2 cups rolled oats, uncooked
1 cup oat flour (can be made by pulverising rolled oats in a blender or food processor)
1 cup chopped prunes or 1 cup other dried fruit
1 cup apple juice or 1 cup orange juice (you could also use 1/4 cup molasses and 3/4 cup water)
1/4 cup white sugar or 1/4 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
1/4 cup sesame seeds or 1/4 cup nuts, pieces

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a 9 inch by 13 inch pan, or two 8 inch by 8 inch pans.
  • Combine all ingredients in bowl and mix well.
  • It should be moist enough to form a ball, without extra liquid.
  • Put mixture in prepared pans and spread evenly.
  • Bake for 30 minutes.
  • Remove from oven and cut into squares while still hot.
  • Wait until the bars cool before trying to remove them from the pan.
  • One tip: if the fruit is hard, soak it with a bit of water before starting to make this recipe because the fruit doesn't soften much in baking.

  • Let the pan sit for 5 minutes then remove from pan and let cool completely on a wire rack. Slice into 16 square bars (or 9 larger bars) and enjoy!

1 teaspoon quality vanilla extract

Steps:

  • Preheat the oven to 375°F / 190° C. Grease an 8x8 pan with oil.
  • In a medium bowl, mix together the oats, almonds, baking powder, and salt. Set aside.
  • In a large bowl, beat the egg. Whisk in the almond butter and maple syrup. Stir in the milk and vanilla extract. Stir in the oat mixture.

Steps:

  • Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.

1/4 cup honey
1/4 cup whole-wheat flour
1/4 cup peanut butter
1/4 cup milk ((dairy or nondairy))

2/3 cup all fruit jam

Steps:

  • Preheat the oven to 350 degrees F and line an 8x8-inch baking sheet with parchment paper, leaving a few inches overhang on two sides so you can easily lift the bars out when they're cooled.
  • Place the oats into the bowl of a food processor or blender and blitz to grind into a coarse flour.
  • Place the honey and peanut butter into a medium bowl and warm in the microwave for about 15 seconds.
  • Add the oats and the remaining ingredients except the jam to the bowl with the peanut butter and honey and stir together. Use clean hands to bring the dough together as needed to form a thick, cookie dough like texture. It will hold together when pressed between your fingers.
  • Set aside 3/4 cup of the batter.
  • Place the remaining batter into the bottom of the prepared baking pan and press down evenly to cover.
  • Spread the jam on top.
  • Crumble the remaining dough over the jam and press down slightly.
  • Bake for 22-24 minutes, remove from oven, and let cool completely in the pan. (You can speed this up by sticking the pan into the fridge.
  • Lift the bars out using the parchment paper and slice into bars.
