YOGURT AND JAM POPS



Yogurt and Jam Pops image

Reminiscent of breakfast but masquerading as dessert, these pops are made with Greek yogurt or Icelandic skyr, which are thicker and creamier than regular plain yogurt. Pick whichever you enjoy the most, but make sure it's plain and unsweetened.

1 cup heavy cream
1/2 cup granulated sugar
1/8 teaspoon kosher salt
2 cups plain, full-fat, thick yogurt such as Greek or Icelandic yogurt
1/3 cup blueberry or other jam
1 tablespoon lemon juice
2/3 cup smashed graham crackers (from 3 whole sheets), plus more for serving (optional)

Steps:

  • Have ready a 10-pop (1/3 cup each) popsicle mold (or other similar size). In a small saucepan, combine the cream, sugar and salt over medium-low heat. Cook, stirring, just until the sugar has dissolved, about 3 minutes. Transfer to a large bowl and let cool completely.
  • Add the yogurt to cream mixture and stir thoroughly to combine. In a small bowl, stir together the jam and lemon juice.
  • Using a large spoon, distribute the mixtures evenly among the molds, alternating between the yogurt mixture, the jam mixture, and the graham crackers. Use a butter knife or a skewer to swirl everything, but be careful to avoid overmixing. Cover and freeze for 1 hour.
  • After 1 hour, add the popsicle sticks and continue to freeze until solid, at least 8 hours.
  • To unmold, briefly dip the mold in hot water a few times just until the pops can be pulled out. Take care not to melt the pops.

Steps:

  • Whisk cream to soft peaks in a large bowl. Fold in yogurt. Spoon jam evenly on top and gently swirl in, leaving streaks. Divide mixture evenly among 4 glasses. Refrigerate for at least 1 hour or, covered, for up to 1 day before serving.

Whipping up this dessert may be the wisest decision you'll make in the summer: It comes together quickly and uses only five ingredients. Mashed juicy berries folded into lightly whipped cream results in a simple dish that manages to feel both decadent and light. Macerating ripe in-season blackberries in sugar extracts their natural sweetness and goodness. Serve this dish with shortbread cookies for a buttery crumble to contrast the creamy blend.

1 pint fresh blackberries (12 ounces)
2 tablespoons granulated sugar
2 teaspoons vanilla extract
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
Shortbread cookies, for serving (optional)

Steps:

  • Place the blackberries in a medium bowl and sprinkle with the granulated sugar, then drizzle with the vanilla. Toss lightly to evenly coat. Allow to steep for 10 minutes, then mash the blackberries until they release their juices and form a thick pulp.
  • Combine the heavy cream and confectioners' sugar in another medium bowl. Use an electric stand or hand mixer or whisk to whip the cream to medium peaks. (When you lift the beater or whisk, the cream should hold a peak for a moment.)
  • Pour the berry mixture over the cream and use a rubber spatula to gently fold until combined. You can leave streaks of the berry mixture or completely incorporate it. Serve immediately or cover and refrigerate for up to 1 day. To serve, scoop into glasses or dishes and top with cookies if desired.

RASPBERRY FOOL

1 1/2 cups vanilla low-fat yogurt
1/2 pint (1 cup) raspberries
3 tablespoons sugar
3 tablespoons well-chilled heavy cream

Steps:

  • In a fine sieve set over a bowl drain yogurt, chilled, at least 8 hours and up to 1 day. Discard liquid and transfer yogurt to bowl.
  • In a small saucepan toss together raspberries and sugar and cook over moderate heat, stirring occasionally, until juicy, 2 to 3 minutes. Force mixture through cleaned fine sieve into a bowl, pressing on solids. Chill raspberry pur e until cold, at least 1 hour, and up to 1 day.
  • In a chilled small bowl beat cream until it just holds stiff peaks and gently fold in yogurt. Fold in raspberry purée to create a marbled effect.
  • Spoon fool into 4 stemmed glasses. Chill desserts, covered, 1 hour.

BLUEBERRY YOGURT PARFAIT

The beneficial phytonutrients in blueberries are anthocyanins, a type found in other fruits and vegetables with red, blue and purple pigments. Scientists use a test called the O.R.A.C. (short for oxygen radical absorbance capacity) to rate the antioxidant capacity in foods, and by this measure blueberries always come out on top. So if red wine is off limits and beets just aren't your thing, try adding a half cup of blueberries to your cereal or yogurt in the morning, throw a half cup of frozen blueberries into your smoothie - or try any of this week's recipes. This beautiful parfait tastes so much richer than it is. You can serve it for breakfast or for dessert. Look for organic yogurt that has no thickeners or gums added to it.

2 cups blueberries
1/4 cup sugar
1 tablespoon freshly squeezed lime juice
1/2 teaspoon balsamic vinegar
2 cups drained low-fat yogurt or low-fat Greek style yogurt
1 tablespoon shelled pistachios, finely chopped

Steps:

  • Combine the blueberries, sugar, lime juice and balsamic vinegar in a medium saucepan, and bring to a boil over medium heat. Cook for five to 10 minutes, until the liquid is reduced and the blueberries have cooked down to a jam-like consistency. Allow to cool. You should have about 1 cup of thick, jammy sauce.
  • Spoon 1/4 cup thick yogurt into the bottom of each of 4 tumblers or parfait glasses. Top with 2 tablespoons of the blueberry sauce. Make another 1/4 cup layer of yogurt on top of the blueberry sauce, and finish with another 2 tablespoon-layer of blueberry sauce. Cover tightly and chill for at least 1 hour. Just before serving, sprinkle finely chopped pistachios over the top.
