour cream, butter, and salt in a small saucepan; cook over medium-low heat until the cheese melts, stirring constantly. Pour the cheese sauce over the reserved zucchini.

  • In a medium saucepan add the butter and chopped onion and saute for a minute or two.

1 1/2 tsp salt (divided (1 tsp for sprinkling and 1/2 tsp for casserole))
2 cups cooked white rice*
1 cup sour cream ((divided into 2/3 and 1/3))
1/2 tsp baking powder
4 eggs (large)
1/2 tsp Mrs Dash seasoning (or your favorite salt-free seasoning)
8 oz Colby jack cheese (3 cups shredded (or use Mexican cheese))
1/2 cup chives (chopped, plus more for garnish)

Steps:

  • Grate zucchini on the large holes (or the grating attachment on a food processor). Transfer grated zucchini to a colander over the sink and stir in 1 tsp salt. Let stand 10 min, stirring a couple of times then squeeze out the excess moisture with your hands. Transfer drained zucchini to a large mixing bowl.
  • Mix 2/3 cup sour cream with 1/2 tsp baking powder and let stand while zucchini drains (8-10 min).
  • Into the mixing bowl with drained zucchini, stir in 4 eggs and sour cream mixture.

2 pounds yellow summer squash (sliced)
1 small onion (chopped, about 1/4 to 1/2 cup)
1 (10 3/4-ounce) can condensed cream of chicken soup (undiluted)
1 cup sour cream
1 cup stuffing crumbs (herb-seasoned, or croutons)
2 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F/180 C/Gas Mark 4. Butter a 1 1/2- to a 2-quart baking dish.
  • Add about an inch of water to a saucepan and heat over medium heat. Add the squash and onion to the pan and cook until tender. Drain off the water.​
  • In a bowl, combine the condensed soup and sour cream and blend well.
  • Add the well-drained sliced squash to the sour cream and soup mixture.
  • Spoon the squash mixture into the prepared baking dish.
  • Toss the stuffing crumbs with the melted butter and sprinkle over the top of the casserole.
  • Bake on the lowest rack of the preheated oven for 20 minutes.
  • Serve and enjoy.

2 tbs butter
1 c. shredded cheddar cheese
1/2 tsp seasoned salt
1/2 tsp pepper
1/2 c. crushed saltines

Steps:

  • Steam zucchini for 5 minutes. Preheat oven to 350 degrees. Combine sour cream and butter in a small saucepan and cook over medium low heat until butter melts, stirring constantly. Remove from heat. Stir in cheese, seasoned salt, and pepper. Layer half of zucchini, sour cream mixture and cracher csrumbs in a greased shallow baking dish, repeat layers. Bake for 20-25 minutes.
