1/4 c all purpose flour
2 lb boneless chuck roast, cut into 1-inch pieces
3 Tbsp cooking oil
4 c water
1/2 c chopped onion
1 clove garlic, minced
2 bay leaves
2 tsp worcestershire sauce
1 tsp sugar
1 tsp lemon juice
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1 dash(es) ground allspice
6 tiny new potatoes, halved
6 medium carrots, quartered
1 lb boiling onions, peeled and trimmed
2 Tbsp cold water
1 Tbsp all purpose flour

Steps:

  • 1. Place the 1/4 cup flour in a plastic bag with the meat pieces (a few at a time) and shake to coat. In a 4-qt. Dutch oven, brown meat, one-third at a time, in hot oil. Drain well.
  • 2. In a 3-1/2- to 4-quart slow cooker, combine the meat, chopped onion, garlic, potatoes, carrots, and boiling onions.
  • 3. In a large bowl, stir together the 4 cups water, bay leaves, Worcestershire sauce, sugar, lemon juice, salt, pepper, paprika and allspice. Pour over the meat.
  • 4. Cover, cook on low setting for 10-12 hours on on high setting for 5-6 hours. Discard bay leaves. Transfer meat and vegetables to a serving plate and keep warm.
  • 5. Transfer the cooking liquid to a medium saucepan. In a small bowl, stir together the 2 Tbsp. cold water and the 1 Tbsp. flour. Stir into the cooking liquid in saucepan. Cook and stir until thickened and bubbly. Cook and stir for one minute more. Pour gravy over meat and vegetables.

1/2 cup teriyaki sauce or 1/2 cup soy sauce
1/4 cup vegetable oil
2 tablespoons brown sugar
2 tablespoons finely chopped onions
3 garlic cloves, minced
1 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce
1 (4 lb) boneless sirloin tip roast

Steps:

  • In a large resealable plastic bag, combine the first eight ingredients; add roast. Seal bag and turn to coat; refrigerate overnight.
  • Drain and discard marinade. Place roast on a rack in a shallow roasting pan.
  • Bake, uncovered, at 350°F for 1 1/2-2 1/4 hours or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°F, medium 160°F, well-done 170°F). Let stand for 10-15 minutes before slicing.

1 cup chopped onion
1 garlic clove, minced
1 cup celery, diced
1/2 cup green pepper, diced
2 cups uncooked macaroni
2 (8 ounce) cans tomato sauce
1 cup water
1/4 cup parsley, snipped
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoons Worcestershire sauce
grated American cheese

Steps:

  • Brown meat in skillet. Remove meat from skillet and cook onion, garlic, celery, green pepper, and macaroni in meat drippings until macaroni is golden. Return meat to skillet along with tomato sauce, water, parsley, salt, pepper, and worcestershire sauce. Cover and simmer 25 minutes or until macaroni is cooked to your taste. To serve, top with grated american cheese.

FANCY YANKEE POT ROAST

1/4 cup pure olive oil
3 onions, sliced
One 3- to 4-pound top or bottom round beef roast
Flour for dredging
8 slender carrots, or fatter ones cut in half or quartered
3 ribs celery, cut in half
2 1/2 cups beef broth
1 1/2 cups hearty red wine
5 or 6 sprigs fresh thyme
1 rounded teaspoon freshly ground black pepper
Salt to taste
2 tablespoons unsalted butter at room temperature
2 rounded tablespoons flour

Steps:

  • In a large, heavy flameproof casserole, preferably cast iron, over medium heat, heat the olive oil and saute the onions until golden. Thoroughly dredge the beef in the flour, covering all the surfaces. Add to the pan and brown on all sides. The flour may cause the onions to burn slightly. This is good and will add lots of flavor. Add the carrots, celery, beef broth, wine, thyme, black pepper, and salt to taste. Reduce heat, partially cover, and barely simmer for 3 to 3 1/2 hours, turning the beef occasionally. Remove the carrots and celery when they are cooked and reserve.
  • When the beef is falling-apart tender, remove it from the broth. Remove the thyme sprigs. Knead the butter and 2 tablespoons flour together until thoroughly combined. Add the mixture to the broth and stir with a wooden spoon until you have a sauce the consistency of buttermilk. Remove from the heat.
  • To serve, slice the beef and arrange on a platter. Cover with some of the sauce. Put the remaining sauce in a bowl or gravy boat. Arrange the carrots and celery attractively on the beef platter. Garnish with fresh thyme sprigs, if you like. Serve immediately.

2 large carrots, peeled and chopped
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
1 lb lean ground beef
1/2 teaspoon pepper
2 (28 ounce) cans whole tomatoes in puree
1 1/2 teaspoons oregano
1/2 teaspoon sugar
8 ounces elbow macaroni
1/4 cup parsley, minced
1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 400*. Set out a 13 x 9" baking dish. In a 12" nonstick skillet, heat the oil over medium heat. Stir in the carrots, onions, green pepper, and garlic. Saute for 5 minutes or until almost tender. Stir in the beef and pepper. Cook, stirring to break up the meat for 5 minutes or until the meat is no longer pink. Add the tomatoes and their puree, the oregano, and sugar; raise the heat to high and bring to a boil. Reduce the heat. Simmer, partially covered, for 25 minutes, stirring occasionally to break up tomatoes. Cook macaroni for 6 minutes. Drain, rinse, and drain again, then combine with the beef mixture and put in the baking dish. Sprinkle with the parsley and cheese and bake, uncovered, for 15 minutes or until the cheese melts and the mixture is bubbling hot.

8 ounces elbow macaroni (cooked and drained)
13 ounces ragu spaghetti sauce or 13 ounces any brand spaghetti sauce, as much as you need to cover the macaroni
5 -6 slices American cheese

Steps:

  • Put cooked and drained macaroni in a 2 - 2 1/2 quart casserole dish.
  • Add Ragu or other spaghetti sauce and mix well.
  • Cover with a layer of American cheese slices.
  • Bake until cheese is melted at 350°F for about 15-20 minutes.

1 boneless beef chuck roast (4 to 5 pounds)
1 tablespoon canola oil
2 large onions, coarsely chopped
2 cups sliced carrots
2 celery ribs, sliced
2 cans (14-1/2 ounces each) Italian stewed tomatoes
1-3/4 cups water
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
4 medium potatoes, peeled and cut into eighths

Steps:

  • In a Dutch oven, brown roast on all sides over medium-high heat in oil. Remove roast and set aside., Add the onions, carrots, celery, tomatoes, water, salt, thyme and pepper to the pan. Bring to a boil. Return roast to pan. Reduce heat; cover and simmer for 2 hours. , Add potatoes. Cover; cook 30-40 minutes longer or until meat and vegetables are tender.

8 ounces wide egg noodles
2 tablespoons unsalted butter
1 small onion, minced
1 1/2 tablespoons all-purpose flour
1.5 (12 ounce) cans evaporated skim milk
1/4 cup cream sherry
1 (14 1/2 ounce) can stewed tomatoes
1/8 teaspoon cayenne pepper
salt & freshly ground black pepper
2 1/2 cups shredded cooked turkey
1 (13 3/4 ounce) can artichoke hearts, drained and sliced thinly
2 cups shredded sharp cheddar cheese

Steps:

  • Preheat the oven to 375°F and butter a 2 1/2- to 3-quart casserole dish.
  • Cook the noodles in a large pot of boiling salted water just until al dente and drain in a colander.
  • Meanwhile, melt the butter over medium-high heat in a medium-size saucepan.
  • Add the onion and saute until softened, about 5 minutes.
  • Sprinkle with the flour and continue cooking, stirring constantly, for a minute more.
  • Gradually pour in the evaporated milk and sherry and stir until smooth.
  • Continue cooking, stirring occasionally, until the mixture thickens, 5 to 7 minutes more.
  • Stir in the can of stewed tomatoes and then season the sauce to taste with cayenne, salt and pepper.
  • Stir the sauce and noodles together in a large mixing bowl.
  • Gently fold the turkey, artichoke hearts and 1 cup of the cheese into the noodle mixture.
  • Turn into the prepared casserole dish.
  • Sprinkle the remaining cup of cheese over the top of the casserole.
  • Bake the casserole until bubbling and lightly browned on top, 35 to 45 minutes.
