Frijoles De La Olla (Mexican Pinto Beans Recipe) image

Authentic "Frijoles De La Olla" Mexican Pinto Beans Recipe - Rich zesty pintos made on the stovetop, in the Instant Pot, or in a Crock Pot.

1 pound dried pinto beans
½ sweet onion, (cut into large wedges)
4-6 cloves garlic, (smashed)
1 hambone *optional ((Could use diced bacon, or skip for vegetarian. ))
1 cup pico de gallo
Water
Salt

Steps:

  • Stovetop Method: Place the dried beans in a large bowl and fill with water, covering the top of the beans by 2 inches. Let the beans soak overnight.
  • When ready to cook, place the beans in a large 6-8 quart pot with a heavy lid. Add the onion wedges, garlic, and hambone if using.
  • Pour in enough water to cover the beans by 3-4 inches. Set the heat on medium.
  • Cover and bring to a simmer. Then reduce the heat and simmer on medium-low to low for 2-4 hours, until the beans are very soft. *Even after soaking overnight, beans take a varied amount of time, base on how old they are. "New" dried beans will cook faster than beans that have been sitting in the pantry for months/years.
  • Once the beans are soft, remove the onion, garlic, and hambone. Stir in the pico de gallo. Taste, then salt as needed.
  • Instant Pot Method: When using an electric pressure cooker, you do not have to soak the beans overnight.
  • Place the beans in a 6+ quart Instant Pot. Add the onion wedges, garlic, and hambone if using.
  • Add 5 cups of water. Lock the lid into place and set on Pressure Cook High for 35 minutes.
  • Perform a natural release. Once the steam button drops, it is safe to open the lid. If the beans are still firm, you can Pressure Cook again for 5-10 minutes. Then perform a Quick Release.
  • Once the beans are soft, remove the onion, garlic, and hambone. Stir in the pico de gallo. Taste, then salt as needed.
  • Crock Pot Method: Place the dried beans in a large 6-8 quart slow cooker. Add the onion wedges, garlic, and hambone if using. Pour in 8 cups water. (You do not have to soak the beans for this method.)
  • Set the crock pot on HIGH for 8-10 hours or on LOW for 15-17 hours. Once the beans are soft, remove the onion, garlic, and hambone. Stir in the pico de gallo. Taste, then salt as needed.

2 cups water
1 cup chopped onions (2 medium)
1/2 cup finely chopped cooked ham
2 garlic cloves, minced
2 tablespoons brown sugar
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1 (14 1/2-oz.) can diced tomatoes with green chiles, undrained

Steps:

  • In large saucepan, combine beans and 10 cups water. Bring to a boil. Reduce heat to medium-low; simmer 1 to 1 1/2 hours or until beans are tender but still firm, stirring occasionally.
  • Drain beans, discarding water. Place beans in 3 1/2 to 4-quart slow cooker. Add 2 cups water and all remaining ingredients except tomatoes; mix well.
  • Cover; cook on low setting for 8 hours.
  • Add tomatoes; mix well. Cover; cook an additional 1 to 2 hours or until beans are tender.

1 pound dried pinto beans
1 onion, chopped
4 bacon slices, chopped
4 garlic cloves, sliced
1 jalapeño chili, halved

Steps:

  • Place beans in large pot. Add enough water to cover beans by 3 inches. Soak beans overnight.
  • Drain beans and return to same pot. Add enough water to pot to cover beans by 4 inches. Mix in remaining ingredients. Simmer over medium heat until beans are tender and creamy, stirring occasionally, about 1 1/2 hours. Season with salt and serve.

1 1/2 pounds pinto beans
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
3 thick-cut slices of bacon, cut into thirds
3 cloves garlic
2 bay leaves
1 medium onion, diced
1 red bell pepper, diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl, cover with cold water and let soak overnight.
  • Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

5 cups water (or more)
1 onion, chopped
6 garlic cloves, chopped
1 bay leaf
3/4 cup ketchup
6 tablespoons dark brown sugar, packed
5 tablespoons yellow mustard
2 tablespoons chili powder
2 tablespoons Worcestershire sauce
1 tablespoon paprika
2 1/2 teaspoons hot pepper sauce
1 1/2 teaspoons dried thyme

Steps:

  • Place pinto beans in heavy large pot. Add enough water to pot to cover beans by 3 inches; let soak overnight. Drain beans. Return beans to pot. Add 5 cups water, chopped onion, garlic and bay leaf and bring to a boil. Boil until beans are just tender, stirring occasionally, about 55 minutes. Stir in remaining ingredients and simmer until beans are very tender and flavors blend, about 30 minutes. Season to taste with salt and pepper and serve.

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

We like our refried beans with a little zest to them..Makes a nice side dish with your favorite mexican dishes. I use homemade salsa #9272 for this recipe, just because I love this salsa and everything tastes good when I use it...But, your favorite store bought would work just as well.

1 lb dried pinto bean
3 cups hot water
1 large onion, cut in quarters
14 1/2 ounces diced tomatoes
4 garlic cloves, whole
1 1/4 teaspoons red pepper flakes
2 teaspoons salt
1/4 lb bacon, uncooked, cut up into chunks
2/3 cup salsa

Steps:

  • Rinse clean pinto beans.
  • Boil beans with enough water to cover for 10 minutes.
  • Drain and place all but salsa in crock pot.
  • Cook high for 6 hours.
  • Drain beans and place in food processor.
  • Process to mash.
  • Place back into crock pot.
  • Add salsa, mix.
  • Cook low 1-2 hours.
  • Leftovers can be frozen for future meals or used in dishes that ask for spicy beans.
  • You can alter the cooking time, if you want them cooking while at work by cooking on low for 8 hours and high for 2 hours.
