This is another one of my favorite potato soup recipes. It's similar to some of the recipes already posted, but a little different so I am posting this too. Enjoy!

5 medium potatoes
2 cups water
1 small onion
1/2 cup chives
3 tablespoons flour
3 tablespoons butter
crushed red pepper flakes
ground black pepper
3 cups milk or 3 cups half-and-half
1/2 teaspoon sugar
1 cup cheddar cheese, shredded
1 cup crumbled bacon

Steps:

  • Peel potatoes and cut into 1" cubes.
  • Bring water to a boil in large saucepan and add potatoes.
  • Cook until tender and drain reserving liquid.
  • Set aside potatoes and measure 1 cup cooking liquid (adding water if necessary) and set aside.
  • Peel and finely chop onion and chives.
  • Melt butter in saucepan over medium heat.
  • Add onions and chives to saucepan and cook, stirring frequently until tender, but not brown.
  • Add flour to saucepan.
  • Season with red pepper and black pepper to taste.
  • Cook 3 to 4 minutes.
  • Gradually add potatoes, reserved 1 cup cooking liquid, milk/cream, and sugar to onion/chive mixture in saucepan.
  • Stir well and add cheese and bacon.
  • Simmer on low heat for 30 minutes, stirring frequently.
  • Serve with fresh chives, cheese, and bacon.

1 small onion
3 tablespoons butter
3 tablespoons all-purpose flour
crushed red pepper flakes

1 cup cubed cooked ham

Steps:

  • Peel potatoes and cut into 1-inch cubes.
  • Bring water to a boil in large saucepan.
  • Add potatoes and cook until tender.
  • Drain, reserving liquid.
  • Set aside potatoes.
  • Measure 1 cup cooking liquid, adding water, if necessary. Set aside.
  • Peel and finely chop onion.
  • Melt butter in saucepan over medium heat.
  • Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
  • Add flour to saucepan; season with pepper flakes and black pepper to taste.
  • Cook 3 to 4 minutes.
  • Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well.
  • Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.
  • Stor leftovers, covered, in refrigerator.

6 -8 medium red potatoes
2 cups water
1 small onion, chopped
1 cup mushroom, sliced
1/2 cup chopped celery
1/4 cup bacon or 1/4 cup bacon bits (optional)
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
2 cups cubed cooked ham
ground black pepper
crushed red pepper flakes

Steps:

  • Peel Potatoes and cut into 1 inch cubes.
  • Boil in water until done, about 15 minutes.
  • Drain & Set aside, but save 1 Cup of the cooking liquid for later.
  • Melt butter in a large saucepan over medium heat.
  • Add onion, celery, and mushrooms, stirring frequently until onion is soft and translucent.
  • Add flour, bacon, red and black pepper to saucepan.
  • Mix well, cook 3- 4 minutes.
  • Slowly add potatoes, reserved cup of liquid, milk, and sugar.
  • Stir well.
  • Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.

1 small leek, white part only, diced
1 pkg. (20 oz.) Bob Evans Diced Seasoned Home Fries
2 cans (141/2 oz. each) chicken broth
2 cups whole milk
1 cup frozen corn, thawed
1 tsp. parsley flakes

Steps:

  • In large saucepan over medium heat, cook bacon until crisp. Remove and set aside. In bacon drippings, saute leeks until softened, about 3 minutes. Add potatoes and chicken broth. Cover and bring to boil, reduce heat and simmer until potatoes are tender, about 15 minutes. Lightly mash with a potato masher. Add milk, corn, parsley and reserved bacon. 7 medium potatoes, peeled and cubed
2 celery ribs, diced
1 medium onion, chopped
1 quart water
4 teaspoons chicken bouillon granules
1/4 cup butter
1/4 cup all-purpose flour
2 teaspoons salt

1 quart milk
Sour cream and shredded cheddar cheese, optional

Steps:

  • In a Dutch oven or soup kettle, combine potatoes, celery, onion, water and bouillon; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until potatoes are tender. Cool slightly. Please note: for those who do not wish to use bacon, substitute 1/4 cup melted butter for the bacon grease and continue with the recipe. 1 pound bacon, chopped
2 stalks celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes, peeled and cubed
4 cups chicken stock, or enough to cover potatoes
3 tablespoons butter
¼ cup all-purpose flour
1 cup heavy cream
1 teaspoon dried tarragon
3 teaspoons chopped fresh cilantro
salt and pepper to taste

Steps:

  • In a Dutch oven, cook the bacon over medium heat until done. Remove bacon from pan, and set aside. Drain off all but 1/4 cup of the bacon grease.
  • Cook celery and onion in reserved bacon drippings until onion is translucent, about 5 minutes. Stir in garlic, and continue cooking for 1 to 2 minutes. Add cubed potatoes, and toss to coat. Saute for 3 to 4 minutes. Return bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender.
  • In a separate pan, melt butter over medium heat. Whisk in flour. Cook, stirring constantly, for 1 to 2 minutes. Whisk in the heavy cream, tarragon, and cilantro. Bring the cream mixture to a boil, and cook, stirring constantly, until thickened. Stir the cream mixture into the potato mixture. Puree about 1/2 the soup, and return to the pan. Adjust seasonings to taste.

CURRIED CHUNKY POTATO SOUP

This recipe comes from Nancie McDermott's cookbook The Curry Book. When I prepared this soup, I followed the recipe exactly but found the soup to be a little thin, in my opinion. The flavor was fabulous - there just weren't enough potatoes! Hubby, who loves curry, agreed and we ended up eating it over rice. Originally the recipe called for 4 cups of potatoes, which just isn't very much when compared to 10 cups of liquid. If you're looking for a thinner, brothier soup, by all means go with the 4 cups of potatoes. I have beefed up the recipe and called for more potatoes based on personal preference. Hubby also suggested throwing in some cauliflower, which would be a great addition. Don't be afraid of using all coconut milk either - the taste is very subtle and really makes the soup delicious. I was hesitant at first but glad that I used it. Another nice thing about this soup is that you can make it with what you have in your pantry - no unusual ingredients.

4 medium onions, finely chopped
4 -8 cups peeled red potatoes, chopped into 1/2-inch chunks (see Description above)

2 cups milk or 2 cups soymilk
1/2 teaspoon salt

  • Heat oil in large saucepan over medium heat.
  • Add onions and cook 5 minutes, stirring often, until they are shiny, fragrant and transparent.
  • Add the potatoes and cook, stirring frequently, until they are steaming, about 3 minutes.
  • Reduce heat to medium-low and add the curry powder and garlic. Cook about 3 minutes, stirring often, until the curry and garlic are fragrant and evenly mixed inches.
  • Increase heat to medium, add broth and bring to a boil.
  • Reduce heat to maintain a simmer and cook about 45 minutes or until potatoes are tender. Stir occasionally.
  • Add milk & salt, stir well, and cook until heated through.
  • Taste and adjust seasonings.
  • Serve hot or warm, sprinkled with cilantro or parsley.
  • Note: You can use other types of potatoes, including white rose, Idaho and new potatoes.

  • Cook vegetables in butter in a 5- to 6-quart heavy pot, covered, over medium-high heat, stirring occasionally, until beginning to brown and stick to bottom of pot, about 15 minutes. Add water, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper and simmer, covered, until vegetables are tender, about 10 minutes.
