SLOW COOKER SPLIT PEA AND HAM SOUP

Slow Cooker Split Pea and Ham Soup image

Easy and delicious! Very thick and hearty! Freezes well! (I always make a double batch and freeze 2/3.) Update: If you overcook, the soup will get even thicker than usual! and turn a little bit of an olive drab color--it will still taste good though!

Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

QUEBEC-STYLE YELLOW SPLIT PEA SOUP

Quebec-Style Yellow Split Pea Soup image

Delicious and hearty split pea soup, starting with dried peas and simmered low and slow with vegetables, a ham hock and spices.

Provided by Jennifer

Categories     Dinner     Lunch     Soup

Time 2h15m

Number Of Ingredients 12

1 lb unsmoked ham hock
2 Tbsp butter (or cooking oil)
2 medium carrots (peeled and finely diced)
1 rib celery (finely diced)
1 medium onion (finely diced)
1 3/4 cups dried yellow split peas (rinsed well and sorted through)
1 bay leaf
1 tsp dried savory
1 tsp dried thyme
4 cups chicken broth (or vegetable broth)
3 cups water
Salt and pepper, to taste

Steps:

  • Trim off and discard skin from ham hocks.
  • In a large soup pot or Dutch oven, melt butter over medium heat. Add carrots, celery and onion. Cook, stirring regularly, until softened, about 10 minutes.
  • Stir in dried split peas, bay leaf ,savory and thyme. Cook, stirring, for about 2 minutes.
  • Stir in chicken broth and water. Add the ham hock. Bring to a boil, then reduce heat to medium-low, cover the pot and simmer, stirring occasionally, until the peas are very soft and soup is thickened, about 1 1/2 - 2 hours. *NOTE: You may need to add additional water or stock if soup gets too thick.
  • PICK OUT AND DISCARD BAY LEAF and remove the ham hock to a plate. *Note: I prefer a thicker soup, so I blend just a bit of the soup with an immersion blender or blender. Just do a quick blend (or blend just a cup of the soup. You don't want a completely pureed soup. You want it to retain most of it's texture, but the bit of pureed soup will incorporate with the broth for a thicker soup.)
  • Let ham hock cool slightly, then remove any meat on the hock and add it back to soup. Discard the fat and bone from the hock.
  • Stir to combine meat with soup. Taste and generously season with salt and pepper, to taste.

SPLIT PEA & GREEN PEA SMOKED HAM SOUP

Split pea & green pea smoked ham soup image

John Torode shares the recipe for one of his all-time favourite soups

Provided by John Torode

Categories     Dinner, Soup

Time 3h30m

Number Of Ingredients 8

1kg gammon or ham hock
200g split peas , soaked overnight
2 onions , roughly chopped
2 carrots , roughly chopped
2 bay leaves
1 stick celery , roughly chopped
300g frozen peas
crusty bread and butter, to serve

Steps:

  • Put the gammon in a very large pan with 2 litres water and bring to the boil. Remove from the heat and drain off the water - this helps to get rid of some of the saltiness. Recover with 2 litres cold water and bring to the boil again. Put everything but the frozen peas into the pan and bring to the boil. Reduce to a simmer and cook for 1½-2½ hrs, topping up the water as and when you need to, to a similar level it started at. As the ham cooks and softens, you can halve it if you want, so it is all submerged under the liquid. When the ham is tender enough to pull into shreds, it is ready.
  • Lift out the ham, peel off and discard the skin. While it is still hot (wear a clean pair of rubber gloves), shred the meat. Remove bay from the soup and stir in the frozen peas. Simmer for 1 min, then blend until smooth. Add a splash of water if too thick, and return to the pan to heat through if it has cooled, or if you are making ahead.
  • When you are ready to serve, mix the hot soup with most of the ham - gently reheat if made ahead. Serve in bowls with the remaining ham scattered on top, and eat with crusty bread and butter.

3 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
2 teaspoons minced garlic
1 pound Smithfield ham, chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes

1 bay leaf
2 teaspoons fresh thyme
Parmesan Truffled Potato Chips, recipe follows
2 pounds red bliss potatoes, scrubbed well and patted dry, skins left on

1/4 cup grated Parmesan

  • Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
  • In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
  • Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.

SWEDISH YELLOW SPLIT PEA SOUP

Swedish Yellow Split Pea Soup image

Swedish style yellow split pea soup is comfort for the soul.

Provided by Pat Nyswonger

Categories     Soups and Stews

Time 2h

Number Of Ingredients 9

1 lb. dried yellow split peas
8 cups chicken stock, fresh if possible
2 yellow onions, chopped coarsely
1 whole onion studded with 10 whole cloves
1 meaty smoked ham hock, about 2 to 2 1/2 pounds
1 teaspoon dried thyme or 2 tablespoons fresh thyme
1 tablespoon grated fresh ginger
1 teaspoon sea salt
¼ teaspoon black pepper

Steps:

  • Rinse and pick through the peas. Watch for any small pea-sized rocks that might be there. I know you don't want to visit the dentist for a chipped tooth.
  • Fill a large pot with the chicken stock, add the peas, the chopped onion, the ham hock, and the onion studded with cloves, thyme, and grated ginger.
  • Bring to a boil then reduce the heat to medium-low and simmer for 90 minutes (uncovered).
  • Remove the studded onion and discard it. Remove the ham hock and transfer it on a cutting board. When the ham hock gets cool enough to handle, remove and discard the fat, bone, and tough gristle. Chop the lean ham and return it to the soup pot. You will probably have about one cup of ham.
  • Continue to simmer the soup for an additional 30 minutes stirring it often. It will thicken up and if you prefer a thinner soup you can add additional chicken stock.
  • Taste the soup and season with salt and pepper if needed. Serve with a nice crusty whole-grain bread and a dollop of brown mustard. Enjoy!

YELLOW SPLIT PEA SOUP

Yellow Split Pea Soup image

This is a wonderful recipe for yellow pea soup. You can use about 1/2 pound salt pork, rinsed if covered with salt in place of the smoked ham bone. Just a tip, don't throw away the bone from your cooked ham, wrap tightly in foil and freeze, it is wonderful to use in pea soups, make certain to leave some meat on the bone to shred into the soup. If you have any dried savory, then add in about 1/2 teaspoon to the soup along with the chives. I sometimes add in a couple of potatoes that are cut into small cubes into the soup the last hour of cooking, but that is optional. This soup will take around 2-3 hours to cook.

Number Of Ingredients 9

Low fat cooking spray (or 1 tsp. olive oil)
300 g yellow split peas - soak these overnight or for at least 6 hours in cold water.
2 medium sized diced onions.
3 medium sized peeled diced carrots
1 thick slice cooked ham/gammon diced.
1.5 L chicken stock (home-made or from a stock cube)
1 bay leaf
Salt and pepper to taste
Chopped fresh parsley

Steps:

  • Give 5 sprays of the low fat cooking spray in the bottom of a large saucepan which is big enough to hold 2.5 litres water in total. Or add the olive oil.
  • Heat the oil in the saucepan until it is hot and turn the temperature down to medium.
  • Add the diced onions, diced carrots and diced ham and sweat them down until they are soft it will probably take 8 minutes or so, if using the cooking spray method, quicker if using olive oil. Keep stirring the vegetables around the pan so that the ham also does not burn.
  • Once the onions and carrots are soft add all of the pre-soaked yellow split peas, mix together, and then add the 1.5 litres of chicken stock and the bay leaf.
  • Simmer for about 1 hour until all of the vegetable mixture is soft. You will need to keep stirring the pot to remove the bubbles on top.
  • Switch off the heat and allow the soup to cool for half an hour.
  • Remove the bay leaf.
  • Puree the soup in batches and put back in a saucepan, gently re-heating the soup.
  • Season with salt and pepper to taste.
  • Allow to cool a little serve garnished with parsley.
  • Or portion the soup into individual containers with labels on, and freeze to be used when required.

Yellow Split Pea Soup image

This hearty and cozy yellow split pea soup is flavored with an aromatic sprinkle of marjoram, and topped with savory crispy-fried onions!

Provided by Ingrid Beer

Categories     Soup

Time 1h30m

Number Of Ingredients 21

1 tablespoon butter
1 tablespoon olive oil
8 ounces (about 1/2 pound) smoked, Black Forest ham, diced small
1 small onion, diced
1 carrot, peeled and diced
1 rib celery, diced
1/2 teaspoon dried Marjoram
1/4 teaspoon black pepper
Salt
2 cloves garlic, pressed through garlic press
1 1/4 cup yellow split peas (dried), picked over and rinsed in cold water
5 1/2 cups chicken stock/broth
1 teaspoon lemon juice
1 tablespoon fresh parsley, chopped
Peanut or vegetable oil, for frying (about 2 cups worth)
1/2 onion, cut in half once more and sliced very thinly
1/4 cup flour
1/4 teaspoon black pepper
1/4 teaspoon salt, plus a couple of pinches, divided use
1/4 teaspoon paprika
1 teaspoon fresh parsley, finely chopped

Steps:

  • Begin by gathering and prepping all of your soup ingredients according to the ingredient list above to have ready and organized for use.
  • To prepare the soup, place a large, non-stick soup pot over medium-high heat, and add the butter and the olive oil. Once melted together, add in the diced ham, stir, and allow to crisp up a bit for a few minutes.
  • Once the ham is browned and crispy, add in the diced onion, carrot, and celery, and allow the mixture to sauté for a few minutes until the vegetables soften a bit. Add in the marjoram, black pepper and a pinch of salt, plus the chopped garlic, and stir until aromatic.
  • Next, add in the yellow split peas, and stir to incorporate them into the ham/vegetable mixture. Stir in the chicken stock, and allow it to come to the boil.
  • Once things come to the boil, adjust the heat to low/medium-low, cover the pot with a lid slightly askew, and gently simmer the soup for about an hour, until the split peas begin to break down and thicken up the soup.
  • While the soup simmers, gather and prep all of your crispy-fried onion ingredients according to the ingredient list above to have ready and organized.
  • To prepare the crispy-fried onions, slowly heat the oil to roughly 360° in a medium-sized pot.
  • Into a small dish add the flour, black pepper, salt, and paprika, and mix together with a fork. Set aside for a moment.
  • In a medium-sized bowl, add the sliced onions and a pinch of salt. Next, sprinkle the sliced onions with the flour mixture, and toss the slices well to coat.
  • Once the oil is hot, add the coated onions (in batches) to the hot oil, and fry them for a few moments until golden-brown and crispy. Remove the crispy onions from the oil and place onto a paper towel to drain, sprinkling them with a pinch of salt to season while still warm. Repeat the process until all onions are fried.
  • Once fried, finish them by sprinkling over them the chopped parsley and tossing it with the onions, and set these aside to use as garnish for the soup.
  • Once the soup has simmered for about an hour and all peas are pretty well broken down, turn the heat off from under the pot and allow for the soup to sit for about 15-20 minutes. Then, stir in the lemon juice and the fresh parsley, ladle the soup into bowls, and garnish with the crispy-fried onions.

SPLIT PEA SOUP WITH HAM

Split Pea Soup with Ham image

A simple recipe that delivers big flavor, this split pea soup with ham is hearty enough to serve as a meal.

Categories     Soups

Time 1h45m

Yield 6 to 8

Number Of Ingredients 15

2 tablespoons unsalted butter
1 large yellow onion, finely chopped
½ teaspoon salt
2 garlic cloves, minced
4 cups low-sodium chicken broth
3 cups water
1 pound ham steak, skin removed, cut into quarters (see note)
3 slices (4 oz) thick-cut bacon, left whole (see note)
1 pound green split peas (about 2 cups), picked through and rinsed
3 sprigs fresh thyme, plus more for serving
2 bay leaves
2 medium carrots, cut into ½-inch pieces
1 medium celery rib, cut into ¼-inch pieces
Freshly ground black pepper
Fresh croutons, for serving (optional; see instructions below)

Steps:

  • Heat the butter in a large Dutch oven or soup pot over medium heat. Add the onion and salt and cook, stirring frequently, until softened, 4 to 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Do not brown.
  • Add the broth, water, ham steak, bacon, peas, thyme sprigs, and bay leaves. Increase the heat to high and bring to a boil, stirring frequently to keep the peas from sticking to the bottom of the pot. Reduce the heat to low, cover, and simmer until the peas are tender but not falling apart, about 45 minutes.
  • Remove the ham steak and place it on a plate; cover with foil and set aside. Stir in the carrots and celery and continue to simmer, covered, until the vegetables are tender and the peas have almost completely broken down, about 30 minutes longer.
  • Meanwhile, shred the ham steak into small bite-size pieces with two forks. Cover with foil again.
  • Remove and discard the thyme sprigs, bay leaves, and bacon slices. Add the shredded ham to the soup and return to a simmer. Add a few grinds of pepper, then taste and adjust seasoning if necessary (depending on the saltiness of the ham and bacon you used, you may need an additional ¼ to ½ teaspoon salt). Ladle the soup into bowls and top with fresh croutons, if using. (The soup will thicken as it sits on the stove; thin it with water and adjust seasoning as necessary.)
  • Note: A ham steak is a thick slice of cooked ham cut from a whole ham roast. They can be found packaged in the refrigerated meat section of the supermarket, near the bacon.
  • Note: Regular sliced bacon can be used, but the thinner slices are a little harder to remove from the soup.
  • To Make Fresh Croutons: Melt 2 tablespoons of unsalted butter in a medium skillet over medium heat. Add 2 cups of cubed good-quality French or Italian bread and cook, stirring frequently, until golden brown and toasted, 3 to 5 minutes.
  • Make-Ahead/Freezer-Friendly Instructions: The soup can be made up to 3 days ahead of time and refrigerated, or frozen for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot. The soup will thicken once cool, so thin with water and adjust seasoning as necessary.

  • Heat the vegetable oil in the Instant Pot using sauté mode adjusted to high (medium-high heat in a stovetop PC) until the oil is shimmering. Add the onion, carrots, and garlic to the pressure cooker pot, and then sprinkle with the salt and red pepper flakes. Saute until the onion softens, about five minutes. Add the bone to the pot, then the peas, and cover with the water. (It’s OK if the end of the bone pokes up out of the water.)
  • Lock the lid on the pressure cooker, bring the cooker to high pressure, and pressure cook for 20 minutes in an electric pressure cooker, or 18 minutes in a stovetop PC. (On the Instant Pot, use the Manual setting, and set the cook time for 20 minutes.) When the cooking time is over, quick release the pressure. (If the quick-released steam starts spitting, close the quick release valve and let the pressure come down naturally for a few minutes before starting the quick release again.) Remove the lid, tilting it away from you to avoid any hot steam.
  • Fish the hambone out of the pot and pull the ham from the hambone, discarding any pieces of fat or gristle. Shred and chop the ham, then stir the ham into the pot, and discard the hambone – it gave its all. Add fresh ground black pepper, and salt if it seems to need it. (The soup will already be seasoned by the salty ham; I usually add a teaspoon of kosher salt to the pot.) Serve.
