- In a large saucepan, cook onions in oil over medium heat 40-45 minutes or until onions are golden brown, stirring occasionally. Add garlic; cook 1 minute longer. Remove from heat. Add bourbon, stirring to loosen browned bits from pan., Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until thickened. Store in airtight containers in the refrigerator up to 1 week. Serve with sausage or other meat.

VIDALIA ONION RELISH

- Slice the onions into thin half moons using a slicing blade on a food processor. Put the onions in a large bowl and add the salt. Massage the salt into the onions and let it stand for 30 minutes.
- When the time is up, pour the onions into a large colander and squeeze the onions to remove the liquid that the salt helped draw out.
- While the onions drain, prepare a boiling water bath canner and 4 pint jars.
- Combine onions, vinegar, sugar, and spices in a large pot. Bring the contents of the pot to a boil and boil for 15 to 20 minutes. You want the onions to soften, the liquid to thicken, and for the whole mess to settle and marry.
- Pack the relish into your prepared jars and cover with liquid, leaving 1/2 inch headspace.
- Vigorously remove the air bubbles. Wipe the rims, apply the lids and rings, and process in a boiling water bath canner for 15 minutes.
- When the time is up, remove the lid from the pot and turn off the heat. Let the jars stand in the cooling canner for an additional five minutes. When that time is up, remove the jars and set them on a folded kitchen towel to cool. When the jars have cooled enough that you can comfortably handle them, check the seals. Sealed jars can be stored at room temperature for up to a year. Any unsealed jars should be refrigerated and used promptly.
VIDALIA ONION RELISH
Inspired by Paula Deen and posted on cheese-burger.net, this is a great way to use those sweet vidalia onions! I have not tried this yet, posting to try out.

- Its best to use a heavy bottomed skillet or Dutch Oven for this recipe. Melt the oil in the pan and toss in the Vidalia onion, bell pepper and celery stalks.
- Saute the mixture over medium heat for about 20 minutes or until everything is tender, be careful not to let the onions brown.
- Now add the vinegar, water, brown sugar, celery seeds and salt. Bring everything to a boil then turn down the heat and simmer for another 20 minutes.
- Let the mixture cool then transfer it into jars and refrigerate overnight.

FLANK STEAK CROSTINI WITH CHIMICHURRI AND VIDALIA RELISH

- Steak: Mix the wine, cassis, oil and black pepper in a nonreactive dish. Add the steak, turn to coat, and marinate at room temperature 1 hour.;
- Sauce: Pulse the herbs and garlic in a food processor until coarsely chopped. Add 3/4 cup oil, 1/4 cup vinegar and salt and pepper, to taste, and pulse to make a soupy vinaigrette ¿ it will look a bit creamy until it settles. Add more oil and/or vinegar if too thick. Set aside.
- Preheat the grill to high. Remove the steak from the marinade and season with salt and more pepper. Grill, covered, until nicely charred and medium rare, 3 to 4 minutes per side. Remove from the grill and rest 5 to 10 minutes before slicing across the grain.
- Relish: Brush the onions with some canola oil and season with rub, salt and pepper. Grill the onions, turning, until charred and soft. Remove from the grill and chop coarsely. Chop again with the green onions and then stir them together with the chile, oil, vinegar, and salt and pepper.
- Slice the baguette on a diagonal 1/4-inch thick. Brush with oil, season with salt and pepper and grill briefly, until just starting to crisp. Top each piece with some sauce, a slice or 2 of steak, more sauce and some relish.
OVEN POACHED SALMON A LA PAIGE WITH DILL, VIDALIA ONION AND CUCUMBER RELISH

- Preheat oven to 400 degrees F.
- Rub the bottom of a shallow baking dish with cold butter. Arrange salmon in dish. Season the fish with salt and pepper. Add broth and a few sprigs of dill to the pan. Roast the fish 12 to 15 minutes.
- Combine sugar, salt and vinegar in the bottom of a medium bowl. Add chopped onions, chopped cucumber and radishes. Sprinkle in 3 tablespoons chopped dill and toss the mixture to coat in vinegar, sugar and salt.
- Remove fish from the oven. Spoon pan juices over fish and carefully transfer to individual plates or platter. Top fish with relish and serve.
VIDALIA ONION RELISH
This came from an old newspaper back in 1998. I had tried it once before years ago and loved it and just recently refound it. I made it again and everybody loves this and it is soooo easy to make.

VIDALIA ONION-CRANBERRY RELISH
I made this the first time when I hosted Thanksgiving at my home for my family (deviating from the "ordinary" cranberry sauce.) Since then I've been asked to make this relish for Christmas, Easter, and any other holiday that involves a Turkey. Yummy, yummy. It is easy to make and one of those great recipes that you can make well in advance to take some stress from the day.

- In a medium skillet cook onion in margarine or butter for 5 minutes or until tender, stirring occasionally. Add raisins, wine, and salt. Cook and stir 1 minute more.
- Remove from heat and set aside.
- In a medium saucepan combine brown sugar, cinnamon, and 1 cup water; heat to boiling. Reduce heat and simmer, uncovered, for 10 minutes.
- Add 2 cups of the cranberries and cook, uncovered, for 5 minutes, stirring occasionally. Add remaining cranberries; cook 3 to 5 minutes more or until berries pop, stirring occasionally. Remove cinnamon sticks. Stir in onion mixture. Transfer to a medium bowl.
- Cover and chill at least 2 hours or up to 3 days.
WALLA WALLA ONION RELISH
An adaptation of the Vidalia Onion Relish to use Walla Wallas and cut down on the amount of sugar used.

Steps:
- Chop onions finely by hand or in a food processor.
- Turn out into a glass bowl and add 1/4 cup of salt and allow to stand for 30 minutes to an hour.
- Drain juice from onions and discard.
- Put onions in an enameled or stainless steel pot and add vinegar, turmeric, spices (tied into cheese cloth ball), pimentos and sugar. Bring to a boil and allow to cook until onions are transparent.
- Pack onions and cooking liquid into canning jars, leaving a 1/2 inch headspace. Remove air bubbles and place lids on jars according to the manufacturer's instructions.
- Process jars in a water bath for 10 minutes or adjusted to your altitude.
