Steps:
- Preheat oven to 350 degrees.
- Cook the frozen cauliflower according to package directions.
- Add the broccoli to a large bowl with 2 tablespoons of water. Cover with plastic wrap and microwave for 3 minutes. Let sit for 5 minutes. Remove the plastic carefully and drain the liquid from the bowl.
- Add the cooked cauliflower rice to the broccoli along with the ham, 2 1/2 cups cheddar, egg, and spices. Stir well to combine.
- Spread mixture into 9x13 baking dish and sprinkle the top with remaining 1/2 cup cheese.
- Bake uncovered for 30 minutes.
- Serve immediately.

- In a greased skillet over medium-high heat, cook the minced garlic for about one minute, until fragrant.
- Add the breakfast sausage. Cook for about 10 minutes, breaking apart with a spatula, until browned.
- Meanwhile, preheat the oven to 375 degrees F.
- If using broccoli (or other veggies), blanch them in boiling water for about 5-7 minutes, until crisp tender. Then plunge into an ice bath to stop cooking, drain and pat dry.
- In a large bowl, whisk together the eggs, heavy cream, half of the cheddar cheese, parsley, sea salt, and black pepper.
- Grease the bottom of a glass or ceramic 8x8 in (20x20 cm) or 9x9 in (23x23 cm) casserole dish (I use this one). Arrange the crumbled sausage evenly at the bottom of the casserole dish. (If you want to add any pre-cooked vegetables to your casserole, mix them with the sausage at this step.)
- Pour the egg mixture over the sausage. Sprinkle the remaining cheddar cheese on top.
- Bake for approximately 30 minutes, until the eggs are set and cheese is melted.

- Layer broccoli in a large casserole dish. Drizzle with olive oil and sprinkle with a little salt and pepper.
- Roast broccoli for 15-20 minutes.
- While the broccoli is roasting, combine heavy cream, chicken stock, 1 cup cheddar cheese, mozzarella cheese, cream cheese and garlic in a medium sauce pan over medium-low heat. Stir frequently.
- Once the broccoli is done, top with cubed ham. Pour cheese sauce over top and mix everything together.
- Sprinkle remaining 1 cup of cheddar cheese over top.
- Bake for an additional 15 minutes.

- Heat olive oil (2 tablespoons) over medium heat in a large pan (I like to use a 9" oven-safe skillet so I use only one pan for the entire recipe!). Once shimmering, add red bell pepper (1 chopped), red onion (1 chopped), salt (2 teaspoons), and pepper (1 teaspoon). Saute until softened.
- Add the chili powder (1 tablespoon), cumin (1 tablespoon), and dried oregano (2 teaspoons), and toast until fragrant - about 2 minutes.
- Remove pan from heat, and add sour cream (1/2 cup), salsa (1 cup), and 1 Lb cooked/shredded chicken breast (1 Lb). Stir to combine.
