Steps:
- Spread about 3 Tbsp. cream cheese over each tortilla; layer each with six spinach leaves and three slices ham. Sprinkle with olives and chilies. Roll up tightly and wrap in plastic. Refrigerate until firm. Unwrap and cut each roll-up into 12 slices.

ZIPPY CHEESE BALL
The addition of cayenne pepper to this chipped beef cheese ball gives it that extra zip, and the whipped cream cheese makes it a little softer and more spreadable. I served this over the holidays and no one could get enough! Serve with your favorite crackers.

- Beat whipped cream cheese and cream cheese together in a large bowl until completely blended. Add green onion tops, chipped beef, Worcestershire sauce, and cayenne pepper; mix well. Form cheese mixture into a ball, wrap in plastic wrap, and refrigerate until firm, at least 3 hours.

Deb tells us that this is better on the second day, but we'd eaten it all by the end of the first day! This is a terrific appetizer for any occasion and could easily be pepped up even more by adding your favorite hot sauce or jalapenos.... if you're so inclined. Happy snacking!

- 1. Have cream cheese at room temperature. Combine all ingredients and mix with mixer. Chill well before serving.
- 2. I usually use the whole jar of pimento. Mostly because I love pimento, but also because I never know what to do with the rest of the jar, lol. Or... you could double this and use the whole jar. I don't drain the pineapple.. works just fine either way. Just remember to chop the onion and bell pepper really small... tiny even.
- 3. Originally this was a cheese ball recipe. You were supposed to divide mixture in half and roll each portion in chopped pecans, forming 2 balls. The first time I made this, I made balls. Never again! If you don't eat it all, the pecans get rubbery in the fridge. Ever since then, I just make it as a spread and serve in a bowl with really good snack crackers. It is ever better the second day, so can be made a day ahead.
- 4. If you really feel the need to make this into balls, I would suggest draining the pineapple and putting mixture in the fridge for an hour or so before trying to roll it in chopped pecans. It makes 2 cheese balls.

It wouldn't be Christmas at our house without this zippy, well-seasoned cheese ball-my husband's absolute favorite. The family starts asking about it 2 weeks before the holidays! It's also a big hit at Super Bowl parties.

- In a bowl, beat cream cheese until fluffy. Add the Monterey Jack and Gouda; mix well. Stir in the olives, onion and mustard. Add 2 teaspoons chili powder and the garlic powder. Shape into a ball. Combine almonds and remaining chili powder; roll cheese ball in almond mixture. Wrap tightly in plastic wrap. Refrigerate for several hours or overnight. Serve with crackers.

- Mix pork, ham, eggs, milk, and cereal.
- Mix well.
- Shape into 1-1/2 inch balls.
- Put into greased 13x9 inch baking dish.
- In saucepan, combine sauce ingredients.
- Bring to a boil, reduce heat and simmer for 4 minutes.
- Pour over the ham balls.
- Bake, uncovered, at 350* for 1 hour until browned.
