2 teaspoons olive oil
7 cups sliced mushrooms
1/3 cup shallot, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 tablespoons chopped parsley
4 cups sweet potatoes, sliced
1 cup Fontina cheese
1/2 cup chicken broth

Steps:

  • In a skillet saute mushrooms and shallots in olive oil until tender.
  • Add chopped parsley,chicken broth, salt and pepper and mix together.
  • In medium casserole dish place half of the sliced sweet potatoes, add half of the mushroom mixture, followed by half of the cheese.
  • Continue one or more layer in the same order.
  • Cover and bake at 425 degrees for 30 minutes.
  • Uncover and bake for 20 more minutes.

Years ago, one of the first meals I served my newlywed son and wife included this gratin. It's delicious without a lot of extra fat. There are some similar potato gratin recipes here, but none exactly the same. This is the one I know and love, the original, published by Martha Stewart in 1994.

1/2 tablespoon unsalted butter
1 lb yukon gold potatoes, Yellow Finn or 1 lb any medium-starch potato
2/3 cup grated gruyere cheese, a high quality brand
1 teaspoon olive oil
1 tablespoon fresh thyme leave (or, 1 teaspoon dried thyme leaves)
3/4 teaspoon salt
1/8 teaspoon fresh ground pepper, more if desired
1/3 cup low sodium chicken broth
fresh fresh thyme sprig, for garnish. (4 or 5) (optional)

Steps:

  • Heat oven to 400 degrees. Butter a 9-inch round or oval baking dish.
  • Using a mandoline, slicer or a very sharp knife, slice potatoes 1/8" thick and combine gently but thoroughly with 1/3 cup of the Gruyere, the olive oil, thyme leaves, salt, and pepper in a mixing bowl.
  • Arrange potatoes in a neat, overlapping pattern in the baking dish. Pour chicken stock over potatoes and sprinkle remaining cheese over top.
  • Bake until potatoes are tender and the cheese and potatoes are starting to brown, about 45 minutes. Garnish with thyme sprigs as desired.

1/2 tablespoon unsalted butter
1 lb yukon gold potato
1 cup canadian sharp cheddar cheese
2 tablespoons sour cream
1 tablespoon olive oil
2 garlic cloves, very finely minced
1 tablespoon fresh thyme
3/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup chicken broth or 1/3 cup white wine
4 fresh thyme sprigs (to garnish)

Steps:

  • Heat oven to 400 degrees F. Butter a 9-inch round or oval baking dish.
  • Slice potatoes 1/8-inch thick and combine thoroughly in a mixing bowl with 1/2 cup cheddar cheese, the sour cream, olive oil, garlic, thyme, salt, and pepper.
  • Arrange potatoes in a neat overlapping pattern in the baking dish. Pour chicken broth over potatoes.
  • Bake 35 minutes, until potatoes are nearly-tender and the cheese and potatoes are starting to brown. Sprinkle with remaining cheese and bake another 10-15 minutes.
  • Garnish with thyme sprigs.

BLUE CHEESE MUSHROOM AND ONION POTATO GRATIN

To save time saute the onions and mushrooms up to a day in advance, you can also make this omitting the mushrooms if desired. The cooking time is only estimated depending on the thickness of the sliced potatoes, if you own a mandoline use it for this recipe as the potato slices must be sliced very thinly.

2 tablespoons oil
2 tablespoons butter
3 onions, halved then sliced
1 lb white button mushrooms, sliced (can use more mushrooms)
3 lbs russet potatoes (peeled and sliced very thin, about 1/8-inch thick)
3 cups whipping cream
3/4 cup blue cheese, crumbled (can use less blue cheese)
1 1/2 cups mozzarella cheese, grated
salt and pepper

Steps:

  • Heat oil and butter in a skillet; saute the onions until caramalized (about 10-12 minutes) remove with a slotted spoon to a bowl.
  • Add in the sliced mushrooms and saute until they loose there moisture (about 10 minutes) transfer to a bowl.
  • Set oven to 375 degrees (oven rack to second-lowest position).
  • Butter a 3-4 quart casserole dish.
  • In a 2-quart saucepan combine the potatoes with the whipping cream (the potatoes on top do not have to be covered completely) bring to a boil; remove from heat and cool to warm (about 30 minutes) leaving the potatoes in the cream.
  • Transfer one-third of the potatoes using a slotted spoon to the baking dish, spreading them out in an even layer.
  • Sprinkle with HALF of the onions, then HALF of the mushrooms; season with salt and pepper.
  • The sprinkle ONE-THIRD of both cheeses over the mushrooms.
  • Make another layer of potatoes then the sprinkle the REMAINING onions and mushrooms over the potatoes then another third of both cheeses.
  • Make one more layer with the remaining potatoes.
  • Top with remaining cheeses.
  • Pour any leftover whipping cream evenly over the top and cover tightly with foil.
  • Make for 45 minutes.
  • Increase the oven temperature to 400 degrees.
  • Remove the foil and bake until the top is golden brown, and the potatoes are fork-tender (about 12-15 minutes).
  • Let stand for 15 minutes before serving (the mixture will thicken upon standing).

5 ounces stilton blue cheese, crumbled, room temperature (about 1 1 /2 cups)
2 cups half-and-half
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoons butter
2 tablespoons sherry wine
1 shallot, diced
2 garlic cloves, minced
1 lb mixed fresh wild mushroom, thickly sliced (such as chanterelle, morel, portobello, stemmed shiitake, oyster, crimini or hedgehog)
1 1/2 teaspoons chopped fresh thyme or 3/4 teaspoon dried thyme
2 lbs yukon gold potatoes, peeled, very thinly sliced into rounds

Steps:

  • Position rack in top third of oven and preheat to 400°F Butter 13 x 9 x 2-inch glass baking dish. Place cheese in medium bowl; add 1/2 cup half and half. Using fork, mash mixture to chunky paste. Mix in 1 teaspoon salt and 1/2 teaspoon pepper. Mix in remaining 1 1/2 cups half and half.
  • Melt butter in heavy large pot over medium-high heat. Add mushrooms, sherry, shallot, garlic and herbs; sauté until mushrooms, garlic and shallot are tender and liquid cooks away, about 8 minutes. (Cheese sauce and mushrooms can be made 8 hours ahead. Cover separately and chill.).
  • Arrange half of potatoes on bottom of prepared dish. Spoon 3/4 cup cheese sauce evenly over. Top with all of mushroom mixture, 3/4 cup cheese sauce, then remaining potatoes. Top with remaining cheese sauce. Cover dish with foil.
  • Bake gratin 30 minutes. Uncover and bake until potatoes are tender, top is golden brown and sauce is thickened, about 30 to 40 minutes longer. Let stand 10 minutes; serve hot.
