Steps:
- Place pork belly in a pot. Add the soy sauce, vinegar, water, peppercorn, bay leaves, brown sugar, and onions. Bring to boil over high heat.
- Cover the pot with the lid and lower heat to low. Let it cook for about an hour or until the meat is really tender and liquid is reduced to half. Separate meat from the sauce.

- Add back the meat to the skillet and cook for a minute or two. Add the sauce again and let it simmer for some minutes until the sauce is reduced some more and becomes thicker.
- Transfer the Pork Adobo to a serving dish and top it with the browned garlic. Serve with hot steaming rice.

EASY FILIPINO PORK OR CHICKEN ADOBO
One of the most popular dishes of the Philippines!!! I'm half Filipino...this is the method both my parents used to cook this yummy meal. I like to add potatoes to the Pork style only. Also note: This is as close to the measurements that I could guesstimate. When I was taught to cook this dish, my parents would just dump in the ingredients. I've done the same since and learned to perfect it on my own. I chose to use some of the ingredients I listed because my belief in traditional diets. Lard, coconut oil and bones (for marrow) give the dish the most authentic flavor you can find. When my grandmother would cook with bones, she'd break them to release as much marrow as possible. I hope you're willing to try it and enjoy it! My family and In-laws can't get enough of it!!!

Steps:
- You may sauté meat prior to making this dish but in this version it is not necessary. If sautéing, heat lard/oil in large frying pan. Add meat. Fry on medium to med/high heat until golden brown. Then follow instructions below --
- Place meat (and bones) in large sauce pan.
- Add just enough water to submerge all of meat & bones.
- Bring to boil. As pan warms up, add vinegar, soy sauce, garlic, bay leaf and desired amount of salt and pepper. (Remember soy sauce is already pretty salty.).
- Simmer and cover for about 40 minutes. (or until chicken looks like it's starting to fall off the bone)Stir periodically.
- IF ADDING POTATOES -- simmer for about 20 minutes add cubed potatoes, bring back to boil -- simmer for about 20 more minutes.
- Remove bones prior to serving.
- If sauce is not slightly thickened after 40 minutes, you may use corn starch to do the trick -- however it will lighten up the color of the sauce.
- Serve over steamed Jasmine or Calrose rice (Jasmine is available in a brown rice).
PORK ADOBO WITH PINEAPPLE
Steps:
- In a bowl, combine pork belly, pineapple syrup (separated from the canned pineapple chunks), soy sauce and ground black pepper. Mix well until fully combined. Then, marinate for at least 1 hour.
- After marinating, separate the pork belly from the marinade. Sear the pork belly until light brown. The searing adds flavor to the dish. After searing, set aside.
- In the same pan, add a little bit of oil for sauteing. Saute' the onion until translucent. Add garlic and saute' for a minute. Then, add the seared pork and saute' for a minute.
- Add the whole peppercorn, bay leaf and the reserved marinade. Add water to cook the pork belly. Cover and let it simmer in medium heat until the pork belly is tender.
- Once the pork belly is tender (check by poking with fork), add the vinegar and pineapple chunks. DO NOT STIR, to avoid the "raw" taste of the vinegar. Let it boil for at least 3 minutes before stirring.
- After a few minutes, stir to combine the additional ingredients. Cover again and simmer for another 5 minutes or until the sauce is reduced.
- Once cooked, remove form heat. Serve with hot rice.

PORK (CHICKEN) ADOBO
This comes from The Househusband's recipe box and he is graciously allowing me to post it. I have had experience using his recipe, but I far prefer his results over mine. The picture shows this recipe using stir-fry cut pork, which is how we ate it a couple of nights ago. It works equally well with cut up chicken thighs. We usually use boneless, skinless thighs, but it works with the skin and bone just as easily. One other thing-The Househusband hates it this way, but I make him butter my rice before he puts the meat and gravy on it because I think it cuts the tang of the vinegar just a bit. We learned this recipe from an old Filipino friend down in Los Angeles whose father cooked at the Filipino center there. Adobo is like spaghetti in that everybody has a different take on how to make it. Some recipes omit the onion. Some add bay leaves during the cooking process. I find it tedious to pull them out of the mix even with them held in a bouquet garni bag and they don't seem to add much flavor. Two more points: If you store this in the fridge overnight, the flavor is intensified with the juices having more time to permeate the meat. We have on occasion made this in a large batch for potlucks and always come home with empty dishes.

Steps:
- Finely dice the onion and garlic (note that this is a whole head of garlic, not just a single clove.).
- Brown the finely diced onion and the garlic in a large pot with a little oil.
- Cut the pork or chicken into 1"x1" to 1"x3" pieces. If using bone-in, just cut away some of the larger pieces from the bone.
- Add the 1 cup of vinegar and 1 cup of water to the onion/garlic.
- Bring it to a low boil at about medium-high.
- Add the meat and continue to cook at or near boiling for a minimum of 20 minutes.
- Sometime during the 20 minutes, add the balsamic vinegar (to taste). I usually cook it for more than 20 minutes. The extra time doesn't hurt the meat and actually makes it tenderer (Probably because of the vinegar).
- With about ten minutes left, add the soy sauce.
- If you cook it as long as I do (30-40 minutes), you will want to have an extra cup of water and some vinegar (white) on hand since the mixture will probably reduce too much.
- When the meat is tender, pull it out of the gravy and brown it in a little oil in a separate pan. I sometimes sprinkle a little bit of paprika on it at this point for both color and flavor.
- While the meat is browning use a cold water roux made from a one-to-one ratio of cornstarch and water to thicken the remaining gravy.
- The meat can be remixed with the gravy after browning or served separately. I usually put the meat and gravy together and serve it over the rice. Sometimes I serve the chicken and rice separately, dousing both with gravy.

- Put all the ingredients except for the water in a Dutch oven or any heavy duty pot and leave for about 30 minutes to marinate.
- Place the pot over medium heat, add 1/2 cup water, and bring to a boil. Lower the heat to a simmer and simmer without stirring until most of the vinegar’s acid has been cooked off – you will know when this is done because it won’t smell as sharp and “sting-y”.
- Keep simmering over low heat until the chicken is very tender - about 40 minutes to an hour. Taste the sauce. If it’s too salty or too sharp for your taste, add some of the remaining water. I usually end up using 3/4 cup total.
- When chicken is tender, remove the pieces from the pot and set aside. At this point the garlic will be very tender as well – you can mash some (not all!) of the cloves against the sides of the pot to incorporate it into the sauce.

- Cut pork into large chunks and sprinkle with black pepper. If the chunks are too small, they'll completely fall apart in the Instant Pot.
- Add oil to the Instant Pot, and choose the “saute” option. Once the oil is hot, add pork to Instant Pot. Sear in batches, and remove.
- Saute onion and garlic, scraping the bottom of the pot. Mix the remaining ingredients together and pour them into the Instant Pot and deglaze the pot.
- Return the meat to the pot, along with the onion and garlic. Seal Instant Pot and set the vent to “seal” position. Choose the “Pressure Cook” option: Adjust the time to 20 minutes.

- Place the meat and the rest of the ingredients in a large pan like a Dutch oven. You can also marinate the meat overnight prior to cooking.
- Using medium heat, bring to a boil. Adjust the heat to the lowest setting and cook uncovered for 20 minutes. This helps mellow the taste of the vinegar.
- Cover and then continue to simmer on low until the chicken (and pork) pieces are tender about 30-40 minutes. When the meat is already tender, sprinkle the brown sugar on top. Gently stir to allow sugar to be absorbed by the meat. Cover and cook for another 2-3 minutes. This will not really sweeten the adobo but just help enhance the flavor and add a little caramel glaze to the meat. The adobo is already yummy at this time but its taste improves as it ages. And don’t forget the rice – lots of rice as this is a particulary more-ish dish.
