- Place 2 TATER TOTS in each of 24 mini muffin pan cups sprayed with cooking spray; place on bottom oven rack. Bake 10 min.
- Spray bottom of shot glass with cooking spray. Use (in twisting motion) to press TATER TOTS in each muffin cup to make potato cup. Return to oven; bake additional 15 min. or until deep golden brown.
- Add cheese to potato cups; bake 1 min. or until melted. Transfer to platter; fill with remaining ingredients.

- Cook tater tots according to directions on package. Meanwhile, mix together ranch dressing and sour cream. Set aside.
- Removed tots from oven, but keep oven on. Sprinkle with shredded cheeses, and bacon. Place back in the oven for 2-3 minutes, or until cheese is melted.
- NOTE: You can either keep them on the baking sheet, or place tots in an oven proof pan. If you keep them on the baking sheet, you will be doing a single layer. But if you put them in a pan (as shown in the picture) you will want to do 2 layers. 1/2 of the tots, bacon and cheese, then the other 1/2 of bacon and cheese.
- Once cheese has melted, remove from the oven, drizzle with the ranch/sour cream mixture, and serve right away.

- Preheat oven to 425 degrees F (220 degrees C). Arrange potato nuggets in a single layer on a baking sheet.
- Bake in the preheated oven until lightly golden, 20 to 25 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop coarsely.

Steps:
- Preheat oven to 350°F.
- Add bacon to a Dutch oven over medium heat.
- Cook, stirring occasionally, until crispy, about 10 minutes.
- Remove bacon with a slotted spoon; place bacon on a paper towel.
- Discard all but 2 Tbsp. bacon grease from pan (reserve extra for another use).
- Add onion to bacon grease in pan. Cook, stirring occasionally, until softened, about 5 minutes. Add butter to pan; let melt.
- Stir flour into butter and onions. Cook, stirring, 2 minutes.
- Stir in 1 ¼ cups milk until combined. Remove from heat.
- Stir in 1 ½ cups cheese, ½ cup sour cream, and ½ cup scallions.
- Stir in half of frozen tater tots; transfer mixture to a 13x9-inch baking dish. Sprinkle with remaining tater tots, bacon, and cheese.
- Bake until bubbly, about 35 minutes. Let cool 5 minutes.

- Preheat oven to 350°F.
- In a large skillet over medium-high heat olive oil. Add the onions and cook until softened, 4-5 minutes. Add in the ground beef and steak seasoning and cook until browned, 5-7 minutes. Stir in the vegetables and cook until warmed. Drain excess liquid from the pan and return back to the heat.
- Sprinkle in the flour and stir to combine, cooking for 30 seconds. Stream in the broth, milk, and Worcestershire sauce. Cook for 3-4 minutes until thickened.
- Pour beef mixture into a 9×13 baking dish. Sprinkle the grated cheese evenly on the meat mixture and then top evenly with the frozen tater tots.
- Bake for 45-50 minutes until the mixture is bubbly and the tater tots are lightly browned.
- Serve warm.

- Preheat oven to 425°F. Spray a rimmed baking sheet with cooking spray. Arrange tater tots on pan and bake for 25 minutes or per package directions.
- Meanwhile, in a small bowl whisk together sour cream, mayo and ranch dressing mix. Keep chilled until assembling. (This can be done one day in advance for a timesaver)

TATER TOTS

- If necessary, cook the bacon according to one of my easy methods listed below. Once cool, dice into small pieces.
- Increase the oven temperature to 425 degrees F. Scrub and peel the potatoes. Place potatoes in a large pot and cover with 1 inch of cold water. Bring to a simmer over medium heat and cook for 6 minutes (the potatoes should be about halfway cooked). Drain and let cool for 15 minutes.
- Once cooled, grate the potatoes into a large bowl.
- Add the olive oil, flour, salt, garlic powder, and black pepper. Gently combine by hand so that the ingredients are as evenly distributed as possible.
- Add the bacon, cheese, and chives.
- Stir to combine.
- Generously coat two 24-cup mini muffin tins with nonstick spray, or make the tots in two batches. With a spoon, scoop about one heaping tablespoon of the potato mixture into each muffin cavity, then with your fingers, press each scoop flat.
- Bake until the potatoes are brown at the edges, about 15 minutes, then remove from the oven and coat the tops with cooking spray. With a small offset spatula or table knife, flip each tot. Coat tops with nonstick spray once more, then return the pan to the oven and bake until browned, 12 to 15 additional minutes until golden brown. Let cool in the pan for 2 minutes, then serve with Greek yogurt or sour cream.
