- Preheat oven to 350°. In a large bowl, combine papaya, beans, avocado, corn, raisins, cilantro, orange juice, peppers, lime juice, vinegar, garlic, 1/2 teaspoon chili pepper, sugar and salt., Place tortilla strips on a greased baking sheet; spritz with cooking spray. Sprinkle with remaining chili pepper. Bake 8-10 minutes or until crisp. Top salad with tortilla strips.

TORTILLA STRIPS: HOMEMADE TORTILLA CHIPS

Steps:
- Lightly grease a baking tray and preheat your oven to 350°F.
- While your oven is preheating, slice your tortillas into long, thin strips.*
- Once you have your tortilla strips, place them onto your lightly greased baking tray.**
- Lightly coat your tortillas strips in cooking oil, then place the baking trays into the oven once it's preheated. Your tortilla strips will take at least 10 min to cook but leave them for a few minutes longer if you prefer crispy tortilla strips.
- Flip the tortilla strips at the 5 min mark to ensure both sides crisp up nicely.
- Once cooked, allow to cool, then store away for later or use immediately!
- Start by stacking your tortillas into a pile and using a sharp knife to slice them into long, thin strips.
- Place a large skillet or wok onto the stovetop, then pour in 2 cups of frying oil (or enough to cover your tortilla strips). Heat the oil until it's just starting to bubble.
- Place your tortilla strips into the oil in small batches, so they have room to fry. Cook your tortilla strips in the oil for 5 min (or until golden brown,) turning regularly.
- Once your crispy tortilla strips are golden brown, remove them from the pan and allow them to cool on paper towels.
- Keep making tortilla strips until you run out of tortillas, then serve up fresh or store for later!

SPICY TACO SALAD

- Preheat the oven to 375 degrees F. Toss the tortilla strips on a baking sheet with 1 tablespoon of oil, 1 teaspoon taco seasoning and 1/4 teaspoon salt. Spread out into an even layer and bake, stirring occasionally, until golden brown and crisp, about 20 minutes.
- Heat the remaining 3 tablespoons oil in a small skillet over medium heat. Add the remaining 1 1/2 teaspoons taco seasoning and cook, stirring, until fragrant, about 1 minute. Remove from the heat and stir in the jalapeños, brine and 1/2 teaspoon salt.
- Toss the beans, slaw mix, cilantro, Cheddar, tomatoes and onion with the taco-jalapeno dressing in a large serving bowl. Season with salt. Top with the tortilla strips and dollops of sour cream if using.

- Preheat oven to 375 degrees.
- Stir oil and all spices together.
- Brush one side of all the tortillas with oil/spice mixture.
- Make 3 stacks of 4 tortillas and cut the tortillas into 1/4-1/2" strips.
- Put strips in a single layer on a couple of cookie sheets sprayed with Pam.
- Bake until golden and crisp, about 10-15 minutes.
- (If pans are on different oven racks switch their positions about halfway through baking.).
- Remove from oven and sprinkle with salt.
- Cool completely in pans.

- Put oven racks in upper and lower thirds of oven and preheat oven to 375°F.
- Lightly brush 2 large baking pans with oil. Whisk 1/4 cup oil with spices and salt and brush 1 side of each tortilla with it. Make 3 (4-tortilla) stacks and cut stacks into 1/4-inch-wide strips. SPICY CHICKEN BURRITO SALAD

- Preheat and grease a grill pan over medium high heat. Season the chicken tenders with the taco seasoning on all sides. Grill the chicken, 3-4 minutes per side or until cooked through. Cut the chicken into strips. Set aside to cool to room temperature or chill overnight.
- In a small jar, combine the heavy cream and lemon and lime juice. Let sit for about 5 minutes, until the cream is 'chunky' in appearance. Shake the jar vigorously for 5 minutes, until the heavy cream thickens up to a sour cream consistency. Chill until ready to serve.
- In a separate jar, add half of the homemade sour cream along with the mayonnaise, chipotle peppers in adobo sauce, garlic powder, onion powder, parsley and vinegar. Shake well to combine then chill until ready to serve.
- Use a small bowl to stir together the corn, diced tomatoes, black beans, shallot, jalapeno, vinegar, cilantro/parsley and salt and pepper to make the corn salsa. Chill until ready to serve.
- Prepare the lettuce by washing then chopping into bite size pieces. Add the lettuce to a large serving bowl along with the slices of red onion. Top generously with the grilled chicken strips, sour cream, chipotle ranch, corn salsa, and tortilla strips. Enjoy!

- Place a medium-sized skillet over medium heat, add oil until it’s about ¼" deep and heat while you cut the tortillas into strips. Begin by stacking 3 or 4 tortillas and cutting them in half. Then, with the cut side facing you, slice the tortillas vertically into ¼" thick strips. Repeat until all of the tortillas have been cut into strips.
- Test the temperature of the oil by placing one tortilla strip into the skillet. If it begins to fry gently, the oil is the correct temperature. (If you are using a thermometer, the oil should be 350–360 degrees.) Sprinkle 1/3 of the tortilla strips into the oil, separating and spacing them evenly as they are dropped into the oil—be sure not to overcrowd the pan. - Add the cubed chicken and barbecue sauce to a medium-sized mixing bowl, toss until the chicken is completely coated with the sauce then set aside.
- Arrange the chopped romaine on the bottom of a large salad bowl or platter then top it with the black beans, tomatoes, corn, Monterey Jack cheese, green onions and cilantro. You can either sprinkle the ingredients evenly over the top of the lettuce or group each ingredient together and toss just before serving.

- Combine all ingredients except lime juice in electric pressure cooker, set timer for 45 minutes, natural pressure release. When beans are done cooking, add the juice of 1 lime if desired.
