GARLIC HOME FRIES

Steps:
- Bring a large pot of salted water to a boil. Add the potatoes, cover and cook over medium-high heat until just tender, about 6 minutes; drain.
- Heat the butter and olive oil in a large cast-iron skillet over medium heat; add the potatoes and spread into a single layer. Cook, undisturbed, until they start browning on the bottom, about 5 minutes. Add the onion and sprinkle with the paprika; flip the potatoes and cook 5 more minutes. Stir once, then continue cooking until the potatoes are mostly golden brown, about 5 more minutes.
- Meanwhile, roughly chop the garlic, pile the parsley on top and sprinkle with 1 teaspoon salt. Chop and mash together until finely minced. When the potatoes are done, add the garlic mixture to the skillet and toss to coat; cook until heated through, about 2 minutes. Season with salt and pepper.
HOME FRIES
In this recipe, the smokiness of thickly cut bacon flavors Yukon Gold home fries. We used small potatoes; if your potatoes are larger, adjust the cooking time.

- Place potatoes in a medium saucepan. Cover with water; bring to a boil over high heat. Salt the water. Reduce heat to medium-high; cook until potatoes have softened but are still slightly firm, 12 to 15 minutes. Drain in a colander. When cool enough to handle, peel potatoes; cut into 1-inch pieces. Set aside.
- Cook bacon in a large skillet set over medium heat until all fat has been rendered and bacon is crisp and brown, about 15 minutes. Remove bacon with a slotted spoon; set aside on a paper towel to drain. Pour off all but 2 tablespoons of the bacon fat. Add reserved potatoes; cook over medium heat, stirring occasionally, until golden on all sides, about 10 minutes. Add reserved bacon, peppers, onion, and thyme; cook until vegetables have softened, 5 to 7 minutes. Stir in parsley, and season with salt and pepper. Remove from heat, and serve.

- 1. In a sauté pan, heat the olive oil and add the onion and peppers. Cook until softened, about 5 minutes.
- 2. In a small bowl, mix together the cumin, turmeric, coriander, chili powder, paprika, thyme, cayenne, salt, and pepper, and set aside.
- 3. Crumble the tofu into bite-sized pieces with a fork and add to the sauté pan. Sprinkle the spice mixture over the tofu to coat and sauté for about 5 minutes. Serve at once with the home fries.
YUKON GOLD & SWEET POTATOES ANNA
Found this recipe in a Martha Stewart magazine and decided to make it for a holiday dinner. It is a twist on the French Classic and was easy once you slice the potatoes (I use mandolin) and the 2 colors look so nice and the taste is good too. Remember root vegetables take a lot of seasoning so they recommend you don't by stingy with the salt and pepper adding to each layer.

- Preheat oven to 425.
- Cut Yukon Gold and sweet potatoes into 1/4 inch thick slices with a handheld slicer or sharp knife, keeping potatoes varieties separate.
- Brush on ovenproof 10" non-stick skillet with butter on bottom of pan.
- Starting in center of pan arrange about 20 slices, slightly overlapping, in a circular pattern, covering surface.
- Brush with butter and generously season with salt and pepper.
- Make another layer with sweet potato slices; brush with butter and season.
- Repeat, alternation Yukon Gold and sweet potato slices, you should have 4 to 5 layers when done.
- Drizzle any remaining butter on top of potatoes.
- Place skillet over medium high heat and cook until butter vigorously bubbles in pan about 4 minutes.
- Transfer to oven and bake 30 minutes.
- Tent loosely with foil and continue to bake until potatoes are easily pierced with a knife, about 20 minutes more.
- Remove from oven.
- Run a small rubber spatula around edges of potatoes to loosen.
- Carefully invert onto a plate and cut into wedges.

YUKON ED'S HOME FRIES
This is a great recipe for homefries from my Dad. Reduce or increase the recipe as needed for your crowd. This feeds 6-8. I like to cook the potatoes the night before to cut down on prep time. Enjoy.

- Slice boiled potatoes when cool. Cut to desired thickness. I cut mine up to 1/2 inch thick and not necessarily into perfect slices.
- Fry up bacon until crisp and set aside. You will not be adding the bacon to the dish.
- Put potatoes into pan or skillet containing bacon drippings that is heated to medium-high heat.
- Add onion flakes and stir gently, making sure as many pieces of potato as possible are flat in the bottom of the pan.
- Let potatoes get golden-to-medium brown on one side (five minutes?) and sprinkle paprika over potatoes.
- Flip potatoes over and continue to cook until other side is similarly cooked.
- Serve immediately.
