Warm French toast topped with a cream cheese frosting. This is a reduced-fat version of what my sister serves for breakfast whenever they have company. It is incredible!

6 eggs
1 ½ cups skim milk
2 tablespoons white sugar
2 teaspoons ground cinnamon
1 (1 pound) loaf French bread, cut into 3/4 inch slices
¼ cup butter
1 (8 ounce) package fat-free cream cheese, softened
2 tablespoons white sugar
2 tablespoons fat-free sour cream
2 tablespoons frozen whipped topping, thawed

Steps:

  • In a medium bowl, whisk together the eggs, milk, 2 tablespoons of sugar, and cinnamon. Melt one tablespoon of butter in a large skillet over medium heat. Dip a few bread slices into the egg mixture just to coat. Place in the hot skillet, and cook until golden on each side, about 4 minutes per side. Repeat with remaining slices of bread. Melt 1 tablespoon of butter in the skillet before frying each batch of toast.
  • While the toast is cooking, mix cream cheese, 2 tablespoons of sugar, sour cream, and whipped topping using an electric mixer or blender until smooth, yet firm.
  • Place servings of warm French toast onto plates, and top with a generous dollop of the frosting.

Frosting:
6 Eggs
1 1/2 Cups Milk
2 TBS. White Sugar
2 tsp. Cinnamon
1 Loaf French Bread Cut into
3/4 " slices
1 8oz Cream Cheese
2 TBS Powdered Sugar
2 TBS Sour Cream
2 TBS Cool Whip
1 Tsp. Vanilla

Steps:

  • In a medium bowl whisk together eggs, milk, white sugar and cinnamon. Dip the sliced French bread into the egg mixture and fry in a medium heat skillet. Use enough oil to brown the bread nicely. While the toast is cooking mix the cream cheese, powdered sugar, sour cream, vanilla and cool whip. Use a hand mixer to blend until smooth, yet firm. Top the finished French toast with the cream cheese frosting on each slice. You may also top with fresh raspberries or strawberries. This recipe may be altered by using fat free milk, cream cheese, sour cream and cool whip.

1/4 teaspoon salt
8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
4 tablespoons butter

Steps:

  • In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
  • Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
  • Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

4 large eggs
4 tablespoons cinnamon (trust me)
4 tablespoons granulated sugar
3 tablespoons milk
1 teaspoon ginger
2 tablespoons vanilla extract
2 tablespoons butter
1 loaf French bread, white sandwich bread, wheat bread (whichever you prefer, personally I only use wheat bread)

Steps:

  • in a large bowl combine eggs, cinnamon, sugar, vanilla, ginger.
  • Beat with whisk till blended, slowly add milk as desired consistency (you don't want it to be to eggy or too runny).
  • Heat griddle or skillet to medium to medium high heat, melting the butter in pan.
  • Now this is tricky you don't want the bread to absorb too much liquid you just want to QUICKLY
  • Coat both sides of your bread with the mixture.
  • Make sure the cinnamon is nice and clumpy on top. You can also sprinkle on cinnamon while cooking.
  • Brown both sides and serve IMMEDIATELY with butter and hot syrup.
  • Enjoy.

2/3 cup heavy cream
1/3 cup triple sec
2 tablespoons sugar
1 orange, zest of, finely grated
2 teaspoons cinnamon
6 day old plain croissants, cut in half length-wise
6 tablespoons unsalted butter
confectioners' sugar

Steps:

  • Beat eggs and cream together, add triple sec, granulated sugar, orange zest and cinnamon and whisk together.
  • Pour into a shallow bowl or pie plate.
  • Dip each croissant half in mixture, turning once.
  • Melt a few tablespoons of butter in skillet over medium heat, add as many croissant halves that will fit and fry until golden brown, repeat with any remaining croissants.

1 loaf Texas toast thick bread
2 cups buttermilk pancake mix
1/4 cup sugar
2 teaspoons cinnamon
1 teaspoon salt
2 eggs
3 cups milk
oil, to fry (as needed)
powdered sugar (as needed)

Steps:

  • Prepare a pan on the stove with about a 1/4 inch layer of the oil on medium heat.
  • Mix all dry ingredients in a large bowl.
  • Add eggs and milk and mix well, consistency should be a very thin pancake or crepe batter.
  • Cut toast in half diagonally to form triangles.
  • Dip pieces of toast and allow to soak for about ten seconds. This is very important!
  • SLOWLY lower into oil to avoid splashing. When edges turn golden brown, turn over with a slotted spatula and finish cooking. Remove to a plate or platter. Add more oil as needed.
  • You can hold these in a warm oven to serve all at once or serve as they finish. Dust with the powdered sugar and serve with syrup and butter or your favorite fruit topping or compote.
