ZESTY QUINOA SALAD

This bright and colorful salad is a great summertime recipe (or anytime you want to feel like it's summertime). Light and citrusy, it's a whole new way to enjoy quinoa. Lime juice and cilantro give a refreshing kick, while quinoa and black beans provide tasty vegan protein. If you're not vegan, add even more protein by adding chunks of chicken or turkey. Yum!

1 cup quinoa
2 cups water
¼ cup extra-virgin olive oil
2 limes, juiced
2 teaspoons ground cumin
1 teaspoon salt
½ teaspoon red pepper flakes, or more to taste
1 ½ cups halved cherry tomatoes
1 (15 ounce) can black beans, drained and rinsed
5 green onions, finely chopped
¼ cup chopped fresh cilantro
salt and ground black pepper to taste

Steps:

  • Bring quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes. Set aside to cool.
  • Whisk olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together in a bowl.
  • Combine quinoa, tomatoes, black beans, and green onions together in a bowl. Pour dressing over quinoa mixture; toss to coat. Stir in cilantro; season with salt and black pepper. Serve immediately or chill in refrigerator.

This Southwestern black bean salad recipe is healthy and delicious! This fresh black bean salad is perfect for potlucks, parties and busy weeks. Recipe yields 4 large or up to 8 side servings.

3 cans of black beans (15 ounces each) or 4 1/2 cups cooked black beans, rinsed and well-drained
2 ears of corn, shucked, or 1 cup of canned corn (drained) or defrosted frozen corn
1 orange, yellow or red bell pepper, chopped
1 cup quartered cherry tomatoes
1 cup chopped red onion (from 1 small onion)
1/2 cup finely chopped fresh cilantro (about 1/2 medium bunch)
1 medium jalapeño, finely chopped (keep the seeds for heat if you'd like, or remove them for mild flavor) or 2 tablespoons finely chopped pickled jalapeño
1/2 teaspoon lime zest (from 1 lime, preferably organic)
2 tablespoons lime juice (about 1 lime), to taste
1/4 cup extra-virgin olive oil
1/4 cup white wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt, to taste
Optional garnishes: sliced avocado, crumbled feta, lime wedges

Steps:

  • In a large serving bowl, combine all of the ingredients and toss to combine. Taste, and adjust as necessary until the flavors really pop-I usually add another teaspoon or two of vinegar (you can use lime juice instead, for more mild flavor) and another 1/4 teaspoon salt.
  • Cover and chill to enhance the flavors-preferably for at least 2 hours, or overnight. Serve in individual bowls as is, or with any of the garnishes listed. Leftovers keep well for up to 4 days or so; you might want to wake up the flavors with an extra squeeze of lime juice or tiny splash of vinegar.

1 (15 ounce) can kidney beans, rinsed and drained
4 green onions, chopped
1/4 cup chopped fresh cilantro
1/4 cup chopped of fresh mint
1/4 cup crumbled feta cheese

Steps:

  • In a large mixing bowl, whisk together the first 6 ingredients.
  • Add rice, beans, green onions, cilantro, and mint; toss ingredients to coat.
  • Sprinkle with feta cheese.
  • Cover bowl and refrigerate for 1 hour before serving.

1 (15 1/2 ounce) can black beans, rinsed and drained
1 (15 1/2 ounce) can red kidney beans, rinsed and drained
1/3 cup bottled oil-and-vinegar salad dressing (I use Newman's Own)
1 tablespoon lemon juice
1/2 teaspoon salt
2 small celery ribs, diced (about 2/3 cup)
2 scallions, sliced
2 tablespoons chopped fresh cilantro
1/3 cup crumbled monterey jack pepper cheese (2 oz.)

Steps:

  • Coat a large non-stick skillet with cooking spray; heat over medium-high heat. Add corn; cook, stirring occasionally, until lightly browned, 5 minutes. Add beans; cook, stirring occasionally, until heated through for 2 minutes. Remove from heat and cool slightly.
  • Meanwhile, in a large serving bowl, whisk together dressing, lemon juice and salt until well blended. Add celery, scallions, cilantro and warm corn mixture; toss well. Add cheese and toss gently.
