This broccoli casserole is extra creamy and cheesy and it's packed with flavor from browned smoked sausage. Per serving: 533 calories, 46g fat, 20g protein, 8g carbs, 2g fiber = 6g net carbs

Number Of Ingredients 9

20 ounces fresh broccoli florets
16 ounces smoked sausage
8 ounces cream cheese, room temperature
1/2 cup mayonnaise
2 cups freshly grated cheddar cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
¼ teaspoon salt
¼ cup grated Parmesan

Steps:

  • Preheat oven to 350 degrees.
  • Add the broccoli to a large microwave safe bowl along with 2 tablespoons of water. Cover tightly with plastic wrap and microwave for 2 minutes. Let sit, covered, for 2 minutes.
  • While broccoli is steaming, slice the sausage into thin rounds and add to a hot skillet over medium heat. Cook, stirring occasionally, until sausage is browned on the outside.
  • Add the cream cheese, mayonnaise, cheddar, garlic powder, salt, and pepper to a small bowl and mix well to combine.
  • Stir the cream cheese mixture and browned sausage into the steamed broccoli until well combined.
  • Transfer broccoli to an 8x8 baking dish and sprinkle the Parmesan over the top.
  • Bake for 10 minutes.

3 cups raw rice, cooked according to package directions
2 (12 ounce) packages smoked sausage, cut in half lengthwise and sliced into 1-inch pieces
2 cups frozen broccoli stems and florets
2 teaspoons olive oil
2 small onions, chopped
½ teaspoon garlic powder
Salt and black pepper, to taste
⅔ cup milk
4 cups shredded cheddar cheese, divided

Steps:

  • Preheat the oven to 350 degrees. Prepare two 9x13 casserole dishes by spraying lightly with nonstick cooking spray.
  • In a medium skillet over medium-high heat, add the oil and onions. Cook, stirring often, until the onions are softened.
  • In a large bowl, add the sausage, onions, rice, broccoli, garlic powder, salt, black pepper, 2 cups cheddar cheese, and milk. Mix to combine and divide equally between the two casserole dishes.
  • Top with remaining cheese. (ADD DIRECTIONS that at this point this can be frozen for later freezer meal)
  • Bake for 30 to 35 minutes or until the casserole is warmed through and the sausage has cooked.

I make this easy meat and veggie bake often because it provides plenty of delicious leftovers for later. My fiance and I love broccoli, so this hearty recipe pleases us both. it would go over big as a featured entree for a brunch buffet.

3 cups frozen chopped broccoli
1 pound bulk Italian sausage
3 cups seasoned salad croutons
2 cups shredded sharp cheddar cheese
4 large eggs, lightly beaten
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1-1/3 cups whole milk
1 can (2.8 ounces) french-fried onions

Steps:

  • Cook broccoli according to package directions; drain and set aside. In a large skillet, cook sausage over medium heat until the meat is no longer pink; drain. Add the broccoli, croutons and cheese. , Transfer to a greased 2-qt. baking dish. In a large bowl, combine the eggs, soup and milk. Pour over sausage mixture. , Bake, uncovered, at 375° for 25 minutes. Sprinkle with French-fried onions. Bake for 3-5 minutes longer or until a knife inserted in the center comes out clean.

2 medium red peppers or 2 medium yellow bell peppers, cut into chunks
8 ounces Velveeta cheese, cut into 1/2-inch cubes
1/4 cup milk
3 cups broccoli florets, cooked crisp-tender, drained
cooked rice (optional) or noodles (optional)

Steps:

  • Heat a large non-stick skillet over medium-high heat for 3 minutes. Add sausage; cook sausage 1 to 2 minutes per side or until lightly browned.
  • Add bell pepper; cook and stir 3 to 4 minutes or until pepper is tender. Stir in Velveeta cheese and milk. Cook and stir until cheese is melted. Stir in broccoli; heat through. Serve over rice or noodles, if desired.
