MEATLOAF FOR TWO
Filled with spices and aromatics then topped with a spicy harissa ketchup glaze, this is not your average meatloaf.

Steps:
- Preheat the oven to 350 degrees F (180 degrees C). Line a small baking sheet with parchment paper.
- Heat the oil in a medium nonstick skillet over medium-high heat. Add the onions, season with salt and cook, stirring occasionally, until softened, about 5 minutes.
- Meanwhile, combine the ketchup and harissa in a small bowl.
- Put the beef, lamb, breadcrumbs, milk, beaten egg, cilantro, mint, coriander, cumin and paprika in a large bowl. Season with salt and pepper.
- Add the sauteed onions and using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf.
- Pour the ketchup-harissa glaze on top of the meatloaf and spread all over until the sides and top are coated. Bake the meatloaf until the edges have browned, about 45 minutes.
- Allow the meatloaf to rest for at least 15 minutes before cutting and serving.
OLD-FASHIONED MEATLOAF FOR TWO
Steps:
- 1. Preheat the oven to 350°F. Place the chuck, onion, parsley, 2 tablespoons of the chili sauce, the Worcestershire, salt, and pepper in a bowl. Toss together lightly.
- 2. Form the meat into a 5-inch by 3-inch oval loaf in a small baking pan. Spread the remaining tablespoon of chili sauce all over the surface of the meatloaf. Bake for 30 minutes, or until cooked through. Do not overbake.
GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
- Remove from the oven and spread ketchup over top. Serve with additional ketchup.

- In a large bowl, pour milk over bread. Add egg, onion, chili sauce, Worcestershire sauce, salt, pepper and hot pepper sauce; mix thoroughly. Add ground beef; mix well. Shape meat mixture into an 8x4-in. oval. , Bake in a shallow pan at 350° for 1-1/4 hours or until no pink remains. Drain.

EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

FAVORITE OLD FASHIONED MEATLOAF
Makes a moist, delicious meatloaf that is firm and not crumbly--perfect for sandwiches the next day (if there are leftovers). It reheats well, too. The beef should be at or near room temperature when you make it; if it isn't, it will take longer to cook.

Steps:
- An hour or so before preparation, remove beef from fridge and allow to come to room temperature.
- Preheat oven to 400* F. Grease a standard sized loaf pan and set aside.
- In blender, process bread into fairly fine crumbs--you need about 1 1/2 cups of crumbs.
- In a large mixing bowl, beat eggs slightly with a fork. Add hamburger, breaking into large pieces as you do so. Mix slightly with a wooden spoon or paddle.
- Add remaining ingredients and mix well with spoon or paddle. When fairly well incorporated, finish mixing by hand until you have a relatively homogeneous mixture. Don't handle too much or meatloaf will be tough.
- Place meat mixture into loaf pan, pressing down as you do so to eliminate air pockets. Press down and flatten top. Meatloaf may have overflow of grease while cooking, so place on a baking sheet if desired to simplify cleanup.
- Bake at 400* F for 50 minutes or until juices are clear and meat thermometer registers about 160-170* F.
- Remove from oven, allow to rest for 5-10 minutes, and drain juices. Carefully invert onto serving platter. Serve sliced, with ketchup if desired.
