1 medium cauliflower
salt, to taste
4 tablespoons flour
4 tablespoons butter
2 cups milk (do not use nonfat milk)
2 cups sour cream
salt, to taste
black pepper, to taste
3/4 cup sharp cheddar cheese, grated

Steps:

  • Wash the cauliflower and split into florets, boil in lightly salted water for 5 minutes, and then drain in a colander.
  • Saute the flour in 2 tbsp butter until golden brown, add another 2 tbsp butter and the milk, stirring continuously with a whisk.
  • Allow to thicken a little then stir in the sour cream. Season then simmer 5 minutes more, stirring regularly.
  • Pour the cauliflower florets into a greased oven proof dish, pour over the hot sauce, sprinkle with the cheese and bake in a 400°F oven until golden brown.

1 ea Cauliflower head washed & cut in flowerets washed & cut in flowerets
1/2 c Chopped ham
2/3 c Cheddar cheese grated grated
1/4 c Dry bread crumbs
1/4 c Walnuts minced
1 tb Butter melted
Cream Sauce:
2 tb Butter
2 tb All-purpose flour
1/2 c Cold beef stock
1/2 c Cold Half-&-Half
Salt & pepper to taste

Steps:

  • Cook cauliflower uncovered in boiling salted water for 8 mins. until barely tender. Drain then place in a large bowl. Add ham then mix & set aside. Cream Sauce: Make a roux by melting butter & flour then cooking for 2 mins. while stirring constantly. Add cold stock then cold Half-&-Half. Use a wire whisk to stir constantly until sauce boils. Cook over low 5 mins. then season with salt & pepper. Mix 1/2 cup cheese into hot cream sauce. Pre-heat oven to 350 deg-F. Butter a medium shallow casserole or gratin pan. Mix cheese sauce with cooked cauliflower and bacon or ham. Transfer to prepared baking pan. Mix bread crumbs or nuts with melted butter plus 2 tb cheese. Sprinkle over cauliflower. Set casserole dish on a baking sheet to catch any drips. Bake about 20 mins. until golden & cauliflower is cooked.

I asked a Russian coworker if there was a good Russian dessert for me to bring to a potluck. This is what he suggested. It is supposed to be served hot but it is good cold as well. If you do not like raisins, try blueberries or raspberries instead.

2 cups cottage cheese (small curd)
2 eggs
1/2 cup Splenda granular or 1/2 cup sugar
4 tablespoons butter (softened, divided)
2 tablespoons semolina
1 (1/3 ounce) envelope vanilla sugar or 1 teaspoon vanilla extract
1/2 cup raisins
1 teaspoon flour
1 cup sour cream
1 (1/3 ounce) envelope vanilla sugar or 1 teaspoon vanilla extract
3 tablespoons Splenda granular or 3 tablespoons sugar

Steps:

  • Preheat oven to 350°F.
  • Drain cottage cheese in a sieve.
  • Mix sugar and 2 Tbsp butter. Add eggs, semolina and 3 tsp vanilla sugar.
  • Gently stir in curds then fold in raisins.
  • Grease a 9-inch round pan with butter, coat with flour. Carefully pour mixture into pan, smooth evenly.
  • Bake on middle rack for 30 minutes.
  • Melt remaining butter. Pour on top, spreading evenly. Broil for 5 minites to brown top.
  • Mix sour cream with vanilla sugar and sugar. Serve like whipped cream. (Dollop on top or on side).
