TURKEY BACON DOUBLE CHEESE BURGERS WITH FIRE ROASTED TOMATO SAUCE



Turkey Bacon Double Cheese Burgers with Fire Roasted Tomato Sauce image

Extra-virgin olive oil, for drizzling plus 1 tablespoon
8 slices turkey bacon
2 1/2 pounds ground turkey breast
2 green onions, finely chopped
A handful cilantro, leaves finely chopped
1 tablespoon chipotle chili powder
1 1/2 teaspoons smoked sweet paprika
Salt and freshly ground black pepper
2 teaspoons zest and the juice of 2 limes
1 red onion, chopped
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar
1 (15-ounce) can fire-roasted diced tomatoes, lightly drained
2 rounded tablespoon grainy mustard
8 slices pepper jack cheese, from the deli counter
4 large sandwich size English muffins, lightly toasted

Steps:

  • Heat a drizzle of olive oil in a large nonstick skillet over medium to medium-high heat and add the turkey bacon. Cook until crisp, 3 minutes on each side, remove to plate.
  • While the bacon cooks, combine the turkey breast, green onions, cilantro, chipotle, paprika, salt and pepper, lime zest and juice. Mix the turkey breast with seasonings and form 4 sections, from each, 2 patties. Place the first 4 patties in the pan; cook 3 to 4 minutes on each side. Remove from the skillet and place onto a plate and loosely cover with foil to keep warm
  • While the first batch of burgers cook heat 1 tablespoon oil in a sauce pot over medium-high heat. Add onions and soften 3 to 4 minutes, season with salt and pepper and then add Worcestershire, brown sugar, tomatoes, and mustard. Let the sauce cook on low.
  • Add the second batch of burgers to the skillet and cook 3 to 4 minutes on each side. Top with a slice of cheese and 2 pieces bacon. Tent skillet with foil and cook on low to moderate heat to melt cheese, about 1 minute.
  • Place burgers on muffin bottoms. Top with bacon double cheese burgers, fire roasted tomato sauce and English muffin top.

Periodically I buy her magazine and this recipe was in the burger issue. I did modify it a bit to suit preferences. If you prefer a more chunky texture for the dressing, you can just mix it by hand.

1 lb ground turkey
1 small onion, grated
1 tablespoon poultry seasoning
6 slices chopped bacon, cooked crisp, drained
salt and pepper, to taste
1 avocado
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill
1 garlic clove, minced
1 tablespoon lime juice
1/4 cup sour cream
salt and pepper, to taste
2 tomatoes, sliced
4 -8 bib lettuce leaves
4 buns, of choice slightly toasted

Steps:

  • Heat grill or other cooking vessel of choice.
  • In medium sized bowl, mix together.
  • first 5 ingredients.
  • Form into 4 patties.
  • In food processor, place next 8 ingredients.
  • and blend until smooth.
  • Cook patties until desired doneness.
  • Place one patty on each bun half, top with dressing.
  • then tomato and lettuce.
  • Add bun top.
  • Serve.

SOUTHWEST TURKEY BURGERS

8 slices turkey bacon or turkey bacon with black pepper or applewood smoked bacon
1 1/3 pounds ground turkey breast, the average weight of 1 package
2 cloves garlic, finely chopped
1 large shallot or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
1/2 small bell pepper, green, red or yellow, seeded and finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 teaspoons, 2/3 palm full, ground cumin
1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
Vegetable oil or olive oil, for drizzling
1/2 pound deli sliced pepper jack cheese
4 crusty kaiser rolls, split
1 cup sweet red pepper relish, found on condiment aisle - pepper jelly may be substituted
Red leaf lettuce
Spicy O-nuts, recipe follows

Steps:

  • Chop your garlic and veggies.
  • Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
  • While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
  • Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.

TURKEY CLUB SALAD WITH AVOCADO DRESSING

12 slices microwave ready sliced bacon (recommended: Ready Crisp bacon)
3 hearts romaine lettuce
2 cups pea shoots, radish spouts or bean spouts
3 plum tomatoes, sliced
1/2 medium red onion, chopped
Salt and pepper
1 1/2 pounds rotisserie turkey breast or thick sliced deli roast turkey breast
2 ripe Hass avocados
1 lemon, zested and juiced
1 clove garlic
1 teaspoon salt
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
2 teaspoons hot sauce (recommended: Tabasco sauce), eyeball it

Steps:

  • Crisp the bacon in microwave according to package directions. Remove from microwave and chop. Of course, any bacon or turkey bacon which you have on hand may be substituted. These pre-rendered bacon products simply allow you to keep more heat out of the kitchen by giving you the option of a low-maintenance microwave preparation.
  • Chop romaine lettuce and arrange on large platter. Arrange a bed of pea shoots or sprouts on top of the lettuce then arrange the tomatoes and chopped red onion on top of that. Season the salad vegetables with salt and pepper, to your taste. Scatter chopped bacon onto salad.
  • Remove the rotisserie turkey from the bone with a sharp carving knife. Slice the rotisserie breast meat on an angle into strips. For thick cut turkey from the deli, julienne the meat into 1/2-inch strips. Arrange the sliced turkey down the center of the salad platter.
  • Cut all around the ripe avocados down to the pit. Twist and separate the halved fruit. Remove the pit with a spoon, then scoop the flesh with a spoon into your food processor bowl. Add the zest and juice of 1 lemon to the food processor. Chop garlic on your board and mash with 1 teaspoon salt to paste the garlic. Add garlic paste and the red wine vinegar to the food processor. Place lid on the food processor and turn it on. While the blade is spinning, stream in extra-virgin olive oil and add hot sauce. Stop processor, taste dressing and adjust seasonings. Pour dressing back and forth over the platter evenly when you are ready to serve this simple and so-cool salad meal.

This recipe makes HUGE burgers. Next time I will make them thinner/smaller. I did the patties on the Foreman grill. We enjoyed the flavors so much I'm making the burgers again this week, only I'm trying turkey, and bacos!

2 teaspoons vegetable oil or 2 teaspoons olive oil, plus more for drizzling
4 slices Canadian bacon
2 lbs ground chicken
2 teaspoons sweet paprika
2 teaspoons poultry seasoning
2 teaspoons garlic steak seasoning (Montreal Steak Seasoning) or 2 teaspoons salt and pepper
1 shallot, finely chopped
4 slices swiss cheese
2/3 cup mayonnaise
3 tablespoons Dijon mustard
2 tablespoons fresh tarragon, 4 sprigs chopped
4 kaiser rolls or 4 English muffins, sour dough, split and toasted
8 leaves leaves lettuce
1 tomatoes, vine ripe, thinly sliced

Steps:

  • Preheat grill pan, nonstick griddle, large nonstick skillet or table top electric grill to medium high heat.
  • Add 2 tablespoons of oil and Canadian bacon. Warm bacon and caramelize it at edges, 1 to 2 minutes on each side. Remove to a piece of foil. Fold foil over loosely to keep warm.
  • Pour olive oil on plate. Finely chop shallot (not too much shallot or too big, or the burgers will fall apart).
  • Combine chicken, paprika, poultry seasoning, grill seasoning, shallot.
  • Score meat with the side of your hand to separate into 4 equal amounts. Make 4 large patties, 3/4 to 1 inch thick. Drop each patty onto the plate you poured olive oil on and coat with oil and place on hot grill pan, griddle or in skillet. Cook 5 minutes on each side, until chicken is cooked through.
  • Top patties with reserved cooked Canadian bacon and Swiss cheese. Fold each slice of cheese in half to fit the burger. Cover loosely with tin foil. Turn off pan and let cheese melt, 2 minutes.
  • Combine mayonnaise (or reduced fat mayonnaise, eyeball it), mustard, tarragon. Slather bun tops or English tops with sauce. Place Cordon Bleu burgers on bun bottoms and top with lettuce and tomato. Put bun or muffin tops in place. Serve with fries.

1 lb ground turkey, dark meat preferred
2 tablespoons vegetable oil
1 tablespoon butter
1 small onion, finely chopped
1 stalk celery, finely chopped
1 tart apple, peeled and grated
1/3 cup breadcrumbs
2 teaspoons poultry seasoning
2 teaspoons Dijon mustard
sat and pepper, to taste
1/4 cup chopped parsley
1 egg, beaten
1 mild red onion, sliced
1/3 cup whole cranberry sauce
2 tablespoons sour cream
2 tablespoons chopped chives
4 slices white cheddar cheese, sharp
4 romaine lettuce leaves
4 kaiser rolls or 4 other favorite buns, just not the hamburger variety

Steps:

  • In medium skillet over medium high heat, saute onion, celery in oil/butter until soft.
  • Add apple and continue cooking another 3 minutes.
  • Place in a bowl and let cool.
  • Add the crumbs, seasonings, parsley, mustard, egg and turkey.
  • Mix and shape into 4 patties.
  • In small bowl combine cranberry sauce, sour cream and chives.
  • set aside.
  • In large non stick skillet over medium high heat, fry the patties until done.
  • top with cheese and let melt slightly.
  • Meanwhile gently toast cut buns.
  • On bottom bun, place some onion, lettuce leaf, patty and spoon on some sauce.
  • Place top on the patty.
  • Serve with your favorite crudities.
