Steps:
- Preheat the oven to 350 degrees F.
- In a small mixing bowl, combine the flour, oats, baking powder, cinnamon and kosher salt.
- In large mixing bowl or the bowl of a stand mixer, combine the brown sugar, granulated sugar and butter. Add the eggs one at a time and beat them into the butter and sugar mixture. Add in the vanilla as well.

- When the cookies come out of the oven IMMEDIATELY sprinkle each cookie with a few grains of sea salt. This is really important to do while the cookies are hot.
- Let the cookies cool for 2 to 3 minutes and then transfer them to a cooling rack.
YUMMY OATMEAL BUTTERSCOTCH COOKIES
I was looking through all the wonderful Oatmeal Butterscotch recipes here on 'Zaar and was surprised that there was not this basic recipe which DH was craving. Found this one on Hershey's Kitchens website. These came out just how I rememebered them, chewy, sweet and delicious. In my oven the cookies came out best when cooked the full 10 minutes. DH sugggests that these may also be good for you because of the oatmeal, I think otherwise, but they sure taste good. These cookies freeze well too!

YUMMY OATMEAL COOKIES
This is a family favorite--moist and chewy. This is an old recipe ,and the trick to getting a moist cookie, is to take them from the oven when the middle does not look done. This recipe was on a Quaker oats box years ago.

YUMMY OATMEAL CHOCOLATE CHIP COOKIES
A friend brought these to a picnic. After one taste of the warm-from-the-oven cookie, I knew I had to have the recipe. These are now the most requested cookie by my family. The recipe makes a HUGE batch of big cookies, but they do freeze very well. The 5 dozen amount is a guess, I've never counted! We love these and hope you will too!

HEALTHY OATMEAL COOKIES WITH APPLES AND CARROTS
Make a batch of these healthy oatmeal cookies for dessert, snack time, or a special breakfast. You can make these half the size using 1-tablespoon batter for each cookie and reducing the baking time to about 16-18 minutes, or until the edges are lightly golden brown.

Steps:
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- Mix together all ingredients in a large bowl using a wooden spoon to start and then using (clean) hands to bring the batter completely together if needed.
- Portion out 2-tablespoon sized balls of dough, place onto the prepared baking sheet, and press down until 1/4-1/2 inch thick. Space them about an inch apart-they won't spread, so close is okay.
- Bake for 18-20 minutes or until lightly golden around the edges. Let cool on the baking sheet and serve.
- These are best eaten on the day they are made, but can be stored in an airtight container at room temperature or in the fridge for 3-5 days.

- Add the oats and coconut to a food processor or blender and pulse to make into a coarse flour. This is optional but makes for a more uniform batter.
- Add the bananas to a medium bowl and mash very well with a fork or potato masher. Add the rest of the ingredients, stirring well to combine.
- Put batter into the fridge or freezer for 10-15 minutes while you preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Use a tablespoon-size measuring spoon to portion out mounds and flatten slightly until about 1/2-inch thick. I usually do some 1 tablespoon cookies and some 2 tablespoon cookies; you can bake them on the same sheet for the same amount of time.

- Chunky Monkey Morning Oats. This is a sweet tooth lover’s paradise for breakfast- oatmeal, bananas, peanut butter, and chocolate chips all warmed up for your cold mornings when getting out of bed sounds like no fun.
- Blueberry Muffin Oatmeal Cookies. I like the fact that Blair at The Seasoned Mom found the recipe in her mother’s recipe box then adapted it to fit modern life.
- Toffee Oatmeal Chocolate Chip Cookies. The last one was breakfast and this one is for dessert. I love toffee and the fact that she makes it cute and holiday-ish by adding the tie.
- Apple Cinnamon Stovetop Oatmeal. Heather over at Sugar Dish Me made a good point. Everyone believes that stove top oatmeal takes time when in actuality it takes the same amount of time as a cup of coffee.
- Banana Bread Baked Oatmeal. Baked was a more recent way that I have learned to love oatmeal. I like it because you have the opportunity to eat it as soon it comes out of the oven and then the next day when I have barely enough time to open the door and get out to the car after waking up.
- Chocolate No Bake Cookies. On the other end of the spectrum there are the chocolate no bake cookies. In all actuality, these were probably the first cookies I ever made.
- Strawberry Vanilla Overnight Oats. Even though I am stuck on baked oatmeal, the overnight oats are all the rage. This is really nice for people like me who live in areas where, for at least three months out of the year it can be the coolest time of the day and we are all still sweating.
- Pumpkin Pie Oatmeal. Six months after I start craving strawberries (which, ironically, is six months after strawberries appear at our farmer’s market) I start craving things with pumpkins in them.
- Oatmeal Cream Pies. Oatmeal cream pies have a special place in my heart. As a young married college student I would stop at the gas station in between our house and my first class of the day and grab one.
- Slow Cooker Gingerbread Oatmeal. We headed back over to The Seasoned Mom. I told you she had a lot of great oatmeal recipes. Right after pumpkin season, we head into gingerbread season.
