GENERAL TSO'S TOFU

General Tso's Tofu image

Crispy tofu coated in a spicy, sweet, and salty sauce. I'm not a vegetarian but this is the best General Tso's dish I've had. I like to serve it over rice and garnish with sesame seeds and green onions.

Categories     World Cuisine Recipes     Asian

Time 1h

Yield 4

Number Of Ingredients 13

1 (14 ounce) package extra-firm tofu, cut into 1/2-inch cubes
2 tablespoons soy sauce
1 teaspoon sesame oil
3 tablespoons soy sauce
3 tablespoons maple syrup
2 tablespoons sambal oelek
1 tablespoon rice vinegar
1 tablespoon minced garlic
2 teaspoons sesame oil
2 teaspoons cornstarch
2 medium (4-1/8" long)s green onions, chopped
5 tablespoons cornstarch
3 tablespoons olive oil

Steps:

  • Place tofu onto a plate lined with several paper towels. Cover with more paper towels and another plate. Set a 3- to 5-pound weight on top and press tofu for 30 minutes. Drain and discard any accumulated liquid.
  • Place tofu cubes in a shallow bowl. Add 2 tablespoons soy sauce and sesame oil. Gently stir to coat. Let sit for 10 minutes or until tofu has absorbed most of the liquid.
  • Meanwhile, make the sauce by whisking soy sauce, maple syrup, sambal oelek, rice vinegar, garlic, sesame oil, cornstarch, and green onions together in a bowl. Set aside.
  • Drain any remaining liquid from the tofu. Place cornstarch in a gallon-sized plastic resealable bag. Drop tofu cubes in the bag, seal, and gently shake until coated with cornstarch.
  • Heat olive oil in a large skillet over medium-high heat. Cook tofu for 4 minutes. Flip with tongs and cook until browned on all sides, about 4 minutes more. Transfer tofu to a plate and wipe the skillet clean.
  • Pour sauce into the skillet and cook until slightly thickened, about 2 minutes. Remove from heat. Return tofu to the skillet and toss to combine.

GENERAL TSO'S TOFU STIR-FRY

General Tso's Tofu Stir-fry image

General Tso refers to the sauce rather than the dish itself - this sweet sticky sauce, usually served with chicken, is a staple of North American Chinese restaurants.

Provided by Donal Skehan

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

One 250-gram (9-ounce) block extra-firm tofu
2 to 3 tablespoons cornstarch
4 tablespoons sunflower oil
3 tablespoons rice vinegar
3 tablespoons reduced salt soy sauce
1 tablespoon hoisin sauce
1 tablespoon soft brown sugar
1 tablespoon sesame oil
One 2-centimetre (3/4-inch) piece of ginger, peeled and grated
2 garlic cloves, thinly sliced
1 red chile, very thinly sliced

Steps:

  • Cut the tofu into 2-centimetre (3/4-inch) cubes and dry well on paper towels. Put half the cornstarch into a food bag, add the tofu cubes and toss to coat, then add the remaining cornstarch and toss again. Set aside for 5 minutes to become slightly tacky.
  • Mix the rice vinegar, soy sauce, hoisin sauce and brown sugar together in a bowl and set aside.
  • Heat the sunflower oil in a wok or frying pan over a high heat and cook the tofu for 1 to 2 minutes on each side until golden brown. Remove from the pan and set aside to drain on paper towels. Drain any excess oil from the wok.
  • Allow the wok to cool a little, then add the sesame oil, ginger, garlic and chile and gently fry for about 1 minute before adding the blended sauce ingredients with 150 milliliters (2/3 cup) water. Bubble until you have a thick, glossy sauce.
  • Return the tofu to the pan and toss to coat all over. Serve with steamed basmati or brown rice and broccoli.

TOFU GENERAL TSO'S

Tofu General Tso's image

I love General Tso's Sauce and have always wanted a vegetarian version, so here it is! Not only is it lighter than the chicken version but it tastes amazing and even meat eaters are sure to love it! Try your local Asian store for the rice wine and vinegar. I love to serve this with brown rice.

Provided by Howiesar

Categories     Soy/Tofu

Time 5h35m

Yield 3-4 serving(s)

Number Of Ingredients 13

1 (16 ounce) container extra firm tofu
2 eggs, beaten (or egg replacer to make it Vegan)
5 teaspoons cornstarch, for sauce
1/2 cup cornstarch, for breading
5 tablespoons rice vinegar
6 1/2 tablespoons rice wine
1/2 cup sugar
1/2 cup soy sauce
3 tablespoons minced garlic
1 tablespoon minced ginger
2 tablespoons sesame oil
1/2 cup oil (for frying)
chili oil

Steps:

  • Take tofu out of liquid it came in and chop into 1 inch cubes, press these between two towels to take out the moisture and dry them.
  • Mix rice vinegar, rice wine, soy sauce, garlic, ginger, 2 Tbsp Sesame oil, and chili oil to taste. Add to this the cubes of tofu, cover and let marinate in refrigerator at least 4 hours, preferably over night.
  • Next, remove the tofu from the marinade. Try to remove as much outer moisture from them as you can. Set them aside.
  • Take the marinade and add to it the 5 tsp Cornstarch and 1/2 cup sugar. Then whisk it together.
  • In a large sauce pan bring the marinade (now General Tso's Sauce) to boiling over medium low heat. It should be thick when done. Then remove from heat.
  • Beat two eggs, and immerse the tofu in them, covering all sides with egg. Then remove the tofu and place it on a paper towel. Then toss the tofu in the 1/2 cup cornstarch to lightly cover each side. Shake off the excess.
  • Heat 1/2 cup oil in a large frying pan over medium heat. Then place in the tofu, turn it during cooking so that each side gets browned.
  • When all sides are browned, place the tofu on a paper towel to get rid of excess oil. Then add the tofu into the sauce and heat over low for 3-5 minutes until everything is heated through.
  • Enjoy.

GENERAL TSO'S TOFU

General Tso's Tofu image

General Tso's Tofu is a healthy vegetarian option to the famous General Tso's Chicken. Vegetarians will rejoice when you make this tasty General Tso's tofu!

Provided by Kaitlin

Categories     Tofu

Time 30m

Number Of Ingredients 20

1½ tablespoons honey
2 teaspoons Louisiana hot sauce ((such as Crystal))
1 pound regular or firm tofu ((450g; drained, pat dry, and cut into 1-inch squares))
1 ½ tablespoons sesame seeds
2 to 3 tablespoons cornstarch ((depending on how wet the tofu is))
⅓ cup peanut or canola oil ((for shallow frying))
½ teaspoon ginger ((minced))
2 cloves garlic ((minced))
7 whole dried Chinese red chili peppers ((optional))
½ red bell pepper ((cut into large pieces))
½ tablespoon Shaoxing wine
1 cup water or vegetable stock
2 cups broccoli florets
1½ tablespoons light soy sauce
1 teaspoon dark soy sauce
2 teaspoons rice vinegar
¼ teaspoon salt
1 tablespoon sugar
½ teaspoon sesame oil
1½ tablespoons cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Mix the honey and Louisiana hot sauce in a bowl until well combined. Add the tofu to the bowl, and toss together gently with a spatula until the tofu is well-coated.
  • Next, sprinkle the sesame seeds over the tofu, and toss until evenly distributed. Next, sprinkle the cornstarch over the tofu until lightly coated. If the tofu is still too wet, add a little more cornstarch.
  • Heat 1/3 cup oil in a medium-sized frying pan (we like to use a cast iron skillet) until the oil is about 350F, or when a bamboo chopstick bubbles when inserted into the oil. If you want to make the tofu frying easier, use more oil to achieve a deep fry.
  • Carefully place the tofu pieces into the pan, ensuring that the pieces are not touching, and let fry for about 2 minutes. Turn them over to continue frying on the other side. Work quickly and turn the heat down if you need more time for turning, or if you see they are starting to burn. Continue to cook the tofu until a nice crust is formed, and they turn golden brown (about 4-5 minutes time in total). Transfer the tofu pieces to a sheet pan with a slotted spoon.
  • Heat your wok over medium heat, and add 1 tablespoon of the oil left from tofu-frying, and add the ginger. After 10 seconds, add the garlic and the whole dried chili peppers, and stir for 15 seconds. Next, stir in the red bell peppers and Shaoxing wine.
  • Now add the water or vegetable stock, and let the mixture come up to a boil. Add the broccoli florets.
  • Immediately add the soy sauces, rice vinegar, salt, sugar, and sesame oil. Let the mixture come up to a boil. Immediately add the cornstarch mixture slowly while stirring.
  • The sauce should be thick enough to coat a spoon. Feel free to add more or less of the cornstarch mixture depending on how thick you like your sauce, but give it 30 seconds to 1 minute between additions, as it does take some time for the sauce to thicken.
  • Toss in your fried tofu and give everything a quick stir to make sure the tofu is coated. Serve with steamed rice!

GENERAL TSO'S TOFU

General Tso's Tofu image

Crispy tofu in a sweet, blazing hot sauce. In my take on this dish, it gets its tang from tamarind and its heat from Thai dragon peppers. This recipe makes a little extra sauce because it's so good, you'll want to put it on everything.

  • Marinate the tofu. Use firm tofu for any pan-fried tofu recipe. The tofu available varies in different places, but always choose firm tofu for this recipe to prevent it from breaking in the pan.
  • Pan-fry the tofu. Place the marinated tofu on a bed of cornflour. Coat the tofu with the cornflour. Then pan-fried over low heat in a non-stick pan until both sides turn golden brown.
  • Coat the tofu with the General Tso’s sauce. The tofu is delightful on its own even without the sauce. Nevertheless, it is undoubtedly tastier after coating with my time tested General Tso’s sauce.

  • Begin by making the rice. Add one cup of dried rice along with 2 cups water to a medium-sized pot. Place over medium heat and bring to a soft boil. Cover with a tight-fitting lid and reduce heat to low. Simmer for 20 minutes until all the water has absorbed and the rice has doubled in size. Note: if using brown rice, follow the instructions on the back of the packaging as the amounts will be different.
  • While the rice cooks, cut the tofu into 1" cubes and place in a shallow dish along with 1/4 cup vegetable broth, 3 tablespoons soy sauce, and 2 tablespoons rice vinegar. Let marinate for at least 30 minutes. You can marinate it for as long as overnight if you'd like.
  • Drain the tofu through a colander and place in a large bowl. Add 1/3 cup of cornstarch and toss to fully coat the tofu. Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of sesame oil. Once the oil is hot, add the cornstarch coated tofu. Stir fry the tofu for 5-7 minutes, stirring occasionally, until the tofu is golden brown on all sides. Remove from heat and transfer the tofu into a small bowl.
  • Return the skillet to heat and add the garlic and ginger. Sauté for 30-60 seconds until they are golden and fragrant. Whisk together the remaining ingredients for the General Tso's sauce and add to the saucepot, stirring until thick. This should take 1-2 minutes. Add the tofu back to the pan and stir together so that the sauce fully coats the tofu.

  • Mix all the ingredients for the sauce. If you’re using pre-made General Tso’s Sauce, shake the sauce to let the cornstarch dissolve completely, pour 1/3 cup sauce into a bowl, add 1/3 cup stock, mix well.
  • Prepare herbs for the stir fry. You could use a cheese grater to mince the ginger faster. For garlic, press a chef’s knife with your palm to crush it, so it’s easy to peel. Then use a garlic press to mince it.
  • When the tofu is marinated, open the bag just a little bit without letting the tofu fall out. Drain all the liquid and discard. Add cornstarch, a tablespoon at a time, gently toss the bag to coat the tofu. It is OK if the tofu doesn’t coat evenly.
