These cherry chocolate chip bars are made with wholesome ingredients and are vegan friendly, as well as refined sugar free and gluten free. Perfect and simple dessert to make and share all summer long!

2 cups finely ground almond flour (I used blanched almond flour, but almond meal should also work)
1/2 cup gluten-free all-purpose flour blend
2 tablespoons arrowroot starch/powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup pure maple syrup or coconut nectar
4-6 tablespoons water, just enough to make a soft dough
3 tablespoons melted butter or coconut oil (use refined coconut oil for less coconut flavor)
1 teaspoon vanilla extract
3/4-1 cup chocolate chips or chopped chocolate, use more or less to taste (I used dark chocolate)
1 cup pitted fresh or frozen cherries, roughly chopped

Steps:

  • Preheat oven to 350ºF. Line an 8×8″ pan with parchment paper or lightly grease and set aside. Blend together dry ingredients-flour, arrowroot, baking soda, and salt. Add maple syrup, water, coconut oil, and vanilla, mixing just until combined. Dough should be moist and malleable, like a soft cookie dough. If dough is dry, add an extra 1-2 tablespoons of water until it comes together. Stir in chocolate and pitted cherries.
  • Press dough evenly into pan and bake for 25-30 minutes, or just until edges begin to brown. Center will be a little soft, but will firm up as it cools.

1/2 teaspoon Salt
1/2 cup Butter
1 cup Sugar
2 Eggs
1 teaspoon Vanilla
1 teaspoon Cherry Bourbon
1 cup Sharffen Berger 62% Semisweet Chunks
1/2 cup Dried Cherries (chopped coarsly)
1/2 cup Boiling Water
1/2 cup Sharffen Berger Natural Cocoa Powder
1/2 cup Flour
1/8 teaspoon Salt
1/2 cup Butter
1 cup Sugar
2 Egg Yolks
1 teaspoon Vanilla
1/3 cup Cherry Bourbon
1/2 cup Dried Cherries (chopped coarsly)
2 Egg Whites
1 tablespoon Sugar

Steps:

  • In Small Bowl, combine flour, baking powder and salt. Set aside.
  • In mixer, cream butter and sugar together. Add eggs and beat for a minute or two until light and fluffy.
  • Add vanilla and cherry bourbon. Then slowly add the flour mixture. Beat for 1 minute or until well combined.
  • Stir in the chocolate chips by hand.
  • Spray a 9x13 inch glass pan with pam. Pour batter into the pan and spread evenly. Move onto the second layer.
  • In Small Bowl, combine flour, baking powder and salt. Set aside.
  • In a small bowl, combine the cocoa powder and boiling water. Mix together so that all the cocoa powder is absorbed. Set aside.
  • In mixer, cream butter and sugar together. Add egg yolks and beat for a minute or two until light and fluffy.
  • Add the cocoa/water mixture, vanilla and bourbon. Mix on low and scrape the bowl several times until it is combined. Add the flour and beat on medium for 1-2 minutes, scraping the sides several times to make sure it's well combined.
  • In a separate mixing bowl, with the whip attachment, beat the egg whites on high until frothy. Add the 1 Tablespoon of sugar and continue beating until stiff peaks form.
  • Fold the egg whites into the chocolate batter. Be sure not to mix, just fold.
  • Pour over the chocolate chip mixture and spread evenly.
  • Bake at 350 for about 30 minutes, or until batter is cooked. The top may be cracked, that's ok.
  • Remove from oven and cool. Cut up into squares and serve.

Steps:

  • Place cherries in a small bowl; add brandy. Cover and freeze for at least 3 hours., Place chocolate chips in a small heavy saucepan. Cook over low heat until chips begin to melt. Remove from the heat; stir. Return to the heat; cook just until melted. Immediately remove from the heat; stir until smooth., Pat cherries dry. Holding onto the stems, dip cherries into chocolate; allow excess to drip off. Place on a waxed paper-lined pan. Refrigerate for 10 minutes or until firm. Store in an airtight container in the refrigerator.

1 1/2 teaspoons vanilla

1 (21 ounce) can cherry pie filling
1 1/2 cups milk chocolate chips

Steps:

  • Preheat oven to 350°.
  • Grease a 10 x 15 pan.
  • Combine butter, eggs, sugars and extracts in a large bowl and beat at medium until well blended.
  • Combine flour, soda and cinnamon and mix into creamed mixture until just blended.
  • Stir in pie filling and chocolate chips.
  • Spread in pan.
  • Bake for 25 minutes or until lightly browned.
  • Cool completely in pan on wire rack.

2 ¼ cups all-purpose flour
1 cup granulated sugar
⅔ cup butter (softened)
1 cup milk
3 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon almond extract
5 large egg whites
1 cup mini semi-sweet chocolate chips
1 cup maraschino cherries (dried and quartered)
2 cups powdered sugar
1 cup butter (softened)
1 teaspoon vanilla extract
1 Tablespoon maraschino cherry juice
1 Tablespoon milk

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch baking pan.
  • With a hand mixer or stand mixer, beat all bar ingredients, besides cherries, chocolate chips, and egg whites. Start on low scraping sides as needed, turn to medium once ingredients are combined and beat for two minutes.
  • Add egg whites and beat again on medium for two minutes.
  • Stir in cherries and chocolate chips.
  • Pour into greased pan and bake for 40-45 minutes, until the toothpick comes out clean in the center. Allow to cool completely before frosting.
  • To make frosting, beat all ingredients together with an electric mixer until smooth and creamy.
  • Spread frosting onto cooled bars. Sprinkle with additional chocolate chips desired. Enjoy!

I am very proud of my banana bread recipe, which is why I adapted it into this amazing cherry-chocolate loaf. While cherries really aren't anything like bananas, this really did work out extremely well--this loaf is a delicious option for breakfast, brunch, or dessert.

1 teaspoon unsalted butter
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
½ cup unsalted butter, softened
1 cup white sugar
2 large eggs, at room temperature
¼ cup plain yogurt
¼ teaspoon vanilla extract
2 cups pitted cherries
½ cup dark chocolate chunks
½ cup chopped walnuts
¼ cup powdered sugar
3 teaspoons milk, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
  • Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
  • Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
  • Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
  • While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
  • Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.

You can put in up to a cup of chocolate chips, cherries or nuts; depending on your tastes. I generally use 1 cup of cherries and 3/4 cup of chocolate chips.

1 cup milk

1/2-1 cup cherries, pitted
1/2-1 cup chocolate chips
1/4 cup nuts (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Soften butter, and cream with tightly packed brown sugar.
  • Stir in milk, eggs, and almond extract.
  • In a seperate bowl, combine flour, baking powder, baking soda, and salt. Add to milk mixture and stir until all ingredients are moistened.
  • With a spoon, stir in chocolate, cherries, and nuts.
  • Add batter into a greased 9x5 baking pan. Bake for 50-60 minutes, or until toothpick comes out clean.
  • Let cool before removing from pan. You may serve it warm, cold, or re-heated.
  • Store in the refrigerator.
