NEELY'S LIME BARS

1 cup unsalted butter
1/2 cup confectioners' sugar
2 cups all-purpose flour
Pinch kosher salt
4 large eggs, lightly beaten
2 cups sugar
6 tablespoons all-purpose flour
1/4 cup plus 2 tablespoons fresh lime juice (or bottled key lime juice)
2 teaspoons grated lime zest
Confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray the bottom and sides of a 9 by 13-inch cake pan with nonstick spray.
  • To make the crust, combine the butter and confectioners' sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed for 2 to 3 minutes, until light and fluffy. Add the flour and salt, and mix another minute until well combined. Transfer the dough to the prepared pan, and pat out to an even thickness over the bottom of the pan. Bake the crust for 20 to 25 minutes, until lightly golden. Remove from the oven, and cook on a baking rack.
  • To make the topping, whisk together the eggs and sugar in a large mixing bowl. Add the flour, and whisk until just combined, then whisk in the lime juice and zest. Pour the lime topping over the cooled crust, then bake for an additional 25 minutes, or until the filling is set.
  • Allow the bars to cool completely. Generously dust with confectioners' sugar and cut into squares.

1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup sugar
1 tablespoon freshly grated lime zest
1 cup all-purpose flour
1/4 teaspoon kosher salt
1 large egg plus 3 yolks
1 tablespoon lime zest plus 1/2 cup lime juice
One 14-ounce can sweetened condensed milk
2 to 3 tablespoons sugar, for sprinkling
4 thin slices lime, quartered

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square baking dish with foil, overhanging the edges by an inch.
  • For the crust: Combine the butter, sugar and lime zest in the bowl of a mixer fitted with the paddle attachment. Mix on high until light and fluffy, about 2 minutes. Scrape down the sides and add the flour and salt. Mix on low speed until the dough comes together (it should be in big, loose crumbles, not dusty). Press the dough evenly into the bottom of the foil-lined pan. Bake until light golden and set, 15 to 18 minutes. Cool completely on a rack.
  • For the filling: Combine the whole egg and yolks, lime zest and juice and sweetened condensed milk in a medium bowl and whisk until very smooth. Pour into the crust and bake until completely set, 18 to 20 minutes. Cool completely on a rack, then refrigerate until chilled and very set, at least 3 hours.
  • For the topping: Preheat the broiler.
  • Remove the bar in one piece using the foil as handles (loosen the corners with a paring knife, if needed). Cut into 16 squares and place on a foil-lined baking sheet, spaced about an inch apart. Sprinkle the tops evenly with the sugar. Broil until the sugar is caramelized and crisp, 1 to 2 minutes, depending on your broiler. Let cool a few minutes before transferring to a serving tray. Garnish with lime quarters and serve.

This recipe is based on the famous Key lime pie from Joe's Stone Crab restaurant in Miami Beach. If you can't find Key limes, use regular fresh lime juice.

1 cup plus 2 1/2 tablespoons finely ground graham cracker crumbs
1/3 cup sugar
5 tablespoons unsalted butter, melted
3 large egg yolks
1 1/2 teaspoons finely grated lime zest
2/3 cup fresh Key lime juice (about 23 Key limes total)
1 can sweetened condensed milk (14 ounces)
1/4 cup heavy cream
2 Key limes, thinly sliced into half-moons

Steps:

  • Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Let cool completely on a wire rack. (Leave oven on.)
  • Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until just combined.
  • Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours (or overnight).
  • Cut into 2-by-2-inch bars. Put cream in the clean bowl of an electric mixer fitted with the clean whisk attachment. Mix on medium-high speed until stiff peaks form. Garnish bars with whipped cream and a slice of lime.

1 cup cold butter, cut in small pieces
1/2 cup sugar
2 cups flour
1 1/2 cups sugar
1/4 cup flour
4 eggs
zest of two limes, very finely chopped
juice of 4 to 5 small limes, around 2/3 to 3/4 cup juice

Steps:

  • Using a pastry cutter or in a food processor blend together the butter sugar and flour.
  • Press evenly into the bottom of a greased and parchment paper lined 9×13 inch baking pan.
  • Bake for 20 to 25 minutes at 350 degrees F ( 325 degrees F if you are using glass bake-ware)
  • Simply whisk together the sugar flour, eggs, zest and lime juice until the sugar is dissolved.
  • Allow the topping to sit for about 10 minutes before whisking together well again and pouring over the baked shortbread base.
  • Bake at 350 degrees F for about another 20- 25 minutes or until the top is slightly browned and the custard appears to be set. The bottom should just be beginning to brown slightly at the top edges. Cool completely. Sprinkle with icing sugar when cool or try adding a meringue topping.

2 cups flour
1/2 cup powdered sugar
1 cup butter or 1 cup margarine
4 eggs
2 cups sugar
1 dash salt
1/3 cup fresh lime juice

Steps:

  • In bowl, combine flour and powdered sugar; cut in butter.
  • Press into 13x9" pan.
  • Bake 350°F for 20-25 minutes.
  • Meanwhile, beat eggs on high till pale yellow.
  • Gradually add sugar and salt and lime juice.
  • Continue beating on high.
  • Pour over hot crust.
  • Bake another 20-25 minutes until golden brown. Sprinkle with more powdered sugar. Cool and cut into bars.
  • Makes 4 1/2 dozen.
  • NOTE- You may add 2 drops of green food coloring to egg mixture for that lime green color -- .

  • Preheat oven to 350F degrees.

  • Preheat oven to 350°. In a food processor, combine flour, wafers, confectioners' sugar and pecans; cover and process until nuts are fine. Cool on a wire rack., In a small bowl, beat cream cheese, sugar, milk and vanilla until blended; spread over crust to edges of pan. For the Toasted Coconut Crust :
1/4 cup (1 ounce) sweetened shredded coconut
8 ounces (1 cup) unsalted butter, at room temperature
1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon coconut extract
1/2 teaspoon salt
2 cups (9 ounces) all-purpose flour
For the Filling:
8 large eggs
1 1/4 cups fresh lime juice
2 3/4 cups sugar
1 to 2 teaspoons lime zest, from 2 limes
1/2 cup all-purpose flour
Green food coloring, optional
1/4 cup confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 350 F. Place the coconut on a rimmed baking sheet and toast it for 8 to 10 minutes, stirring every 3 to 4 minutes until it is a light golden brown. Cool completely.
  • Use an electric mixer to cream together the butter and granulated sugar until light and fluffy. Add both extracts; then with the mixer on low, add the salt, flour, and toasted coconut. Finish mixing by hand, stirring with a spatula and scraping down the bottom and sides of the bowl well.
  • Line a 9 × 13-inch pan with foil so that it extends up the sides and spray the foil with nonstick cooking spray. Scrape the dough into the pan and press it into an even layer.
  • Bake the crust for 25 to 30 minutes at 350 F, until it's golden brown on top. While the crust is baking, prepare the filling so it's ready to go as soon as the crust is done.
  • In a large bowl, whisk together the eggs, lime juice, sugar, and lime zest. Sift the flour on top of the egg mixture and whisk it in as well. Add a drop of green food coloring, if you want to use it, and whisk it in. Add a few more, if necessary, until you get a light green color you like. Go slowly-it is easy to add more coloring, but impossible to remove it if you accidentally add too much.
  • When the crust is done baking, slide the rack partway out of the oven. Pour the filling over the hot crust and slide it back into the oven. Reduce the temperature to 325 F and bake for 25 to 30 minutes. The bars are done when the center barely jiggles when you tap the pan.
  • Once done, remove the pan from the oven and let it cool until it reaches room temperature. After the bars are at room temperature, refrigerate them until completely cold. To cut, remove the bars from the pan using the foil as handles and cut into small squares using a large sharp chef's knife. Sprinkle the top with confectioners' sugar before serving. Store lime coconut Bars in an airtight container in the refrigerator for up to a week.

1/3 cup half-and-half (can substitute coconut cream)
3 tablespoons all-purpose flour
1 teaspoon finely shredded lemon peel
1/3 cup lemon juice
1 teaspoon finely shredded lime peel

1 drop green food coloring (optional)
sifted powdered sugar (optional)
thin strips lemon and lime peel (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 13x9x2-inch baking pan. Line pan with parchment, pressing the paper onto the bottom and up the sides of the pan; set aside. In a large bowl combine the 2 cups flour, the 1/2 cup powdered sugar, the cornstarch and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs (mixture will look dry). Press firmly into bottom of prepared pan. Bake 15 minutes (crust will still look dry).
  • Meanwhile, in a medium mixing bowl whisk together the eggs, granulated sugar, half-and-half and 3 tablespoons flour; divide in two bowls. In one bowl add lemon peel and lemon juice; in the other bowl lime peel, lime juice and green food coloring into other half. Pour the lemon filling over hot crust; bake 10 to 12 minutes or until set. Carefully pour lime filling over lemon filling; bake 10 to 12 minutes more or until set. Cool completely in pan on a wire rack.
  • Use paper to lift uncut bars from pan. Cut into bars. Sift over powdered sugar. Top with lemon and lime peel, if desired. Refrigerate to store. Makes 32 bars.

85g unsalted butter , melted, plus a little extra for greasing
250g gingernut biscuit
25g plain flour
200g golden caster sugar
2 large eggs , plus 1 large egg yolk
zest of 2 limes , juice of 4 (you will need 100ml juice)

Steps:

  • Line a 18 x 23 cm roasting tin with foil, then lightly grease. Heat oven to 180C/160C fan/gas 4 and put a baking sheet in to heat up. Crush the biscuits until very fine.
  • Mix the crumbs and butter together well, then press into the bottom of the tin, squashing down firmly. Slide tin onto the baking sheet and bake for 20 mins until very dark golden all over.
  • Meanwhile, make the filling. Stir the flour and sugar together, make a well in the middle, then work in the eggs and yolk until smooth. Mix in the lime zest and juice. Pour the filling onto the hot base, return to the oven and turn the heat down to 160C/140C fan/gas 3. Bake for 20 mins or until set in the middle. Cool on a wire rack, then cut into bars.

6 tablespoons unsalted butter, softened
1 cup all-purpose flour
¼ cup firmly packed light brown sugar
¼ teaspoon salt
2 medium limes, zested and juiced
3 tablespoons Key lime juice
¾ cup white sugar
2 large eggs
2 tablespoons all-purpose flour
¼ teaspoon double-acting baking powder
1 drop green food coloring
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line an 8-inch square baking pan with aluminum foil, then brush with melted butter. Place pan in the freezer until needed.
  • Cream butter for crust in a bowl with an electric mixer. Beat in flour, brown sugar, and salt. If mixture does not hold together, knead it on a work surface. Place mounds of the mixture in the cold baking pan; press with your fingers to smooth it into a firm layer on the bottom.
  • Bake in the preheated oven until lightly colored, about 18 minutes.
  • While the crust is baking, prepare lime layer: pour 2 tablespoons regular lime juice into a small bowl. Discard any extra, or reserve for another use. Add lime zest and Key lime juice; mix to combine.

30 single graham crackers (about 1 cups of crumbs)
1/4 cup granulated sugar
6 tablespoons unsalted butter (melted)
For the Lime Filling:
3 egg yolks, (at room temperature)
1 (14-ounce) can sweetened condensed milk
1/2 cup lime juice
1/4 teaspoon salt
1 lime (zested)
Garnish: lime slices

Steps:

  • Gather the ingredients.
  • Pre-heat the oven to 350 F.
  • Add the graham crackers to a food processor and pulse until you have crumbs. Add in the sugar and melted butter.
  • Press the graham cracker mixture into the bottom of an 8" x 8" square baking pan. Note that a glass pan works very well for this recipe.
  • Bake for 10 minutes and allow to cool slightly, while leaving the oven on.
  • For the lime filling: Add the egg yolks to a mixing bowl and, using a stand or hand mixer, beat for a few minutes until fluffy.
  • Mix in the sweetened condensed milk, lime juice, salt, and lime zest.
  • Pour the mixture into the graham cracker crust and return to the oven for 10 to 12 minutes, or until set.
  • Cool to room temperature and then refrigerate for 4 hours.
  • Slice into bars and serve with a wedge of lime on top, if desired.

Lime Bars image

A different take on the lemon bars we all love. I actually prefer them to lemon. This is my favorite bar cookie and I'm asked to bring it when going to a potluck or picnic. The recipe says it serves 36, but you can't eat just one of these delicious, tangy lime bars. You can omit the glaze and sprinkle with powdered sugar if that's your preference.

2 cups all-purpose flour
½ cup confectioners' sugar
½ teaspoon salt
1 cup butter
4 eggs
⅓ cup lime juice
¼ cup all-purpose flour
2 cups white sugar
2 teaspoons grated lime peel, or more to taste
½ teaspoon baking powder
1 drop green food coloring, or as desired
1 ½ cups confectioners' sugar
1 tablespoon lime juice
1 teaspoon grated lime peel

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x15-inch baking dish.
  • Mix 2 cups flour, 1/2 cup confectioners' sugar, and salt in a bowl; cut in butter with a pastry cutter until crust mixture resembles crumbs. Pat crust evenly into bottom of the prepared baking dish.
  • Bake crust in the preheated oven for 10 minutes.
  • Whisk eggs, 1/3 cup lime juice, 1/4 cup flour, white sugar, 2 teaspoons lime peel, baking powder, and food coloring in a bowl; pour over the crust.
  • Return baking dish to oven; bake until filling is set, about 25 minutes. Cool thoroughly.
  • Whisk 1 1/2 cup confectioners' sugar, 1 tablespoon lime juice, and 1 teaspoon grated lime peel to make a smooth glaze; spread evenly over cooled lime bars. Let glaze set before serving.

Nonstick cooking spray, for the baking pan
18 whole graham crackers
1 stick salted butter, melted
Three 8-ounce packages cream cheese, at room temperature
1 1/2 cups granulated sugar
1/2 cup sour cream
1/2 cup bottled lime juice
1 1/2 teaspoons vanilla extract
4 large eggs
Powdered sugar, for topping
Grated lime zest, for topping

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Place a 9-by-13-inch baking pan of hot water on the bottom oven rack.
  • Line a second 9-by-13-inch baking pan with foil, leaving an overhang around the edges, and coat with cooking spray. Pulse the graham crackers in a food processor until fine crumbs form. Pour in the butter and pulse until the crumbs are well coated and stick together when pinched. Press evenly into the bottom of the foil-lined pan.
  • For the filling: Add the cream cheese, granulated sugar, sour cream, lime juice, vanilla and eggs to the food processor (no need to clean it first). Process until smooth, using a spatula to scrape the sides as needed.
  • Pour the filling over the crust and smooth the surface. Bake on the center rack until the center is just set but slightly jiggly, about 45 minutes. Turn off the oven and leave the pan in the oven with the door closed for 10 minutes. Open the door halfway and leave the pan in the oven until the cheesecake is firmly set around the edges and very slightly jiggly in the center, about 10 more minutes. Remove from the oven and let cool to room temperature, about 30 minutes, then refrigerate until cold, at least 1 hour and up to 24 hours.
  • When ready to serve, lift the cheesecake out of the pan using the foil overhang. Cut into 12 large pieces (or 24 small pieces if preferred) and place on a serving platter. Generously dust with powdered sugar and grate over lime zest.
