Steps:
- Brown ground beef and drain.
- Add green pepper and cook 2 minutes.
- Add water, tomato paste and spaghetti sauce mix; cover and simmer 10 minutes.
- Sprinkle 1/4 cup Parmesean cheese on bottom of pie shell.
- Spread 1/2 meat mixture on top of parmesean and then layer 1 cup Mozarella.
- Layer remaining meat mixture.
- Top with 1/4 cup Parmesean.
- Bake on cookie sheet in 400-degree oven for 15-20 minutes.
- Sprinkle with 1 cup Mozarella and heat until melted (10 minutes).
DEEP DISH ITALIAN MEAT PIE
Found at Cooks.com for a recipe request. I had to fix the directions as a step was missing. It is delicious and very rich. You could easily halve the Parmesan cheese and have a very tasty dish. Next time, I plan on making the meat filling alone and serving it on a roll with a slice of provolone as sort of an Italian Sloppy Joe.

- Preheat oven to 350ºF.
- Brown beef in large skillet.
- Drain, add green pepper and cook 2 minutes.

- Dissolve salt and sugar in 1 1/2 cups warm water that is between 100 and 120 degrees F. (Warm water is needed to activate the yeast, but if it is too hot, it will kill the yeast. Use a candy thermometer to test the temperature.) Stir in entire contents of packet of yeast and allow the mixture to "form a head" (like on a beer), which takes about 15 minutes.
- Place flour into mixing bowl and add yeast mixture. Stir to combine and then knead until the dough comes together and is a cohesive mass. Knead for a few minutes so the dough becomes elastic. Cover bowl with a clean cloth and allow to rise and rest for 30 minutes. Then punch the dough down, knead again briefly, cover the bowl with the cloth and allow to rise a second time.
- For the filling:
- Heat the olive oil in a saute pan and cook onion until it begins to caramelize. Add garlic and sliced pepper, and cook until they soften. Add pieces of sausage allowing them to brown. Pour off fat and stir in tomato sauce and Italian seasoning. Season with salt and pepper. Cook together for a few minutes to allow flavors to blend, then remove from heat and set aside briefly.
- Preheat oven to 450 degrees F.
- On a floured surface, stretch the dough into a 14-inch circle which is thicker around the edges. Transfer to a lightly greased 11-inch pie pan and shake cornmeal over the dough. Spoon the tomato/sausage mixture into the dough and sprinkle mozzarella over the top. Bake until the edges are golden brown and the pie sets up, about 10 to 15 minutes. Serve immediately.
NATCHITOCHES MEAT PIES
Steps:
- In a large skillet heat oil and cook beef and pork, stirring occasionally, until browned, about 5 to 6 minutes. Add the onions, bell peppers, celery, salt, Essence, cayenne, and black pepper. Cook, stirring often, until the vegetables are wilted, about 10 to 12 minutes. Add the garlic and cook for 2 to 3 minutes.
- Dissolve the flour in the water and add to the meat mixture. Stir until the mixture thickens slightly, about 3 minutes. Remove from the heat and add the green onions. Mix well and let cool.
- In a mixing bowl, sift together flour, salt, and baking powder. Cut in the lard until mixture resembles coarse meal. In a small bowl, beat the egg with the milk. Gradually add the egg mixture to the flour mixture, working it to make a thick dough. Divide the dough into 12 equal portions and roll each portion of dough into a thin round about 5 inches in diameter. Place about 1/4 cup of meat filling in the center of each round and brush edges lightly with egg wash. Fold edges together and crimp closed with a fork.
- Heat shortening in a deep pot or electric deep-fryer to 360 degrees F. Fry the pies, in batches, until golden brown. Drain on paper towels and serve immediately.
- Combine all ingredients thoroughly and store in an airtight jar or container.

- Preheat oven to 325 degrees F (165 degrees C).
- Place ricotta in a large mixing bowl and add eggs one at a time while mixing on low speed. Stir in mozzarella, ham, salami, and prosciutto until all ingredients are well combined. Line two 9 inch pans with pastry. Spoon half of mixture into each pan. Sprinkle half of the Parmesan cheese over each pie, then cover with top pastry. Crimp edges and cut steam vents in tops.

- 1. Prepare pie crust and refrigerate while cooking meat.
- 2. Place ground beef, Italian sausage, garlic and onion in skillet till meat is browned. Drain any excess grease. Add enough sauce to pan to make the meat moist, but NOT soupy or saucy.
- 3. Add Italian seasoning and basil. Simmer for 10 min. Meanwhile roll out pie crust large enough to fit in a 12" deep dish skillet or pan.
- 4. Place a large piece of parchment paper in bottom of pan, this will allow for easier removal, unless using a springform pan. Place dough in pan, I used a cast iron skillet. Make sure dough comes almost all the way up the sides of the pan.
- 5. Spoon in just enough sauce (not meat mixture) to barely cover bottom.
- 6. Add slices of fresh mozzarella. Spoon in all of meat mixture.
- 7. Top with Bruschetta Jack cheese (or your favorite Italian blend). Tears pieces of prosciutto and drop on top of pie as well as Parmesan cheese.
- 8. Bake 375° for 50 min. Allow to cool for 15-20 min before removing from pan.

- 2 (9-inch) deep dish pie pans.
- Preheat oven to 350.
- Boil spaghetti according to pkg directions. Drain, and set aside.
- Brown the meat, and IF you are using canned or jarred spaghetti sauce, add onion, Italian seasoning, and basil to the beef mixture.
- If you are using your own homemade sauce, it will already have enough spices in it to your taste.
- Add salt and pepper, to taste. Set aside.
- Beat 2 eggs, and mix in with spaghetti.
- Add Parmesan cheese, and mix well. Set aside.
- Spray pie pans with non-stick cooking spray.
- Layer each pie pan, making a well in the middle, with a thin layer of spaghetti on the bottom, and bringing spaghetti up the sides to make a pie crust.
- You may, or may not have spaghetti left over, depending on how big your pie plates are. Set aside.
- Beat 2 eggs, add Ricotta and parsley. Mix well.
- Layer a layer of spaghetti, a layer of ricotta, a layer of meat, and a layer of sauce.
- Cover with Mozzarella cheese.
- Bake for 25-30 mins., or until cheese is bubbly, and all is nice and hot.
- Serve with garlic bread or sticks, and a salad, and you have a delicious meal!

- Preheat oven to 450 degrees. Coat a 9-inch glass pie plate with olive oil. Stretch dough to an 8-inch round, then press into bottom and up sides of plate. If dough springs back, let rest 5 minutes before continuing.
- Combine beef, breadcrumbs, and 1/4 teaspoon salt.

DEEP DISH SPAGHETTI PIE
This recipe turned out to be such a fluke! It all started with leftover spaghetti! So I searched for spaghetti pie recipes and got ideas. I knew that I had probably more spaghetti, so what started out at a 8" pie turned into a deep dish pizza. Instead of going to the store for more ingredients I cleaned out my fridge and freezer. I had 3 frozen, seasoned hamburger patties...3 different types of cheese, mushrooms and some marinara sauce. Once you have the ingredients on hand, everything snaps into order very quickly! - Note: I used preseasoned hamburger patties I had in the freezer (I use Great Canadian Steak Spice - #62779) and I usually have 4 bags of Marinara Sauce from Cooking Light - #260197. Given that I used these two ingredients, my pizza pie was well seasoned, so the only spice I added was Italian Seasoning. If you are using regular ground beef, consider seasoning it with more garlic, salt and pepper. If using tomato sauce, add more seasoning such as Oregano, Basil and Italian Seasoning, salt, pepper and a little bit of sugar. I used a mix blend of Mozarella, Boccocconi Cheese and Gruyere cheese. The vegetables could be changed. Try adding red/green peppers or spinach for a different taste.
- Directions:.
- Combine the spaghetti, beaten egg and parmasan cheese. Mix well. Using a deep dish pizza pan, spread the spaghetti strands around the pan.
- Spread the cottage cheese over the spaghetti layer.
- In a large skillet sprayed with cooking oil, saute onion, mushrooms, garlic for about 4 minutes. Add the beef and cook until meat is brown and onion are tender. Drain off any fat and add Marinara Sauce or tomato sauce. Combine until well blended. Pour the beef mixture over the cottage cheese layer, spreading over to the sides.
- Grate the cheese and spread over the beef layer. Sprinkle with parmesan cheese.
- Preheat the oven to 350.
- Cook the pizza pie for 30 minutes or until the cheese is melted and slightly browned on top. Remove from oven and let rest for 10 minutes.

- In a large bowl, combine the first nine ingredients (mixture will be soft). Divide into fourths; shape each portion into 12 small meatballs. Brown meatballs in batches in a large skillet; drain and set aside., Drain tomatoes, reserving liquid. Combine liquid with cornstarch; pour into skillet. - Saute the zucchini and onion in the butter until zucchini is softened and onions are translucent. Stir in the chopped parsley, salt, pepper, garlic powder, basil and oregano.
- In large mixing bowl, combine the eggs, cheese and mustard, then add the zucchini/onion mixture.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
- In skillet over medium heat, brown the sausage with the onions, garlic and 1/2 the parsley; drain excess fat. Add tomato paste, tomato sauce, water, Italian seasoning, oregano, and basil; mix well. Simmer, covered, for 5 minutes; stirring occasionally.
- In a bowl, combine remaining parsley and ricotta, spinach, Parmesan, eggs, garlic salt, and pepper; mix well.
- Spread 2 cups sauce in the bottom of the prepared baking dish. Begin layering with 4 noodles, 1/2 cheese mix, 1/3 remaining sauce, and 1 cup mozzarella. Repeat this layer again; the last layer will be noodles, sauce and mozzarella cheese. Cover pan with aluminum foil.
- Bake in the preheated oven for 45 minutes. Remove the foil; bake, uncovered, an additional 10 minutes, or until cheese is bubbly and starting to brown. Let cool 10 minutes before serving.

- Line a 9-inch pie pan with the pastry and press the edges of the crust with a fork to seal it to the pie dish. Cover loosely with plastic wrap and refrigerate while you prepare the sauce.
- Heat a large skillet over medium-high heat and stir in the ground beef, turkey sausage, and 1 clove of minced garlic. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add the onion, red bell pepper, and mushrooms and cook, stirring frequently, until the onion is soft and translucent and the mushrooms have given off their liquid, about 5 minutes. Add the remaining garlic and cook for 30 seconds.
- Stir in the tomato paste, water, salt, basil, and oregano and bring the sauce to a boil. Reduce the heat to low, cover, and simmer for 10 minutes. Remove from heat and set aside.
- Preheat an oven to 450 degrees F (230 degrees C).
- Line the chilled pie crust with a double thickness of aluminum foil. Bake for 9 minutes. Remove the foil and continue baking until the bottom of the crust is set, about 7 more minutes (see Editor's Note for tips). Remove from the oven and set aside. Reduce the oven temperature to 350 degrees F (175 degrees C).
- Combine the spinach, ricotta, and 1/2 cup mozzarella cheese. Spoon the filling into the baked crust. Top with the meat mixture. Cover the edges of the pie crust with foil to prevent over-browning, place the pie on a baking sheet, and bake for 45 minutes.
- Remove the pie from the oven. Top the meat mixture with 1 cup of mozzarella cheese, chopped tomatoes, and sliced olives. Return it to the oven and bake until the cheese is melted, about 10 minutes. Let stand for 10 minutes before serving.
